How to Make Onigiri (Japanese Rice Balls Recipe) | OCHIKERON | Create Eat Happy:)

Short grain brown rice can be used instead of white sushi rice. Use 1½ cups of brown rice, 2¼ cups of water, and ½ teaspoon of salt. Cook the rice for 50 minutes, remove from the heat, and steam for 10 more minutes. Instead of salmon, stuff onigiri with smoked or canned sardines, tuna, herring, trout or mussels.
Shape your onigiri while the rice is still warm. If using a mold, wet the inside of the mold and, using wet hands, fill it about halfway with rice. Make an indentation in the middle of the rice with your thumb and add your filling, about a tablespoon or so.
Add more rice on top to fill the mold.Place the steamed rice in your hand and form into a triangle, making sure it is dense and thick. Put your favorite filling, such as umeboshi or grilled salmon, on the rice and push the filling into the rice lightly.
Hold the rice between your palms.Put some rice in a rice bowl. Wet hands with water and add salt. Place rice in one hand, press and form into a triangle shape.
Make a well in the middle of the rice ball and put in Katsuobushi mixture. Close the well. Reshape and wrap with a sheet of roasted seaweed.
Wet your hands with water and rub together with a pinch or two of salt. This’ll stop the rice sticking to your hands. Pick up one handful/portion of rice. If you are putting something inside, here is where you make an indent, place the ingredients inside and.Take a small handful of the warm cooked rice in one hand.
With the other hand make an indentation, and into this stuff some of the chosen fillings. Work the rice around the filling and shape into the traditional shapes: spheres, triangles or cylinders. If you apply too much pressure the filling will squish out.Put one kind of fillings (about 1-2 tsp.) inside. Then mold the rice with your hands around the well to cover your filling completely. Press the rice around the filling to gently form the rice into a triangle.
I use three fingers (thumb, index finger, middle finger) to make a triangle corner.Combine rice, 2 1/2 cups water, sesame seeds, and 1 teaspoon salt in a large nonstick pot over medium heat; bring to a boil. Cover and cook until water is absorbed and rice is soft and sticky, about 15 minutes. Stir in soy sauce. Step 3.

Oh man, I’m just watching this from Afghanistan and I can’t wait to get back home into a kitchen. I cook, like a lot when I’m home. Mainly Japanese dishes (I’m not Japanese, but the food is so good) and it takes a little bit of time and skill to make and it feels really good when I sit back and see a beautiful traditional breakfast.

I tried this myself and they taste great I filled them with small sliced strawberries and raisins and baked sweet potatoes and some cubed grilled ham cooked in soy sauce as I did not have plums or the other ingredients. also they did not stay together great for me until after I put them in the fridge for a little bit. It was more challenging then I thought but they turned out delicious. I boiled the rice on the stove is it easier with a rice cooker?

I didn’t have any of these ingredients, so I improvised. I had the rice, but I used calamari, spicy mayo with some lettuce and turned it into a burrito. It was pretty good.
I like to make a mixture of a tuna base (without mayo) for some onigiri, I feel my tuna/mayo mix are always to liquid-y, its hard to get centered into the rice ball, maybe I should just mix it all up with the rice like he does with the furikake?

Im feeling this is the new asian themed on the go handheld for modern times. Simple, neat, filling, minimalist,flavorfull and quick to prep. Lived in Japan for 5 years. A little game I played, just randomly pick a couple Onigiri for lunch/dinner. See what you get. (The onigiri I bought were half the size of the ones he’s making, those are massive rice sandwiches). My favorite was fish eggs, I would of never picked fish eggs for dinner. But luck of the draw, got some, took a big bite, and after the horror….. learned I liked them, a lot.
Its like a vitamin E pill, with a salty citrus twang. Mixes well with the rice.

The reason they call it sea chicken, is because fried chicken is very popular in japan, how ever it’s loaded down in calories, ect, and to some, they consider tuna with the mayo to have a bit of chicken flavor like thing going on, and tuna is a far more healthier option, while enjoying the taste of chicken.
Hi Dan: after opening a packet of nori sushi sheets do you simply re-seal to store? Should they go in freezer to keep them from getting humid and soft?

Hello. In Japanese onigiri salmon is not marinated with a sweet soy sauce mixture, but is just salted and sometimes with MSG added as a preservative.

great recipe, thanks dude. when i was making it, my mom asked what it was and she said it sounded interesting when i explained what it was. when i was finished making the furikake, i asked her if she wanted to try a pinch of it, and after tasting it, she remembered back in the 90’s, at a job she used to work at, she had a japanese coworker who moved to the US from japan, and she would bring her own home cooked meals for lunch. she let my mom try a piece of her onigiri once, and she said that this furikake i made using your recipe, tasted exactly like the stuff she’d tried that one time over two decades ago. to me, that sounds like a pretty authentic recipe. i’m not into super fishy flavors generally, but even for me, the finished onigiri (with tuna filling and furikake seasoned rice) was delicious and i could see myself eating it any time
also, a quick tip for anyone who wants to make this and isn’t sure how much rice to make, i used 2 cups of sushi rice to make 4 cups of cooked rice, and this was enough to make 5 onigiri. the furikake recipe is enough to season 3-4 portions of 4 cups of rice, depending on how strong you want the flavor to be, so in theory you could make anywhere from 15 to 20 onigiri with the amount of furikake the recipe makes

