Conventional couscous looks a little like pasta and somewhat like rice, but it is actually made from grains of durum wheat. It is most definitely not gluten-free. That’s because wheat is one of the three grains.If you prefer to bypass couscous completely, there are plenty of gluten-free alternatives worth trying. While quinoa and rice are some pretty obvious options, buckwheat groats are another.
As a less popular grain, couscous is often mistaken as a gluten free alternative, and sometimes even confused with other popular gluten free alternatives, like quinoa, brown rice, and tempeh. Although it looks like rice or pasta, it is made from durum.No, couscous is not gluten-free. Despite its rice-like appearance, couscous is made from semolina, which is a granule of durum wheat. Therefore, it is not gluten-free.
Couscous is commonly mistaken for being.While normal couscous is just made of durum wheat semolina, gluten free couscous is made out of 100% maize (corn). I just went to the African market I got it 2 lb for 6.00$ the internet is robbing it’s not that expensive.
TBH a lot of the anti-gluten propaganda looks nonsense; where there is genuine intolerance rather than neuroticism/fashion it’s likely fructans. That said I love Teff too but not as much as fonio. There are other grains & psuedograins that might come up (course they will need to be trendily marketed as “superfoods”, “the new quinoa” and that sort of crap (Amaranth is actually more interesting than quinoa). Kodo millets really good and mostly unheard of and buckwheat is amazing, tasty and has many useful properties whilst not being obscure enough to have the high cost associated (but I think that is half the point TBH

Also don’t forget modern methods of making bread skip the fermentation process that makes it more digestible. We used to make bread using fermentation where naturally occurring yeasts would create the risenow we use quick acting yeast or things like baking soda to make bread fluffy so little to no fermentation is happening so it’s harder to digest. Also we used to eat the entire grain but now most things made from wheat flour is made from refined white flour which has so little nutritional value other than calories that often vitamins are added back into it (enriched) but synthetically and not all the same ones that whole grain flour had and devoid of any enzymes and with less fiber. Any refined food is usually less healthy and harder to digestcausing inflammation not just gluten.
great video. I don’t think it is the gluten. I think the problem is modern agriculture. Einkorn is the “ancient” form of wheat that human beings have been eating for over a thousand years. Probably a better choice of modern wheat. Also, choosing whole wheat over white flour is dramatically better for your body.

Hi Thomas. I would love to eat buckwheat pancakes. On the channel called Cure at Home, “why you should eat buckwheat every day”, I was impressed with all the benefits of buckwheat and how the carbs in buckwheat are easier on our glycemic load even though it is a carb food. I wonder if we could have a little buckwheat once in a while on Keto when we need to carb up?

Just read a Netherland company who worked with Ethiopian Farmers in the 70’s closed shop, went back to Holland and submitted a Patent for it. It has been the property of this company in Europe until this week a court reversed it and stated no one owns Teff. The Ethiopian Government now is free to submit a patent for it so the poor farmers can benefit from their traditional grain. This is the same story we heard about Coffee and how starbucks tried to steal it from the Poor Ethiopian farmers. European theft is boundless.
Great recipe!! Easy, quick, and flavorful. Used a good Greek yogurt (Fage) providing a wonderful flavor without the addition of salt. Tasty on its own, but also a wonderful platform for an herbed chèvre, salami/sausage, hummus, or wrap with many sandwich combinations. Thank you.
actually, teff is very low in l-lysine, which is no big deal for vegans as legumes are quite high in this amino acid. Also, yes, teff is a good source of iron adequate intake of which is also not an issue for vegans, especially men, as most plant foods are high in iron, especially leafy greens. My daily intake is between 28 and 32 mg, while the RDI is 8. Teff is my favorite grain. Cooked in unsweetened almond or soy milk, with sliced banana, berries, flaxseeds, walnuts, cacao powder, dates delicious!

Nope, the highest source of iron is amaranth. Besides, seeds and legumes are abundant in iron, so it’s not the problem on vegan/vegetarian diets.
More important are calcium, zinc, vitamin B5, vitamin B3, vitamin B2, vitamin B12.

The amount of yogurt suggested here is way too much for one cup of flour. Please check carefully, I suggest use only half cup of yogurt instead of one cup.
Just FYI when you go to Ethiopian restaurants, keep in mind many may use fillers such as flour or barley to mix with the Teff. The injera will be a lighter color. Full Teff injera will be darker in color, and slightly bitter. Ask for 100% Teff. Injera is also made from a fermented batter. Delicious stuff.

First time seeing you in a tank top in your videos and I gotta say… Damn.
I tried this Fonio. It reminds me of grits but you can flavor it anyway you like. Savory or sweet. I made patties of it with some veges, bread crumbs and pan fried. Have you tried the Yacon? The syrup is tasty but I am trying to grow the actual tubers in containers. You have international markets near you then you might find it. It has prebiotics, good for diabetics, helps the liver, constipation, bloating etc. Its an interesting tuber. If you have a chance try one and let me know what you think. My plants are looking healthy and hopefully in fall I can try one fresh. Thank you for the good ideas.

Insight into how Teff getting labeled as a superfood/introduced into international markets may cause irreversible damage to small farmers and endanger access to Teff for many Ethiopians (priced out of their own national dish). Not very well done but at least informative.

We do have very similar recipe in Mali. We make it with milet or corn flour without adding the rice flour. I use normal kithen towel to do the steaming and it works perfectly.
Can you use Masa flour for this recipe or a combo of gluten free flours
As Ethiopian we always eat ingera like 7 days a week and it is really nice if you are vegetarian because during our fasting seasons(which is like 5 months of the year) we don’t eat any kind of animal products and it works for us,it might also work for you

This is called ‘Chapati’ in India. A very common part of every meal. We take whole wheat flour instead of All purpose flour. If you add 1/4 portion of Gram flour and some spices in it, It tastes great and comes out very soft. Anyhow, I appreciate your recipe as well. Thanks for sharing.

Sorry but this was a disaster. Used the last cup of my homemade yogurt and wasted it. Couldn’t get it into a ball. Stuck everywhere. Couldn’t roll, couldn’t get off fingers or rolling pin or marble counter. Used so much additional flour that it tasted way too doughy.

It is almost like making tortillas except that you didn’t add any real fat, like when I make tortillas I add shortening or lard, you also didn’t add any salt, I’m assuming the yogurt is what adds that flavor and the garlic butter of course, I may try making these today.

The measurement of the flour or yogurt is incorrect!! I had to add another cup of flour and it was still sticky! Maybe the yogurt should be 1/2c Please verify Gemma!!
We Ethiopians have been consuming Teff for thousands of years and now it is finally recognized as a super food. Good to see the rest of the world catch up. I cannot live with out my Enjera…It is not just food, it is an identity. It is also a fantastic option to make bread/wrap while on the keto diet.

There are many proposing that Kamut would be a safer choice for those suffering from celiac disease.
The term ‘GF’ (gluten-free) relates to the composition of GF foods and is now defined by law in Europe and North America; it denotes food without the storage proteins of wheat (gliadins and glutenins), barley (hordeins) and rye (secalins) and cereal hybrids such as triticale.
Classification of grains: Toxic grains for coeliac patients include bread wheat, durum wheat (used in pasta), Spelt wheat, polonicum (Polish Wheat), Kamut, monoccum (einkorn), farro, triticale (a cross between wheat and rye), and many other wild kinds of grass.
They all belong to the Hordeae or Triticeae family. The grasses not in Triticeae are classified as safe (rice, corn, various millets, ragi, teff, oats). Protein sequence between the major wheat gliadin proteins and oat avenins indicates a relative closeness of wheat and oats.
