I do not think you can use any sweetener for consistency. Xylitol is one and there is only one other, starts with an “A”. Xylitol is highly toxic to cats so don’t give them any. But that is why others marshmallows are not turning out.

WOW, I did not realize you do not have to stir in the gelatin. I believe the term you were looking for what the gelatin does in the water during that rest period (which is also a nice way to say it) is it “blooms.”

Xylitol is NOT a keto approved sweetener. It causes an insulin spike almost as bad as sugar, and will knock you firmly out of ketosis.
I wonder if adding 1 egg white might make the cohesion more fluffy and stronger?

I was JUST going through my mother’s “Maria Mole” (ma-ree-uh maw-lee) marshmallow recipes thinking how much I miss them! We Brazilians love our sweets and make homemade marshmallows. I was wondering about making them keto and then while scrolling through your videos tonight found this! Am going to make them tomorrow! By the way, homemade marshmallows are VERY overpriced at our Farmers Markets and sell for $5 EACH, the same size as yours! Sugar is cheaper than our keto sweeteners so you could get more than $5 each. lol

Not vegan, but gelatin is a migraine trigger. I haven’t had a marshmallow in 10 years. I’m going camping next week and can’t wait to make this for the trip. Thank you so much. Would you happen to know if these melt nicely? I love putting vegan marshmellows in my vegan double chocolate cookie recipe, but storebought vegan marshmellows are soooo expensive. They do work very well tho and I was wondering if this would work too?

I looked up for this just because I wanna make marshmallows but I don’t have any gelatin in the house rn
I have tried this recipe 3 times now to no success. I even borrowed the neighbor’s cute kid to re-enact this video hoping it would give me success. My marshmallow batter turns out like a sticky blob that does not spread on my pan well at all. Just a hunk of batter sticking to the parchment paper. The only difference between this video and my re-enactment is the whisk attachment on my stand mixer, mine only has the beater attachment. Could it be that difference that is destroying my attempts?

Hi I have a question, can you please help me on what I did wrong? I tried making blackberry lemon zephyr for the first time for valentines day and for some reason when I had my zephyr sit uncovered in room temperature kitchen for like 12 hours, it did not set and was still wet to the touch. Do you know why that happened? I did use 1/2 more egg white because I felt the puree and egg were not getting fluffy within 10 minutes. I did also use a hand mixer since I did not have a stand mixer like yours. So I had to whip it first then make agar syrup next seperately. I also whipped egg whites what seemed like 20 mins I’m not used to working with egg whites or agar agar. I hope I get the cloud-like with hardened outside like yours. My zephyr came out more like a mousse unfortunately.
Totally off subject, but, ugh, I used to work in a health food store an constantly had to explain to people that we’re just not built to digest cow Hooves. We don’t need hooves to make marshmallows or grow long nails! ❤
