You are insulting vegans I hope you realize that. I have no whole wheat flour and I have no wheat bran I have no reason to keep them in my home. So I will Blitz up some oats and make the equivalent amount of the wheat bran and the flour in oat flour. I don’t put fennel seed in breakfast sausage either. I’m actually also out of fennel seed I have 900 spices and herbs and no fennel seed.

Which brand do you recommend for sausage? I feel like uncooked and precooked sausages are all loaded with large amounts of sodium. I have been using a heavy skillet for this method. I place the sausages in a cold skillet, fill with water to just cover them and boil until the water has all evaporated. Leave them in the skillet and add about 1/8 inch of oil and brown to the desired color. During the last few minutes, I add onions rings and peppers, garlic, and a dash of any good Worcestershire sauce. Cook until the onions are translucent and the peppers wilt slightly. Delicious… enjoy.

No such allergy exists for MSG. My mother was always allergic to MSG and she broke her hip a year ago. I cook with MSG and gave her meals with MSG in all three pots and she never had any sort of a reaction. For decades there has been no study to prove any links between MSG and allergies or intolerances. For my money Chinese food is no longer as tasty as it used to be when it contained MSG. MSG is found in nearly every food that we eat naturally and can easily be used to replace 3/4 of your salt in a recipe. Soy sauce and tamari do not have MSG. Ah, okay. I’ve tried going vegetarian before, but I found it really hard. Giving it a try again, and I’m hoping to have more luck making meat alternatives at home (because the pre-made ones are delicious but expensive.) We already use TVP around here for chili and some other stuff, so this recipe would fit in really easy with what I’ve got in my cupboards. I’ll give it a shot after I get some wheat bran and wheat germ, and then I’ll try to remember to write about the results here.,

I love this recipe. I did end up browning the whole wheat flour prior to mixing and also I added onion salt and creole seasoning with a pinch of pink salt and it was delicious plus texture was spot on. I’m thinking of doing this with like a terryaki sauce over white rice.

Oh my god, seriously craving these now! This is pretty much how I do them too (maybe some sunflower seeds thrown in)… But another good maybe not so healthy but damn tasty version is with Tegal Garlic & Herb Chicken sausages, not the precooked kind. I get the pastry ready, wet my hands and use the skin of the sausage as a pipe.. Pipe it straight on, roll it up, egg glaze, 20 mins at 180 Roast some veges to go with it (broccoli and carrots) lush.

This really is a great recipe base. I just made it….tweaked it a bit because I didn’t have all ingredients recommended-nonetheless, excellent. I tubed mine in saran wrap and steamed about 14 mini breakfast sausages….in the freezer now-when we want, we’ll pull from freezer then pan fry….tasty little buggars.
They taste just like sausage. I just made a pork chop recipe last night that tastes exactly like a pork chop, texture and all. No meat | a 10th of the cost | 1/2 the calories | no fat!!!

Even though the texture was gummy I will continue to make this; I fried then tore into bite size pieces and refried in butter. I mixed it in some mashed potatoes and it was very tasty so will try this in shepherds pie.

Boil in beer. Then put on a charcoal grill for about 10 mins. Make sure the casing has a “crunch” to it.
I have made these sausages twice before, and they came out chewy, not like sausages at all. So, I doubled the liquid ingredients, and obviously, the “batter” was too liquidy, so I just added four abt a tablespoon at a time until the “batter” got the right consistency. They came out not chewy at all. In fact, they look like real sausage. AND, they are delicious, AND, I don’t have a reason to buy the expensive MorningstarFarms sausage anymore.
I used much less oil but mine came out perfect like on screen,perfect snap on the casing letting loose all the flavor juices too.
It’s so obvious now how to cook brats I feel silly.

Have you tried doing crumbled sausage with this recipe? I think I might mess with the recipe and see if I can tweak it to be gluten free.
I’m glad you like the raw food diet, but I wasn’t able to stick with it. I agree that it seems like a perfect diet, but it made me very hyper. I’m sure there are terrible chemicals in most everything and I’ve pretty much just settled with liking what I eat while maintaining a healthy weight, cholesterol, blood pressure, etc.

can you do a video in breakfast small link sausages and different recipes. Thank you very much for taking the time to make these videos.
Grind up finely about a kilo of quality pork or chicken, or buy it pre-grounded, add two melted tablespoons of duck fat or beef dripping mixed it all in with your choice of seasoning, divide pork or chicken into 100g portions (10 sausages) roll each portion in some grease proof paper secure both ends by twisting, use Chinese Bamboo Steamer, steam as many parcelled up sausages as you can fit for about 20 minutes until cooked, when parcels are cooled down, keep some out for frying put some in the fridge or freezer. For my seasoning I use salt, black pepper, grounded fennel, and some Italian mixed herbs. Remember after steaming sausages for 20 minutes remove grease proof paper before frying or freezing. The best thing about this recipe is at least you know whats in your sausages, you can always tweak the seasoning. Best of luck.

