I’ve tried the chickpea spinach egg dish but the only thing is that my chickpea is still hard to chew on even after soaking it for an hour followed by steaming for more than half an hour.

That rice became not vegan when you added chicken broth. A chicken still died for that meal, and not even for you to utilize the whole thing as sustanance, just so you could have essence of chicken

Many of these look great! Although I would eat a few of these ( 2:49, 5:13) with some bread or crackers on the side; and replace the tahini sauce ( 4:04) with a meatless source of protein like cheese, an egg, nuts, legumes, or tofu.
