Hi Steve…I`v try your flour mix on the first time and on the second time around I change 2 of the flours and it just don`t work for me as I had to double the water and the soya milk as the mix was way to thick and they just didn`t rise like yours on your video…

These rolls look good and I am looking for gluten free recipes but I am concerned about Xanthum gum. Xanthan gum is safe when up to 15 grams per day are taken. It can cause some side effects such as intestinal gas (flatulence) and bloating. People who are exposed to xanthan gum powder might experience flu-like symptoms, nose and throat irritation, and lung problems.
OMG, a good video, but like all the other comments this is suppose to be helpful, but when you can not find the recipe in the description nor on your website, then you are no longer helpful, if you can kindly put the recipe in the description and convert the grams to teaspoon, tablespoon and cups that will be greatly appreciated, otherwise I’ll have to unsubscribe because at this point your content is no longer serving a good.

I made this on 2nd February and made a note that this was the best recipe.
However today they were hard. The batter was dense and the rolls bitter in taste.
What do you think the problem was.
Made a second batch as well later but not as good as the batch I made in Feb.

Well i screwed up but there delicious used my 1/3 cup instead of my 1/4 cup so i had a little more stuff in the mix. at least i caught it. i just made a couple adjustments and they turned out great! I’m going to use them in a basic stuffing tomorrow don’t know what kind yet.

A very well presented video, but quite disappointing in the end. I use YT to get recipes, I don’t expect to have trundle around the internet to find the recipe! Nor do I expect to have to subscribe on websites to get recipes, either give them freely or forget about it altogether. This video has been up long enough for the recipe to have been added.
I didn’t have brown rice flour so I used white rice flour. Mine were a bit heavy and had a crispy crust. I wonder if the brown rice flour would have made them a little lighter? And I used a 2 inch scoop and got 15 rolls! They were still a good size, but next time I’ll heap the dough in the scoop. And there WILL be a “next time” because they are so close to “normal” rolls in how they’re chewy! Thanks!

These look great! I was hoping you might be able to answer this: what role does mixing/overmixing play in gluten free baking since there is no gluten to develop? I noticed the batter seemed to need to mix for a while to become smooth and was wondering what difference it made. In regular pastry recipes they often tell you not to overmix for example, and I’m wondering if that would be a concern if you were working with GF flour? Thanks!

In the US, Honeyville has xanthan gum and a lot of different flours other than wheat…hope this helps. Love to watch you cook and would love to see you put together your own gluten free bread mix. I can’t find the brand you used. Hey, if we mix our own, we know what’s in it. Thanks Steve.
I can’t find your recipe. I made the gf bread and flipped over it. Your going to laugh when you read this but I have been using double acting baking powder for years and haven’t had any problems with using as much as the recipe called for with no ill effects till now. I put my usual amount of baking powder in the recipe but my bread scraped the top of my new oven. I’ve had it for a couple of years now. I could not put the tin foil on it because it would not stay. So the crust was really brown. The bread was the best I have ever tasted! I loved the texture! However, when I cooled it on the rack it fell-a lot! So I made another loaf the next day. I forgot the apple cider vinegar it didn’t matter because it again got so huge that it scraped the lower oven that was bigger. I kept the same amount of baking powder. It fell less but did fall nevertheless. So my next attempt will be to not double the baking powder. I want to thank you for your contribution to the gf community! As far as I am concerned you are a genius! You should use a scraper so you don’t waste any ingredients! Thank you for doing this and so very well with the written out recipe!
Hi I am new to Gluten free, tried to do once before but failed, it really is a problem for me so I have now given it another try three weeks ago,. Just to let you know Im 63 year old lady who is a very good backer so I got all the flours and three of the best books, looked at loads of Youtube.
I have got to say I think you are the best, lovely way you do your videos, and was very impressed with the rolls, I am going to do them. I have an request can you please do the brown bread with loads of seeds and roughage in them, like a wholemeal loaf if you know what I mean. I did make one and it was good but Im sure with all your experience you would make a beater loaf. I like to slice it when its cold and put it in the freezer for when its needed. Also what is your recipe for Crumpets, I love them with eggs.