In Czech Republic I might get the wright kind of rice and salmon, but I hate the taste. No meat for me. Our national like a Life presentation is bread and salt, honey and milk presents the riches of a country or at liest used to. And we are the potato country, I love rice, but hot not cold. These triangles are just so perfect. I also made a dango, but the taste was not what I expected. I think you just can´t simply overwrite what you have bee brought upon on. But I love the miso soup, teriaki and tempura.
Looks tasty but the nori doesn’t seem like the best stuff for outside a sandwhich… I’ve found the tension strength on nori can be pretty high when its not brittle/dry.
Which I imagine may end up with me taking a bite and having all the interior ingredients squish out of the sandwhich and rice before the nori breaks off a clean bite.
imma deep fry these in lard and eat it with gravy like a true American.
Yesterday, on New Year’s Eve, me and a bunch of friends have decided to go for a Japanese takeaway, we also have ordered some onigiri, which were something absolutely new for me, and they were delicious.
Now I’d also like trying making them at home.
Did this. Twice. AWESOME! Shaping it… is killin’ me… But I am closer with every piece I am shaping. Bought the good Furikake, of course. Best is simple, salt only. Cast iron, timer… recipe to the second… EASY.
When you are not using Furikake I think it is much better to dissolve the salt in the water. This way the Onigiri are more evenly seasoned and you dont risk biting on a chunk of salt.

You should’ve made tuna and chili mayo, that’s my (and apparently japan’s) favourite.
There is a paradox to this recipe. Because if you’re living in an area that you can access shio konbu and bonito and ao nori; you sure as hell live in an area that sells furikake. Just saying. But it’s fascinating to learn what actually goes into furikake and it’s a really soothing video.
Might as well learn it now then never! Going into highschool in a year and a couple months and I’ll need better lunch making skillslol

I don’t know about this particular recipe, but I used to get salmon onigiri from 7 -11 down in Taiwan. The catch is, there was this mayo mixed with wasabi paste thing. Honestly want to try and make some myself since them Americans don’t know how to properly supply their gas station grocery stores lol
*Edit: Forgot to ask (I’m not really expecting an answer since this vid is so old tbh) but what would you call the tool you used to make the onigiri? I already have a push style one at home, but this one seems more easy to use.

Very nice. My only complaint would be the omeboshi comment. They’re salted and then sun dried. The other way around would be counter productive. You need the salt to pull out the juices, Alcohol to disinfect them, and the sun (or a low setting of the oven) to evaporate the booze and draw out any final juices. (I prefer finishing boshi in the oven due to unperdictable weather changes but it’s very untraditional.)
My favorite suggestion for beginners making onigiri or someone who cant waste time with the water hand salting crap: take a bowl or cup the size you want your onigiri to be put wrap in the bowl, salt the wrap lightly and place in your rice. Tie up and form from the outside of the wrap. Boom! Mess free onigiri already prepackaged!:D
I watch this while on a low carb diet… I don’t know if it is self torture or if I just like to imagine how they would taste… I like to think is the second choice.
if anyone wants to make onigiri and not hassle with rice, it’s common to find frozen sticky rice in the frozen section of a grocery store. the one i buy comes in a steamable bag.

I am so glad I watched this video, Furikake is so freaking expensive in the Korean and Japanese grocery stores in the US. Making your own seems to be so freaking easy! I never even thought about it!
I usualy add rice-vinegar with a tea-spoon of salt to my rice would that already be too salty with a small protion of Furikake (Chickenor Fish-flavor)? I only have very small pakages to try it out. They are as small as regular tea-bags.

Ah, lovely! Many thanks for the furikake recipe! The seasoning mix is also popular in Taiwan, that’s where I first discovered it. (Taiwan’s cuisine is heavily influenced by Japan’s.)
Sometimes when I got home too tired to cook, I’d just grab some pickled veggies, pickled tofu, & a bowl of peanuts & have them with a bowl of rice liberally seasoned with furikake!
Finally tracked down an Asian market that sells jars of furikake (and the same brand I ate in Taiwan, yay!). My favorite is the Yasai Fume, but I like them all!
Have been experimenting with using furikake in more Western-style cooking, too. (I mix it with lemon juice to season salmon.) My husband is not very adventurous when it comes to eating (though he’s open-minded about it), but I am quite adventurous when it comes to cooking (which is primarily East Asian). So I’m trying to gradually introduce him to some Asian flavors and dishes.

Adam, how do you make these with a creamy/liquidy filling like tuna mayo without having it spill out as you squeeze? I love tuna mayo onigiri, but I struggle to not have the mayo spill out. Maybe I use too much, but the konbini ones are always so deliciously creamy…

I always ask my sister (who lives in Japan) to send some furikake whenever she can… always want to have some in stock from time to time because they don’t sell it here in Indonesia. Also some curry bar and also some japanese instant packages (instant miso soup, instant udon, instant soba, etc)
