How to make an Eggplant Pita Pizza

Ingredients 2 small eggplants 1 teaspoon salt 1 large sweet red pepper, halved and sliced 1 medium onion, halved and sliced 12 garlic cloves, halved 3 tablespoons olive oil, divided 1/4 teaspoon pepper 4 whole pita breads.Ingredients. 1 tablespoon olive oil. 1 large garlic clove, finely minced. 1 teaspoon dried basil.
1/4 teaspoon red pepper flakes. 1/4 small red onion, sliced into half rings. 1/4 small eggplant.Toss with some olive oil and salt. Once grill is hot, place eggplant directly on the grates in a single layer over indirect heat (not right over the fire/flames).
Close the lid and grill for 10-12 minutes. Open lid, flip, and grill for another 2 minutes with the lid closed. Next, add your pizza sauce and cheese.Layer pizza crust with spaghetti sauce, mozzarella cheese, eggplant, and scallion-red onion-mushroom mixture.
Sprinkle over oregano and basil, lightly drizzle with olive oil and salt and pepper to taste. Bake in a 450*F. oven for 12-14 minutes. Cut into slices and enjoy!Have the 1/4 cup olive oil, eggplant, peppers, garlic, oregano, red pepper flakes, if using, olives, and cheese in bowls and ready by the side of the grill. Brush.
Heat grill. When ready to grill, brush eggplant, onion and zucchini with oil; sprinkle with salt. Place on gas grill over medium heat or on charcoal grill 4 to 6 inches.Spread hummus over pita breads.
Top with artichoke mixture; sprinkle with cheese. Grill pizzas, covered, over medium heat until bottoms are golden brown, 4.Spread a layer of pizza sauce on top of the dough.
On top of the sauce, arrange the grilled eggplant slices in a single layer and tuck a whole basil leaf under each slice. Depending on the size of your eggplant, you may have some leftover. Dip it in the sauce and eat it as an appetizer while you’re waiting for your pizza.Cover the grill and cook the eggplant until tender and charred in spots with grill marks, about 6 minutes on each side. Wrap the eggplant in foil and let stand 15 minutes.
Place the pita breads on the grill rack and grill until lightly crisped and golden on the bottom, 2–3 minutes. Flip with tongs, then arrange the eggplant slices evenly on top.Arrange the eggplant and onion slices on a rimmed baking sheet.
Brush lightly with the vinegar-oil mixture. Place the eggplant and onion on the grill, cover and cook until tender and browned, about 5 minutes per side for the eggplant and 6 minutes per side for the onion. Remove from the grill.

Arrange grilled eggplant, tomatoes, onion and olives on top.

Hi, can we use for the pita pizza a pan too? Because we don’t have a grill or a grill pan.
This seems like it would be a lot easier on your stomach than regular pizza.

I made this today and it was so good! A tip for others: when you put it back in the oven to let the cheese melt you may have to do it a little longer than in the video depending on the type of oven you have

Olive oil is a good kind of oil that Mediterranean people use heavily in their diet. There are a lot of active and healthy Mediterranean people. There is a difference between using olive oil and deep frying french fries. Just use less oil, if you want.

We eat this in the morning or dinner time in iraq with a viggi kebab called orrok كباب عروك but the bread has another shape. Mom used to make me this sandwich for school but we never call it sabich we call it laffat betengan w botete, greeting to all iraqi Jewish, we miss u in iraq

ive tried a similar thing before with zucchini. i hate vegetables so i try to cover up the taste as much as possible to hide it, and this really did the trick. they weren’t just tolerable, they were actually good. maybe the texture a bit off putting, but still a nice snack.
I didnt have the tahini nor the amba and substituted the schug with salsa macha (sort of a chilli paste we have in México)…. But still tasted great!!!! Thankyou for the tasty recipe!!!

i bet this would be even better if u make ur own pita bread. Make a big batch and freeze them.
I used to grill them but now I think it’s better and easier to use the oven. on the grill you don’t get the golden cheese and crispy pepperoni. Just bake it at 350-400 until the cheese is melted, then switch to broil and raise the heat a bit until the pepperonis have crispy edges and the cheese is golden. It still takes under 10 minutes with the oven and is much better.

that’s not a pita. it’s a tandoori naan. pita has cone kind shape with a brown color top layer.

Noice. I never quite got hang on how to cook eggplant, which is why first thing I thought was you gotta cook the eggplant first before you simply melt pizza toppings on it.
“Potent”…yeah I bet lol. It looks really good but you were probably not expecting the strong taste of fresh garlic. I’ll use this recipe but I’ll try to cook that sauce down JUST a lil bit.
Ok, I just got done cooking it and I had a hard time eating the eggplant skin. After it cooked, and I eat it I did try it with the skin but it felt like eating tape and wasn’t a good feeling or taste.
After I removed the skin, it tasted like eggplant parmigiana, which actually tasted very good.
You use salt when you lay it on napkin to take away the negative taste of eggplant and get the fluids out, and let it sit 20 mins.
Then you cook it for around 20 mins, then you put on the sauce/cheeses, etc. Someone mentioned before about not cooking the eggplant, Tasty does have that step, but, it goes by pretty fast.
How do the rest of you feel about eating the eggplant skin when you tried this recipe?
