Just a simplified version for myself
1.A bunch of Garlic, pepper, parsley.
2.Boil spaghetti with added salt
3.pour about 1/3 cup cooking oil (virgin olive) and cook over medium heat until garlic turn golden
4. Put in drained spaghetti
5. Add parsley
6. More salt
Stir and done.

I have been making this recipe for 42 years after learning from Joe Bianco, a former writer for the Oregonian. Joe taught me the option of using anchovies. I have perfected this recipe such that I dissolve the anchovies (an entire can with the oil) in the olive oil when I’m cooking the garlic. Then the pasta water and then the pasta and then the pecorino and then the parsley. When I present this dish I always announce it as, “Spaghetti con aglio e olio di oliva con le acciughe.”

If you add them you have a totally different flavour and it is absolutely not the same dish.

Always thought Aglio Olio means seafood spaghetti because in my country, aglio olio always comes with prawn and squid.
Now I realize that it’s the garlic and oil is what makes it truly Aglio E Olio.

For some reason, Adam’s recipes never look nearly as appetizing as they should. This dish looked alternately soupy and dry, whereas other videos of this dish look creamy and decadent. His egg salad in another video did not look at all appealing either. He seems like a nice guy and has nice presence though.

Well, maybe you should change the name about this pasta; cacio & pepe is another dish… First mistake, need put pecorino romano cheese, not parmesan cheese. Second mistake garlic?????? If you come in Rome and propose “cacio & pepe” in that way you are a dead man!!!!!!

My technique? Forget the butter, first of all. (As a Wisconsin man, this kills me, but it’s the truth) Save the butter for your French cooking, or if you’re doing some sort of cheddar-based mac and cheese sauce.
But for cacio e pepe? Cook the noodles in a wide pan (I have a 12″ nonstick that’s fairly ideal for this), with juuuuuust enough water to cover the pasta. By the time the pasta cooks, the water will have reduced to about the amount of pasta water you need for a sauce, but it’ll be SUPER starchy since your ratio of pasta to water was that much higher.
Turn off the heat, toss the pasta a bit so it’s not too hot as to curdle the cheese when you add it, then go to town adding your cheese and pepper. Usually, the super-starchiness of the water is enough to emulsify with just the fat in the cheese, but if you try this technique a few times and find that that (a) your cheese of choice isn’t fatty enough or (b) you’ve struggled to emulsify a sauce, go ahead and add oil a little earlier in the process.
For other sauces? Do the same thing, and just prep your sauce in a different pan and add it at the same spot you would add the cheese and pepper in cacio e pepe.

When ever you cook a dish with garlic, don’t toast the garlic up at the very start. Garlic should have barely any browning on it. Add them towards the end of the bacon frying to begin infusing the oil with garlic.

This is the most horrible, and wrongly performed cacio & pepe recipe I’ve ever seen. There are countless mistakes there, starting with the garlic, going through the whole process and finishing with the wrong cheese. Btw, is this just me that missed the cacio (pecorino cheese)? And save your time if you think that you can do a cacio & pepe the way you want. No, you cant. Call it something else then. It’s just a matter of respect.
