Preheat oven to 325°F. Put bacon in large, heavy pot over medium heat and cook until lightly brown, about 5 minutes. Discard all but 2 tablespoons fat. Add onion, garlic, and ginger and sauté until soft, about 5 minutes.
Cook bacon in a skillet over medium-high heat 4 minutes; drain, reserving 1 teaspoon drippings in skillet. Step 2 Sauté onion in hot bacon drippings 7 minutes or until tender. Stir together pork, onions, beans, and next 5 ingredients in a lightly greased 11x 7-inch baking dish.
My family loves the dark colored baked beans at BBQ restaurants down here but I have been unable to find a similar recipe.. until today. I had a 28 ounce can of Bush’s Boston flavored beans so I adjusted the seasoning since the beans already had some flavoring in it.To bake beans on a wood smoker, preheat the smoker to between 250 degrees F (120 degrees C) and 275 degrees F (135 degrees C).
Pour beans mixture.(If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients). Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. I was looking up a few videos on scratch baked beans and one of them used ground sausage and most of them used Bush’s baked beans as a base so I stopped looking. Like wtf is wrong with people?

to de bubble you can use the plastic handle to a spatula or a plastic butter knife… do not use metal.

After 20 minutes my onions were not nearly that cooked i had to turn up the heat to 420(blaze) and bake for 30more minutes!

No peppers for me please, bit where’s the bacon? My mom made hers with fresh beans, soaked overnight, added some brown sugar, ketchup, bacon and set a whole large onion in the center..cooked for hours..i miss her beans..nothing of hers I make tastes like hers tho so, I don’t try anymore..
I’m a vegetarian and i tried it. Personally I’m not a fan of BBQ sauce, so I dropped it. But even without the BBQ sauce it was absolutely AMAZING, so rich and so delicious. I’ll cook this again. So glad that i have some leftovers.

Looks very tasty but, as a single guy how the hell do I eat all that on the same day.
Don’t use a butter knife to debubble. Metal objects can cause microfine scratches that can turn into cracks.when presured. Use the handle of a wooden or plastic long-handle spoon.
I’m a bit surprised (and a bit shocked) ❤️ that you didn’t sauté the onions first, before adding them in. Their flavor would’ve been much more mellow (& sweeter) that way.

This looks really good!! The best recipe I have ever had that is not too sweet is in the “New Mcdougall” cookbook. It has molasses in it. Once you have made these you will never go back to canned beans they are insane!!

Dried beans are even cheaper, but they require more prep and you need to soak them. Though it is worth it cause you’ll cut down on the salt content even more.

I made this last night. Didn’t have pasatta, but just used a can of tomatoes that I blended smooth. It took almost en extra hour to reduce properly. Totally delish.

I doubled the batch for a memorial and do not have enough beer and no time to run out to get some. Any suggestions?
Do you drain the beans after they simmer for 30 minutes? or do you add the simmering water to the jars with the beans? or do the beans absorb all the water while they simmer?
Some questions from an inexperienced cook: a) why cooking the beans the first time for one hour, when they are going to undergo a new cooking for another three hours? b) Same as above for meat, although I understand that the way the recipe is made some fat is eliminated. Conversely, considering that the beans and the meat are cooked in advance, why cooking them for entire hours later? Wouldn’t the long cooking damage the perfume of the mustard, the tobasco, the peppers, the whisky, the cider? Instinctively, I wouldn’t not go for more than 30-40 minutes in the second round of cooking. Actually, I would add the whisky after 20 minutes or so, and then go on for another 20 minutes. Is there any specific reason for this very long procedure?
I made a batch of these Baked Beans, and they are threatened I have ever eaten! I have to make more now because I are them all! Wow, are they ever good, definitely better than Bush’s!

I’m thinking I’d probably pre-soak as a precaution, but I think I’d follow your basic times, cutting the PC time in half as you suggest. I’ll have to do this next weekend. omg, I love beans.

