I Just made this using this recipe! I am new to this Keto/fasting lifestyle. I thank all of the people like you @Sabrina Paterson for helping create meals that trick my body to think it’s still eating all the same food its had all along. Below I’ve included some notes that may help other newbies trying this.
1: Only grate the puffy cloud part of the cauliflower. You could grate the stalks but even when put in a food processor or blender the stalks dont “rice” as well. Not to mention you can taste the difference. Nothing major. It won’t ruin the grits if you do
2: One cauliflower makes A LOT of grits even if you drop some on the floor…..don’t ask
3. If you use canned coconut milk like me for the first time, YES IT’S OK IF ITS A SOLID GEL WHEN YOU OPEN THE CAN! There is a layer of water beneath it. Just pour it out and mix the gel and water together..that’s it!
4: Like they suggested used non sweetened coconut milk
5: Also like they said if you dont have the fancy Immersion Blender thing a regular blender works just fine. I just used the pulse setting.
6: I FAILED I thought I had cheese but with three kids two being teenagers I realized too late that we had no more. Always check you have ALL ingredients before starting. If you dont I found an ounce of cream cheese worked well…….not as good as cheddar or gouda obviously
7: All that being said and though it does slightly maintain that cauliflower taste, this really is a DELICIOUS substitute to that GMO laced corn grits we all grew up on!!!!!

I just came across this recipe and just had to try it. The first time I ever had shrimp and grits was at “The Lady and Sons” in Savannah, GA. Ever since then I have been on the lookout for a recipe to try. My wife is not a fan of grits but said she would try them if I made them. I made this tonight and it was an absolute hit. The first time I made this… It was the best I’d ever had anywhere…. today… I don’t know what I did wrong. The grits tasted a little sour like the cheese was too sharp, the shrimp didn’t brown, it was like they were boiled in grease not fried, and lastly I made a little gravy and I think it was too much Worcestershire sauce… what did I do wrong???

I have to be on a very low carb diet for my pregnancy, so I’m going to replace the grits with polenta, and bacon with turkey bacon. Think I might also make a green pepper, onion, celery, pan sauce with the shrimp to add some substance.

Well AB I made your incredible “Shrimp and Grits” dish. At the end of my culinary adventure…it looked spectacular; but it was “TOO, TOO,TOO, SALTY.” The ingredients of chicken broth, butter, worcestershire sauce, salt, bacon, and bacon drippings lend the final dish as “unhealthy particularly for people not inclined or desirous of high blood pressure or a potential stroke. In an effort to eat this beautiful dish…I had to use 1/4 of the completed dish, and incorporate a bottle of water to make it consumable for my taste and health. Thank you for the experience, it wasn’t for me or any other health conscious individual.
