How to Make Keto Macaroons. I’ve been making my low carb coconut macaroons for over a decade. The recipe was published in August 2010, only a month after this blog was started. So you can be assured that this is a tried and true recipe.
However, the original posted recipe contained a mistake. I accidentally typed in 1 egg instead of two.What you will need to make Low Carb Coconut Macaroons.

I’ve never used it & have never seen it in a recipe or what purpose it serves. Since it’s only 1/4 tsp, can I just leave it out? Will some if your other posted recipes be calling for it? Thank you.

I wondered, though, whether we could sub something else for the xanthan gum, like gelatin or psyllium powder? I don’t use xanthan and I know that those 2 alternatives can sometimes be used instead.

I made these and I loved them. Quick twist for you. I tasted the batter before I added the eggs and it tastes exactly the inside of a Mounds bar. Next time I make them I’m going to leave out the eggs and freeze, then dip in chocolate. Thanks. Two recipes in one.
Ok these were delicious thank you. I have decided to tweak the recipe a bit to make them into madeleines I did this by adding 3 tablespoons of coconut flour and a tablespoon of vanilla, a teaspoon of baking powder. They turned out supper

FAIL! I followed this recipe to the letter. Very dry and crumbly. Hard as a rock. I think I will experiment with other Low-Carb recipes.
If you like meringue style (really light and drier) cookies whip the egg whites. If you want chewier style (same ingredients) just don’t whip the egg whites and just use a small ( 1 tbsp) scoop really tightly compressed in the scoop to make mounds on parchment paper (optional with just a light oil spray). Bake 350 F for 10-15 minutes. Watch that they don’t get overdone. I like them both ways! Love the chocolate addition in this recipe!

As soon as I poured the melted butter it start clumping and secondly i put the desiccated coconut but the batter is very watery. What happened here?