If you don’t own a “fat separator” (whatever device that is) just place your drippings in fridge for a while and the fat will migrate to the top & you can lift it out with a spoon.

Great recipe. I did have a couple of issues though. My beans were a bit tough even after 60 min under pressure and a full natural release. They were chewy and starchy. It could be the water i used. I used RO purified water. It is still very good but i am thinking that maybe, where i live i need to pc it for maybe 4 or 5 additional minutes? Also, for my family i will probably reduce the brown sugar by at least 1/4 cup. Still this recipe rocks!!! Thanks so much for the fresh taste of baked beans!!!

This was my first attempt to make homemade “bbq beans”. I make tons of other beans, red beans and rice, white bean stew, black bean chipotle soup, barranco beans. I was concerned with the amount of vinegar, but proceeded as directed..,now my husband and I are very in tune to liking the same types of flavors, he absolutely loved these beans, and I couldn’t force myself to eat more than two spoonfuls, this was after repeatedly trying to balance the acid out with salt, more sugar and fat during the cooking process, and since I normally stay away from sugar, I was still surprised by the overwhelmingly acidity. I really wanted to like these, but never the less my husband has a few batches in the freezer for when I don’t want to cook. I love what you’re doing in the presentation and all of the homemade fermented and canned gardened goods!

Why precook the beans when you are cooking them for so many hours in the kamado.
Made this one a couple days ago. Started off by PC 2 pork hocks and reserving the h2o for the beans. Then followed your recipe having the hocks in the pot right up until the baking step. Turned out soooo delicious. I had to freeze some as it is just me. Bonus I have great meals yet to come on a busy/lazy day:)

This recipe is amazing! My roommate that doesn’t like baked beans had 1.5 cups of them! My sister tried them and said, “Bush’s Baked Beans can take a hike! ” They’re not even in the same ballpark. I have to say I was pleasantly surprised at how well balanced this recipe is. I was afraid that they would be too sweet, but that is not the case at all. This recipe is perfect. Thank you!

It is real easy to over smoke beans if you are going to use it for a drip pan with the beans for the full cook, I found out the hard way.:-) Good looking beans there Larry.
Hi everyone! Thanks for watching, BUT please don’t keep reposting and propagating the myth about the dangers of using aluminum or that salt causes beans to harden.
For starters, aluminum does NOT cause Alzheimer’s disease. There is no proof of that anywhere and is an old myth dating back to the 1960’s that refuses to die in the 21st century. Please read this directly from the Alzheimer’s Association website http://m.alz.org/myths.asp or the official report from the Center for Disease Control website: https://www.atsdr.cdc.gov/phs/phs.asp?id=1076&tid=34.
Second, although bare aluminum is a reactive metal if not coated or allowed to build up its own protective oxide layer, the amount of it dissolving in a pan of food cooked at such a low temperature is so small that a single antacid tablet has hundreds of times more aluminum than would be leached cooking in an aluminium pan. It is safe for use in cooking. Again, I refer you to the official report from the Center for Disease Control website: https://www.atsdr.cdc.gov/phs/phs.asp?id=1076&tid=34. Quote from the CDC document, “Exposure to the levels…and the forms of aluminum that are present in dirt and aluminum pots and pans are not considered to be harmful….aluminum levels found in processed foods and foods cooked in aluminum pots are generally considered to be safe.”
As for salt causing beans to harden, this myth has been dispelled for many years already, so please quit repeating it. As you can plainly see in this video, the beans are completely softened after soaking and simmering them in salted water. I even squish one and eat it in the video. The true source of “bean hardening” are acids that hinder and slow down the cooking process. This is why I cook and soften the beans BEFORE adding them to the pan with the acidic ingredients (tomatoes mostly). If you just throw uncooked beans into the tomatoes, it will take many more hours (10+) to soften them in contrast to the one hour simmer in salted water. The proof is self evident in this video.Cooking beans in salted water is actually beneficial. Not only does it add flavor to the beans, it also helps them to retain their shape throughout the rest of the cooking process. As you can see at the end of my video, the beans are not mushy with stray skins floating about as would happen if I didn’t cook them in salted water beforehand.
I know many of you are trying to be helpful so thank you for that, but please please please do some research on these things before posting how wrong I am. Posting incorrect information misleads people and can make you look bad. I tried this and to me it has too much tomato flavor. I will try again but use half as much tomato paste. The whole thing just taste like sweet tomato soup. If I could cut the tomato taste down this would be great.

