Blueberry Streusel Cake – Low Carb Keto Dessert Recipe

In a medium size mixing bowl, combine 1 cup of the almond flour, splenda, butter, cinnamon and salt. Mix well, and press into a greased 9″ baking dish. Slice the cream cheese into about 1/4″ slices, and lay on top of the cinnamon layer.
Top this layer with the blueberries.This coffee cake is also low carb, sugar free, gluten free, keto friendly, and a Trim Healthy Mama S Fuel. This Blueberry Coffee Cake is a recipe from my mother-in-law. I have published several of her recipes, and all of them have been excellent hits! I’m trusting this one will be no exception.
Assembly: Spread the cake layer in the pan, and spread the cream cheese on top (if it’s the larger amount of cream cheese, you Bake for 30-40 minutes or until toothpick not inserted into center comes out clean. Cool and slice.In a bowl, add the softened cream cheese and beat with the erythritol (or sugar substitute).
Add the egg, vanilla extract, lemon juice, zest and beat until smooth. Spoon this mixture over the cake mixture into the cake tin and smooth evenly. Scatter the blueberries over the cream cheese mixture.
In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in lemon zest. Combine 2 cups flour, baking powder and salt; add to the creamed mixture alternately with milk and water.4. Use a mixer to mix the cream cheese, heavy cream and sweetener.
Mix until smooth, then drizzle over the slightly cooled coffee cake. This recipe for Keto Blueberry Pecan Coffee Cake.Spread over cake layer, scatter blueberries on top and make the streusel crumbs.
For streusel, with a fork whisk sugar and flour, then cut in cold butter to make the mixture looks like pea sized crumbs. Sprinkle the crumbs over blueberries and bake about 45 minutes.keto blueberry cheese danish coffee cake recipe notes: Don’t be intimidated by the multiple layers – each is quite easy and this cake can go from craving to oven in under ten minutes. I decided to use my recipe for Low-Carb Blueberry Almond Flour Coffee Cake as a starting point, then tweaked it a bit. After a few tries in the kitchen, this recipe for raspberry cream cheese coffee cake was born.Stir in the almond flour, sweetener, and lemon zest until fully combined.
Crumble over the top of the cake. 2. Bake the cake at 375 degrees (F) for 35 minutes or until a knife.Using 2/3 of the cake batter, pour the cake batter into the springform pan. Spread the cream cheese mixture into the center of the cake batter Sprinkle with the Blueberries Pour the remaining cake batter onto the top of the Blueberries Top the crumb mixture Bake for 75 minutes Let cool completely before enjoying!Melt the butter and then add the almond flour and sweetener and mix well.
Sprinkle the crumbles evenly across the top of the cake. Bake the cake at 375F for about 35 minutes until the knife inserted in the middle comes out clean and the crumble topping turns golden.Evenly scatter the remaining blueberries on top of the cake, gently pressing them in with your hand. Bake the blueberry cake until it’s golden and fragrant, and a toothpick inserted in center comes out dry, about 30 minutes. Remove the pan.

I tried this and YUUUUM! Only thing I did differently was for the strusel topping. I cut the almond flour by half and used finely chopped pecans for the other half.

I made this in muffin form. WHOA!! Dang, they’re good. This recipe for me made 12 muffins. Each muffin got 6 blueberries. Muffins are easier for me for portion control. I normally don’t like to have sweet things hanging around because they are a trigger for me, but I couldn’t resist a blueberry treat. The macros in this recipe were 6 net carbs for 1/9 of the cake. So it would be even less for 1/12.

Made tonight and it was delicious!! I whipped the egg yolks and egg whites separately and folded the dry mixture in with the rest of the wet ingredients. Super fluffy and perfect sweetness. Thank you so much for this recipe. The oat fiber makes a difference for sure.