Cooking in a cold pan isn’t good. The sausages are just absorbing the water and oil. I like the method, I just would prefer to drop my sausage in in boiling water and fully heated oil. We want to cook, not hydrate. Ramsay Bolton disagrees with your method. Still, awesome video.
Sorry, but I don’t eat real meat. I learned all of this stuff through experimenting so give it a try. You may really enjoy the results:)
You know Bratwurst literally translates to roasted/grilled sausage so technicaly just sausage not roasted/grilled is Wurst.

This video hit really close to home because it reminds me of my grandpa, who recently passed. He always made the family make homemade deer sausage after hunting season. I have many fond memories of that time with him and my family and this video really helps me get over his passing and I just want to say thank you for that. You’ve made me feel happier and made me look back on all the good memories I have with him.

You literally put twice the amount of salt in there that I do. That’s nuts. EDIT: Dog, you’re seasoning before you grind, which leaves half the spices stuck in the machine. All makes sense now.
Looks lovely as always, but I do have a slight issue…..isn’t it counterproductive to add salt twice to the meal when you’re stressing the use of low sodium ingredients?? I love my salt so can’t cook without it, but salt IS sodium chloride so that confused me a little.:)

I don’t cook much, AT ALL, but after trying to cook sausages, THE WRONG WAY, even just a few times, I figured THIS way out on my own. Yeah, BOIL them first, to actually cook them through, THEN fry or bake/ toast them, to brown the outside. I did however pierce them and let the juice out. I don’t mind them a little dry. I find them TOO juicy, almost GREASY if I don’t let some juice out.

The thing that disturbs me as a german the most about your Bratwurst is not the spices or so, but the bavarian style mustard. That stuff is only eaten with Weißwurst. Every other Wurst is usually eaten with Bautz’ner Senf, Löwensenf, etc ^^

If you are cooking them slow why do you need to boil them first.

Made this just now and it was delicious. However the rice was a little too hard for my liking. Like someone else commented maybe I’ll boil the rice separately next time. Also I didn’t add green onions and tomatoes.
Really bugs me that there’s some ingredients with absolutely no measurements. He’s just like “Rice in! How much rice? Fuck you, that’s how much. Next, this unspecified amount of stock… what type stock? Fuck you, that’s what type.”

Merguez sausage is a North African sausage(Algeria, Morocco, Tunisia). I am Algerian and I didn’t know you could make it at home, I always just go to the butcher and buy it.
pour the water to 1/3rd of the hight of the sausage, turn after 5 mins then wait for the water to evaporate the sausages will cook in their own fat
I feel the beer boiled is just a gimmick, done it many times it just makes a stink. Water & large chopped onion is better.

Why not try: Preheat oven and baking tray 200*C, place sausages in middle of oven, roast for 35 minutes, turning them once after the first 20 minutes. Cooked thoroughly, no burning.

Mate what’s the point in boiling to get fat out and then add fat into the pan? You don’t need to add oil into the pan to fry.

I fry colour into them first, then pop them in the oven for 10 minutes.
Interesting. I was taught to cover a 1/4 of the sausage with water, and put under the grill medium heat.
But I’ll be trying this method.

There is no need at all to go to all of that trouble. The only unusual thing you need to do to cook sausages is always start with a cold pan. That way, the sausages won’t curl up as soon as the heat hits them and will stay straight all the way through the cooking process. Also, for my money, always break the skin with a fork or something similar. Most sausages aren’t made from prime cuts of meat, so there is going to be a fair amount of fat in them. Pricking the sausage skin just lets a lot of the fat out. And, FYI, I got the tip about starting with a cold pan from from no other more unimpeachable source than Keith Richards. It’s in his autobiography, “Life”.

In eastern Europe we cook it in lard ( pig fat) they never burn, superb flavour and they look even better…

I like to steam them first then broil. I’ll continue to steam, but I think I’ll try the pan fry in oil. Just the cracklin’ sound make it look good. Louisiana hot links or Italian sweet sausage. Saute some onion and bell peppers lightly and put them on a roll with mustard.