Hi Louise, another success thanks to your detailed explanation and great recipe! I had never tried salt pork before it was great in this (we took the half salt pork and half thick-cut bacon route). I mistakenly grabbed black-eyed peas instead of small white beans at the store, but rather than go back, I took a chance on the black-eyed peas along with the small red beans. Delicious! We can’t stop sampling this, although I had intended to wait until tomorrow to eat some. Good thing it makes ten cups! Thank you so much.

I canned these in pints. I went by your recipe and just added extra honey BBQ sauce and no liquid smoke. I added cooked ground beef to my sauce, which we call them “camp style”beans. My question to you is this.. I pressured cooked at 90 minutes and I thought my beans tasted “off”. Almost had a burnt taste to them. What went wrong? I’m known for everyone liking my baked beans, so I was kinda disappointed in the way it turned out. The sauce was fabulous, but changed after pressure canning. Any tips?

I made these yesterday evening. My only issue with them is that in my opinion, they still need to be baked to get the thickness of the sauce my family appreciates. Still, pretty tasty.

In the end I really didn’t expect much from a 5 min bean recipe…I WAS BLOWN AWAY! So simple and delicious… This will be a regular in my house. The way she cooks this is similar to my vegetarian nachos recipe. The main differences being I put in mushrooms + grated carrot, more garlic and I add paprika, cumin, oregano (or you could just buy Mexican chill powder). I also add more sweetness, usually a big squeeze of tomato sauce for zing, then mash the beans. But it’s a very simple recipe for nachos that is GREAT.

Omg! So damn good. I didn’t have all the exact ingredients so I did some substitutions. Diced tomatoes, Madras curry powder, Balsamic vinegar, and maple syrup infused with cinnamon, nutmeg and cloves. The flavour was unreal! I also added some cilantro. You guys are awesome. I just canned pinto beans yesterday so I’m all set up to go…. by the way, we have 2 yorkies and they make the exact same hacking sound as your little guy; some nights our oldest girl would suffer greatly and be up all night hacking; our vet said yorkies are prone to collapsing trachea and she gave us a prescription med called hycodone (5 mg) that is very very helpful in controlling those hacking fits.

Hi! We recently got our first Ninja Foodie and we are in love with it! I Thank you so much for your beautiful videos. You are naturally good at explaining how to cook! I’m a fan of lima beans, so I decided to look for any of your videos where you cook beans and found this one. I have a couple of questions, please. How differently would lima beans be cooked in the Ninja Foodie? I typically brown the pork and add onions and other veggies just like you did at the beginning… for my lima beans I don’t add anything at the end… so how could i cook them so that they are super tender?
Also, I was looking at the Pressure Cooking Chart that came with the Ninja Foodie, and it says that for 1 lb of soaked beans, you do 6 cups of water and the cook time is around 3 min… in your video you ask to do 60 min… is there any difference? or is it because the beans have been soaked? So I made these and they didn’t turn out. They lacked a depth of flavor so we ended up throwing them out. I put them in quarts. Wondering what I did wrong? Could I have filled them to full and some liquid leaked out? The sauce I cooked in the pan tasted good. How much water do you add to the canner? I believe I filled a third of the way up the jar. Any feedback would be welcome.
That was fun…fun way to have breakfast and very economical…..enjoyed watching a guy cook for a change!

