This is a good recipe, I think the crème fraîche will definitely add more depth of flavor and umami then just sour cream.That being said this will not taste like the ranch dressing you love in your favorite restaurants, because it’s not using MSG and those do. That stuff is an incredible flavor enhancer, possibly carcinogenic but flavorful.

Made a few changes here and there but thanks for the recipe!! It turned out just like ranch dressing.
My recipe
-1/4 Cup soaked cashews
-1/2 Cup cooked cauliflower (For low fat)
-2 and 1/2 Tablespoons lime
-1/2 Cup water
-1 small piece of fresh garlic clove
-1/2 teaspoons salt
-1 and 1/2 teaspoons dill
-1/2 teaspoons onion powder
-About 2 teaspoons of a sweetener (I used raw organic Honey, but you can keep it vegan with other sweetener)

Thanks for the video. About fresh ingredients, my mom makes a cucumber salad with cucumbers, mayo, garlic powder, onion powder, dried dill and pickle juice. Over the years I’ve improved on it by adding fresh dill, however fresh diced onion, totally ruins it, the onion powder is far superior, and leaving the onion powder out doesn’t give it that great taste. Fresh minced garlic, if you eat it the same day, is better than garlic powder, the next day they are about the same and after that garlic powder is better as the fresh garlic grows too strong. I attended a Japanese blue fin tuna cutting event and the fisherman said most people think if you have this sushi on the boat it would be the best, but in reality it wouldn’t taste too good. Apparently, like a really good aged steak, tuna has to be hung for a few days to develop that great taste. So fresh is not always best.

I’ve had many homemade/restaurant mad dressings, as well as various bottled ones. Best ranch dressing i have ever tasted: The Original buttermilk variety of Hidden valley dressing MIX. What I have never understood is how they make that wonderful mix, yet they have what might be the worst bottled ranch. How did they do that???

I just made this, and was skeptical about the small amount of onion and garlic powders. But, I know how much Chef John love’s garlic and figured I’d best not add more. It was the PERFECT amount! I did add both fresh (1/2t) and dried (1/4t) dill.

I made this recipe, let it sit overnight, the whole nine yards. It tastes great! However, my issue is that I can definitely taste the mayo, even when eating it over salad. Can you increase the buttermilk or the sour cream to cut the mayo taste down a little without altering the consistency of it too much?

Thanks, Chef John! But mine is easier and lasts a couple of weeks in the fridge. Celery salt is my secret ingredient and the dried herbs are flexible, to taste.

I like John’s recipes, but this one does not have a lot of flavor. It tastes like mayo and sour cream. I doubled all the herbs and salt and it’s still pretty bland.

It was actually a dude that lived in Alaska and moved to Ca to open a ranch for guests and he created the “ranch” dressing on his Hidden Valley Ranch. Sadly, it was sold to the same makers of Clorox and they added loads of chemicals to it, so your recipe is PERFECT.

I guess refrigeration is a definite requirement for homemade ranch dressing, in order to prevent the growth of salmonella bacteria. The stuff that you buy from the supermarket doesn’t require refrigeration; I never refrigerate my bottled ranch dressing, but it never spoils before it’s used-up. However, commercial, store-bought ranch contains a lot more oil.

I use the ranch dry packet, with buttermilk and mayo. It’s much tastier than the bottled ranch and it’s how most restaurants make their ranch. I store it in a mason jar as well.
Chef John, also, try half mayo and half buttermilk, plus seasonings. This is the original recipe that people fell in love with at Hidden Valley Guest Ranch near Santa Barbara.

I am a firm believer that “real” mayonnaise should be yellow in color (how does Helman’s get their real version white?) but I’ve never had an occasion that required a quantity that I feel would be worth the mess/waste. This might just be the excuse I need to finally pull that trigger. Just an aside here, does anybody know if mayo and or ranch dressing can be frozen and survive the process? If it can, that would give me another reason to make this mess in quantity.

awesome recipe!! my simplified version (probably not as dynamically complex tastewise but quicker to create with fewer ingredients) is just 1) mayo (i use kewpie), 2) buttermilk to reduce consistency, and 3) dried dill. It’s probably not a “ranch dressing” as such, but it’s really good on burgers

Not to say you shouldn’t go slow with a de razor but if you are feeling uncomfortable and unsafe with the shave it’s a good sign you need better shaving cream or better lathering techniques.

No cayenne for real ranch, I use dried herbs exclusively. No tarragon..
do you think buying ranch is much cheaper than buying all those ingredients and then making it at home by yourself?
The problem is that mayonnaisse, buttermilk and sour cream don’t keep so you often end up throwing whats left out. Also I doubt if the finished dressing will last much more than a week or so in the refrigerator so you can end up throwing a lot of that out as well.

so an issue i continuously run into is the price of cashews. its always said it is the best to use for things like yogurt, dressings, etc, however when you are on a budget, the idea of buying a lot of cashews just makes you laugh. is there a nut or combination of nuts and grains, etc. that would give very similar results to cashews yet would cost significantly less?
But most the mayo I find has high fructose corn syrup and/or soy oil.:(

So today I tried to make a beer batter dill pickle cheese bacon loaf of bread in my cast iron pot. I thought it was done. Looked fan-fucking-tastic. Till I cut in and seen a lot of raw flour dough. Tasted fucki g great except for the inside not working. Tried to save in the oven and it just didn’t work. I think that’s right up your alley. I prefer creme fraiche in place of sour cream..and maybe some smoked paprika
I don’t hate ranch dressing in fact if it’s the only available dip at a party I’ll have it but I will say there are others that are better for dips, dressings, etc. Italian, Bleu Cheese, Honey Mustard (the best kind of mustard), Caesar (which was actually invented in Mexico by a guy named Caesar), Balsamic so lots of options for me. But would definitely try this.

1:04, You say to use Duke’s if you’re in the South, but I’ve never even seen it at the store. Most people in Louisiana tend to use Blue Plate.
