Thanks so much for this recipe, Miss Diva. It is hard to find sausage that does not have MSG in it. I will never buy sausage at the store again! This has just the right amount of spiciness. I didn’t have fennel seed, so used cumin+dill instead (I read somewhere that either could be used as a substitute for fennel seed. I used both since I couldn’t decide which to use). It was delicious. My husband, to his surprise, loved this also. I will try it with ground pork next time since that’s the kind of sausage we normally eat.

Yes, do not over cook!! They’ll turn into rubber patties. Not very appetizing. I make a bunch of these then freeze them on a tray for an hour or so, then into a zip lock bag in the freezer.