Seriously I would starve if it wasn’t for you 2! My dad is from Leeds Yorkshire and I grew up in the US, he’d always make us baked beans and toast. I just made this for my family to keep the tradition alive and it is way better with this baked beans recipe! UGH! so hearty and sweet with the onions and syrup. My dad would always put mayo on the toast so some vegan mayo did the trick. Paired this with Avant guard vegan’s Chorizo sausage! My God it was so delicious. Baked beans on toast was one of my favourite breakfasts growing up (Irish parents) but it was just the canned (Watties i think) but they have sugar so I’ve been avoiding them or eating the Weight Watchers ones I occasionally. Will make my own now:).
I wanted to turn the flame down on your cooktop! Once the pan is heated you can turn it down. Flames lapping side like that only necessary for wok cooking. You probably burnt the garlic. It burns easily. Great job otherwise. Thanks.

Greetings from Tasmania. I got my NF a few days ago and I’ve watched a number of your excellent videos trying to decide which recipe to try first. And this is it who doesn’t like baked beans? Thanks to your step-by-step instructions even I couldn’t go wrong and the results were great. The only change I would make to the next batch, would be to reduce the amount of sugar. I should have added it progressively and tasted, rather than dumping the whole lot in. It was a bit too sweet for y tastes, but in all other respects it was wonderful. Thanks so much. Excellent! So, I didn’t make baked beans. But I had a bag of beans for bean soup, and followed these same steps and times for cooking beans. Perfect. I just didn’t know that little bag of beans, half onion and can of tomatoes would make enough soup to feed both armies at Antietam. My first time making beans. Hey dude, Drain and rinse the beans when they are from a can!!!
Vegetable broth is so easy to make yourself! Save your veggie scraps and freeze them in a gallon bag. Once the bag is full, dump it in a stock pot and cover with a gallon of water. simmer for at least 30 minutes (I usually do 1-2 hours but you don’t have to do it that long. The slow cooker also works amazing for this). You can freeze any extra broth and it costs you basically nothing-and no added sodium!
Seriously your amazon shop is way over priced. Like that grill you have it almost 500 bucks over the newer verision screw off probably would of done it if it was 50 off but your mark ups are ridiculous.

yes, it is a great recipe, however most of the time I don’t have the time to use it I have no problem getting by with b&m canned beans, vastly superior to bush’s I really do like them with good quality skin on weiners they make great beenie weenie add some fried taters and warm buttered corn bread, biscuits or even refrigerated tubed dinner rolls and you have quite the tasty and economical meal another plus, kids love it
I made these beans and they are truly amazing and delicious.
Add about a pound of Bacon,or Beef, or Chopped Ham and this would be edible.
If you eat this you’ll be the gassyest one at the party for sure

I tried making the beans yesterday with a few minor changes and the result was delicious. Instead of canned beans I soaked mine overnight and instead of passata(which we don’t get easily here in the US), I blanched, de-skined, de-seeded and pureed some fresh roma tomatoes. Served it on warm toasted french bread with some cheese on top.
I also have some left over. I’m going to toss that up with some crispy bacon today evening. I’m sure that will take it even beyond the upper atmosphere of radeliciousness and put it into a foodgasmic orbit. After all, everything tastes better with bacon.

Oh yum, these look delicious. I quit making baked beans years ago because of the time and work involved. Now I can make them again. The only thing I might add is a teaspoon or two of dry mustard.

I don’t see reason can beans unless it come fresh from your produce. Dry beans doesn’t need to be canned.