I tried these and it was a great recipe! However, it didn’t rise as much as yours. I used a gluten-free flour which had xanthum in it (so I didn’t add it). Do I need to add the cornstarch too if I’m using a gluten-free flour mix? (maybe because I didn’t add the cornstarch that’s why they didn’t rise as much)

These look yumm . I have not had great luck with gluten free breads/rolls but your recipe seems easy to execute with simple ingredients Def giving it a try! Can I skip the yeast as I have high intolerance to yeast? Would this affect the texture of the rolls? I don’t mind if they don’t fluff up as much.

I just made these today to have for thanksGiving.
This is one of the best rolls I have ever had. You will never be able to tell the difference between these and regular rolls.
They are incredibly tasty, made the house smell beautiful, and would be great to use for leftover turkey sandwiches.
I used an Ice cream scoop and sprayed it with Pam to scoop out the dough. They raised well in a warm oven, and came out golden brown, NOT dry, and are so tasty.

And thank you so much for the detail explanation. It’s the little details that matters sometimes as it shows you put so much love and care in your work. I have 5 kids, one grown and 4 school-aged kiddos. The 4 younger ones (10,11,12, and 13) were siblings who my spouse and I adopted a year ago who were separated in various group homes for many years. They never had much of a normal life before at all until we got them. I cook and bake just about daily and I am so glad I found your channel. I have been looking for great GH recipes simply just to reduce gluten in my diet. My family is not allergic to gluten, but I am allergic to lactose. I just love to cook for these kids and most of the time I don’t eat what I cook as I can’t have the cheese or milk in the ingredients, but I want my kids to experience what it is like to have a good and loving family life. I am ordering all the GH stuff I don’t have and will be making these as soon as they arrive, mostly probably early next week. Great work and I will be looking at your other recipes as well.

Please use GMO free corn starch since GMO’s are what are causing many GI tract problems. Corn and soy are unfortunately made with GMO and many people are boycotting GMO’s as much as possible.

DISGUSTING. The recipe does not match what’s made in the video. Comes out gummy, dense, and tastes like cardboard. Wasted pricey GF ingredients on this. I was very disappointed.
not to be that nerd, but corn is technically a grain, and a lot of people who can’t eat gluten probably shouldn’t eat corn either. i know cornstarch in particular is basically necessary to give the dough its bodycan anyone recommend an effective substitute for that?

Since all I have right now in my cupboard is Pamela’s Bread flour mix, I would assume that if I just add the 1t. baking soda to the 1lb loaf mix, since it does not list that as an ingredient, and then just follow the rest of your instructions….it should come out as a dinner roll, right?

Love these herb dinner rolls which turned out great. Before finding your website, I didn’t think dinner rolls would ever be apart of my life again. I used my GF flour mixture instead of the flours you’ve mentioned and had too much flour volume for the amount of liquids. Is it possible the combined volume of your flours would be less than the 3 & 1/3 cups of a single flour mixture? Thank you!

Thanks for this great recipe. I want to ask you one thing. My eldest son has to decrease starch content in his gluten free diet so can I add 3/4 cup white sorghum flour too in the flour mix? This will add more nutrition to the flour too. But then what changes will I have to make in the recipe? Please advise soon because you are so experienced. He really needs less starchy dinner rolls. He is gluten free for eighteen yrs now and has put on a lot of weight because of the high starch content of these flours. So now I have to reduce the starches and add low glycemic index flours which are good for health. I hope you understand my problem and can help. Thanks in advance

Well this definitely looks easy enough. I have all of the ingredients on hand with the exception of the yeast, as soon as I get some I will be rushing to make these.
I’ve been GF for a year now. I have yet to make homemade bread or rolls, so this will be my 1st. I’m just hoping that the brown rice flour that’s used isn’t overpowering. That’s the thing I hate about being gluten free. It’s like you can tell just by the product baking that some type of rice flour was used. But these rolls looked doughy, fluffy and delicious.
I’ve been using the Schar brand ciabatta type rolls & they’re okay, but I just eat them because there really isn’t nothing else.
