I love spinach and also chickory leaves. I sautay an onion in olive oil and some butter add tiny bit of garlic paste. Then i add the spinach let it wilt and combine season with salt and pepper and squeeze some lemon over it before eating. Tye vitamin c helps your body absorb the iron in the spinach.
Just a note on the Indian way of cooking spinach that you are referring to. Spinach varieties that grow in India are a lot more bitter and fibrous than the American variety so they need to be cooked for longer to be edible. They are generally a darker green too so that may be why it looks overcooked.

Cooking vegetables is necessary esp non root vegetables..also tempering with oil is necessary as it makes non water soluble vitamins readily available..even salad is always eaten with meal in India..all the root vegetables though uncooked still require some fat to be absorbed properly..namaste

I can attest heavily to the anti inflammatory properties.
I’m a powerlifter and recreational weightlifter and while I train in a way that is very condusive to my health and while I make sure to eat properly and rest well etc, I have had some issues just having a joint mildly inflamed here or there,and supplementing my diet from spinach has worked wonders for me and in a short period of time.
Within 10 days of spinach being in a meal once a day I started losing totally the majority if not all of the inflammation and it’s helped my training along.
Anyone doing strength training would be wise to try some spinach too!

They never ate raw spinach, nor raw kale (problems with thyroid), nor raw zucchini, no raw Savoy cabbage… My grandma didn’t know the chemistry behind it, but the knowledge was passed to her, and to others. I ate spinach almost every day. Always felt good until I noticed i was always tired. Never got kidney stones but then I developed high iron. Been donating religiously and got my iron back to normal levels but I can see how it’s good for people with low iron.
