Excellent breakfast recipe/idea. I love to make breakfast sandwiches in advance and have found that English muffins freeze quite well. I have not heard of the sprouted grain English muffins, but I will look for them. I do “toast” my muffins in the oven prior to preparing the sandwiches for freezing and I recommend it.

I would say, though, that I’d prefer this for a lunch and will take it to work in the upcoming week (extras in the freezer as I type) because Dani, I am afraid your oatmeal and apple muffins are my all time favourites!!! I have made my second week batch this afternoon! Sooooo delicious and sooooooo convenient just to grab 2 of them in the morning for my breakfast and only having to make my hot drink to go with it. I have sent the recipe to my 84 year old mum in Germany (she doesn’t do computers) because she thought it sounded delicious when I told her on the phone. She said she’ll try them this week. I nominate my dad. I think he would love this. I got him watching your show a while ago and he really enjoys you! He doesnt cook inside, thats all mom, but he enjoys grilling a lot. What makes him worthy of this father’s day evo is what he did for me and what he does for my sisters. I was a military spouse so I ended up living in VA while my family remained in MI. My marriage saddly ended and at the same time my dad was supposed to have heart surgery. This is all going on while covid is happening. So my dad drops everything, including his scheduled surgery (which he really shouldnt have done!) To drive down to VA to come rescue me so i didnt have to live in the environment i was in a minute longer. Just after i got home, my sister asked my parents to take in her children. Her husband is a state trooper here in MI. They live in Detroit and its not exactly a safe environment for them right now. My dad was happy to keep my nieces here for nearly a month, then my sister just missed her kids too much and had to come get them. Tonight when i got home from work my dad read me the riot act…thats an old phrase, sorry. But hes so mad about the things our governor is saying thats risking my sisters husbands life as a state trooper. Ooo! Look my dad cares so much for his children and their families. My baby sister calls and he quite nearly jumps at the phone bc now she’s living in AZ. My dad is fucking amazing. Thanks Sam. And thanks for entertaining my dad!

Is called Pan Con Chicharron is a flavorful Peruvian sandwich made from the unique combination of slow braised pork and sweet potato topped with a crisp red onion relish. In Peru, it’s traditionally eaten for breakfast, but we think it’s the perfect meal for any time of day!
Pan Con Chicharron is a sandwich whose flavor combo may seem a bit strange to those of us in the States. But, the combo of sweet, salty, and tangy is quite traditional of Peruvian flavors.
What makes chicharron unique is the combination of braising and frying that creates an incredibly tender, but also wonderfully crispy piece of pork.
To get chicharron, you place your pork in a skillet and cover it with 1 inch of water. Then, you simmer the pork, covered for 1 hour and uncovered for another hour.
The first hour infuses the pork with moisture, and the second hour lets the liquid evaporate so you are left with only the pork fat that has rendered out of our your cuts.
As the pork continues to cook, it fries up to a nice golden brown in its own rendered fat.
The concentration of pork flavors and the caramelization you get on the pork gives you loads of flavor. All you really need for seasoning is a little salt and pepper to make the natural flavors of the pork popTraditionally pan con chicharron is made using pork chops, pork ribs, or pork belly.
Which cut you choose depends on a couple factors.
Most importantly, you want to choose a cut of meat that is easy for you to get (some places, pork belly itsn’t all that common).
And, you want to choose a cut of meat that you’re comfortable working with.
Since the pork fries in its own rendered fat, a fattier cut will give you a crispier, more deep-fried piece of meat verses a more pan-fried piece of meat.
Something to keep in mind is that the cut of meat you choose will effect how your chicharron turns out in the end.
Pork belly has the most fat to render out, and will become the most crispy.
Pork ribs have a nice balance of fat and really great flavor from the bones.
Pork chops are easy to use, but tend to be a bit lean. To remedy this, we add a little olive oil to the pan to help the chops fry up nicely.
After the pork, you only have two other ingredients: sweet potato and salsa criolla.
The sweet potato is boiled and then (if you like) fried in the pork fat, after your pork is finished cooking.
The creamy sweet potato adds a wonderfully robust sweetness to the salty and crispy pork.
Salsa criolla is a Peruvian red onion relish that has a hint of tartness from lime juice and a bit of spice from chiles. It is incredibly easy to prepare and is not just eaten as a topping for the sandwich, it is also often eaten as a side dish as well.
Pan Con Chicharron (Peruvian Pork And Sweet Potato Sandwich)

Ingredients
1 Tbsp olive oil, divided
1 ½ lbs boneless pork chops, roughly ⅓ ½ inch thick
1 tsp salt
½ tsp pepper
Water
1 sweet potato, whole
Salsa criolla
3 Sandwich buns
Instructions
Grease a heavy skillet with a little olive oil. Arrange the pork in the skillet. Drizzle the pork with the remaining olive oil and sprinkle with salt and pepper.
Pour water into the skillet until it covers the pork by 1 inch.
Cover the skillet and bring the water to a simmer. Reduce the heat to maintain a simmer and cook, covered, for 1 hour.
After 1 hour, remove the lid form the skillet and continue to simmer for an additional hour, until the liquid has completely evaporated and the pork beings to fry in the skillet.
While the pork is cooking, place the sweet potato in a saucepan and cover with water. Boil the whole sweet potato until it is fork tender, roughly 45 min. When cooked, remove the sweet potato from the water and let it cool slightly. Once cooled, peel the sweet potato and slice it into rounds about a ¼ inch thick.
Once the pork liquid has reduced completely out of the skillet, continue cooking the pork until it is golden brown. Flip the chops and brown them on the other side. Remove the pork from the skillet.
(If desired,) Add a little oil to skillet, if necessary, and add your cooked sweet potato rounds. Fry the sweet potato slices until golden on both sides.
Build your sandwich by layering your bun with some sweet potato slices, a pork chop, and a generous heap of salsa criolla.

ok, so.. i tried the recipe and turned out great even tho i don’t have all the ingredients. The syrup can be substituted with molases sugar (that’s the closest thing i could find in my country) or even brown sugar if you are that desperate. The key ingredient when boiling is baking powder or whatever (baking soda or smth) i sure i used baking powder. either way turned out great. Also, i didn’t have 26 hours at my disposal. Sure, letting overnight stay in fridge helps, but either way it worked out for me. also i didn’t let all 3 or 2 times sit on the table at room temperature. I coudld say conforably it’s a foolproof way of making bagels. nice video, and don’t be intimidated by the video. Go ahead and try making it yourself

May I play devils advocate for a minute, and suggest the egg sunny side up and a little soft in the middle so the yoke bursts as you bite into it with your fav BBQ or tomato sauce? I hold the frying pan kinda on an angle and spoon the hot butter over the egg so it seals soft inside but is extra crispy around the edges of the white.