Have I got the best baked bean recipe for you in the world! It is done in the slow cooker so it is not ready in 5 minutes the first time but you would never regret making my beans! When I moved back from the UK I was jonesing for my Heinz beans on toast and I could buy them. No I created them only better! I have been sick for 3 days with something flu-like and the first thing I could eat or wanted to eat with some of my baked beans that I made the day I got sick. I just had them at 12:30 a.m. and I feel great! And by the way everybody if you’re asked to bring beans to a get together do not Jazz up canned beans! Everybody will be nice to you and probably eat them all but they know they are not home baked beans. A word to the wise.:-)

Louise, I am a bean doctorer but for many years made baked beans from scratch and in the oven or my slow cooker. I would put a ham bone in from the start of cooking. Do you think a ham bone would work from the beginning of this recipe? Anyone in the family that cooks a ham for family get togethers saves their ham bone for me and I put them in the freezer until ready to use them. They also do the same with turkey carcasses.

I stopped the video at 1:46, NEVER ADD SALT TO A COLD PAN WATER no matter what ingredients you already have in the pan, Salt will “Pit” your pan as you heat the water up, Only add salt to water that is warmed up or close to boiling for cooking purposes.

I’d never think to use some of these spices in baked beans. But it looks soooo delish! Drooling right now; especially after my lunch turned out worse than meh today. Will definitely be giving this a try soon there’s only one tin of store-bought baked beans left in my pantry.
Speaking of beans, I’ve recently discovered Puerto Rican cuisine. It is subtle and colorful and uses lots of beans and vegetables. I recently tried pinto beans using ingredients like sofrito. They were absolutely delicious. I used pintos because I couldn’t get pink beans.

These look wonderful, and I have everything on hand to make them, so that’s gonna be my weekend project. I’ve canned up candied jalapeños (plus the leftover jalapeño syrup), beef roast, pork roast, beef and pork broth, and candy apple jelly this week. I’m plain tuckered out now! Hi I have just opened a jar of baked beans I canned yesterday for beans on toast. I can now say to the world I am no longer a canning virgin. I followed your recipe and vidio from start to finish and have 16 pint jars all sealed. They were great and cooked just right no more Heinz for us! Thank you I follow you and a few other canners in the USA and Canada as I’m an English retired chef and I live in the hills of southern Spain and as its summer the Roma tomatoes come cheap so they are next on my list. The idea of beans causing flatulence is partly due to “suggestion” (or “confirmation bias”) and partly due to wrong habits. Besides, beans are somehow a “difficult” food to digest, and they should not be used as a “side dish”. If you only eat beans (such as the recipe shown in this video) and some raw vegetables and/or cooked vegetables, AND if you have an habit of eating beans (your body is “trained” to digest them) you are not going to suffer any adverse consequence, and you are not going to produce more gas than after an ordinary two-courses meal. Just remember beans have to be eaten “alone” (and with vegetables as side dish). Eat beans that way regularly and the problem will disappear. Personally I eat beans without bread and without any other food besides vegetables: when I eat beans, I eat beans, up to satiety. Never had any flatulence problem. Chew well (as one should always do). Accompany your food with wine (as one should always do!). Keep your intestine in good health (eat Sauerkrauts!)

Carol, thank you for this recipe! I made 5 pts, altered a wee bit for our taste pref, (no liquid smoke or allspice & cooking liquid instead of tom sauce), but I’m excited to try them after they set up for a few weeks.
Beans had a strong vinegar flavor. Not sure if it was supposed to or not. The beans were good if you like vinegar which I am not the biggest fan of. Video instructions were great.
I finally made this recipe, and it came out great. But I just have one question. When I opened the lid after pressure cooking the beans it looked and smelled just like really good bean soup. Would you adapt this recipe into bean soup too, without sweetening it with the brown sugar at the end? Or would you start that off totally different?

My husband canned baked beans and salt will make beans hard in process. Beans do not absorb moisture. Try leaving out while cooking and add last thing.

My first time seeing your channel. Nice work. The National Center for Home Food Preservation says processing times should be 75 minutes for quarts or 65 minutes for pints. Any reason to leave them in the canner little bit longer? Not a criticism… just a question from a fellow canner.

This is actually healthy, I like it. To make sure you don’t fart a ton just rinse the beans before using them.
