I’m Portuguese and sadly I have yet to find a Masa (Portuguese Sweet bread ) or a hardly crusty Portuguese roll that is GF! Made this last week and it is so much better than tofurkey. I made a marinade with water, braggs, and a lot of lq. smoke. Pat it dry and fried it. Taste just like bacon. BLT yumminess.

This is one of the more difficult recipes I’ve done so far according to the feedback I’ve gotten. The dough doesn’t feel or behave like regular pizza dough but I tried to give enough tips to accomplish it successfully but some people still had trouble with the recipe. I hope it works out well for you.

Edit: I have said “1/4 cup of chickpea flour” twice in the video, it was an editing mistake, you add 1/4 chickpea flour only once, and the wet mixture you add little by little:)

I’m not sure if this means I should add just enough to make it wet or if you added the while lot just bit by bit. I’d be very thankful if you have time to answer.

The seitan exploded? That’s hilarious! You guys are really funny. Seitan is really an art form. You have to knead it just right or else it won’t come out right. Right now my favorite sandwich is probably buffalo tofu with spinach. I also just like basic veggie sandwiches. I would love to try this someday.

Commercial tofu is NOT vegan. It has animal contamination.
Commercial wheat flour also has contamination.
Dry spices also have animal contaimation.
Commercial tomato products also have animal contamination.
All the above products were grown, harvest, transported, stored, transported again, stored again, then milled or processed for mass commercial production. Food companies and the government realizes that ‘we’ cannot produce these foods without animal contamination, so the FDA regulates it via the Food Defect Action Levels. It determines which contaminants are safe, which are not, at what levels and how to test those levels. This includes insects, rodents, avian, arachnid, reptilian, etc.
This is nothing new. We’ve known this for decades and decades. Just check with the FDA. Food Defect Action List. Or, just Google it, use terms like ‘insect fragments.’ At every step, these foods get

I have tried so many different seitan recipes and none quite do it. I have to try this one for sure. I found that if you sear the slices of seitan in a frying pan it gives it an amazing flavor. It’s like the crispy end of meat that sits in the juice during cooking (you know, that part that is full of flavor). You can also wrap it right out of the pan so the steam softens it after it’s chilled if you don’t want that crispy texture. (personally, that was my favorite part when I use to eat meat.)
I literally bought a meat slicer from Amazon just to get those thin deli sliced cold cuts. ( I bought the cheap $50 one and it works great.)
I like that this recipe is oil free and sugar free. We usually don’t eat the vegan meats, but this recipe seems healthy and tasty. Can’t wait to try it!

I’ve been reading and concerned about cooking with tin oil as it leeches into the food.
Have you tried grilling a slice to make something like crispy bacon? That’s what I do with regular tofurky and it sort of works. Great for a club sandwich:)

I’m not into faux foods bc I believe in eating as close as possible to wholefoods and try to steer clear of processed foods but I honestly enjoy watching your videos. I find them so interesting and your always so happy and sweet. Keep it up. Your amazing!
Truthfully, I’d probably skip the cheese altogether and add something else for flavor. If you saute some veggies like peppers and onions, then allow them to cool they may make an interesting addition to the stromboli. Or maybe some fresh herbs or sun-dried tomatoes may create a nice flavor added to the ham.

Since we don’t have a pressure cooker, I steamed them over a pot that worked out really well.
I’ve been making seitan for a while and the bake instead of boil is so much better!
I actually introduced it to my kitchen at work and now our seitan gyro is one of our most popular dishes
I’ve had vegan “deli meat” once before and it was revolting. This one actually looks good though, but I’m too lazy to make it haha
I tried this exact recipe but I found the ham is too dry. I let it cool down for more than room temperature. So what I am going to try to do is to get a cheese slicer to make the slices thin like Light Life deli slices to see If it is less noticiable in sandwiches:/

I never knew bisquick came in gluten free. I have always used flax seed flour as the base of my pizza dough which is way too runny in its uncooked form. I will try this recipe for sure

I am not one, but since you mentioned them, Seventh-Day Adventists have the longest life span in the U.S. and compose the only blue zone in the U.S. in Loma Linda CA. I have worked for them in their restaurants, which use no eggs, dairy, no animal flesh. I worked in five of their restaurants. True Seventh-Day Adventists (yes, there are fake ones who eat meat, smoke cigarettes, and drink alcohol ) go by their ‘prophet’ Ellen White and her book “Counsels on Diet and Food. ” If you meet one, and he/she tells you they eat meat, you know they are not a real Seventh-Day Adventist. Just like a real Buddhist does not kill animals nor do they eat meat. My cousin said he became a Buddhist, but he hunts deer with bow and arrow, so I do not believe him, even though he is a professor in Scotland.

I tried out this recipe and it did not come out well. The inside of the dough was almost undercooked although I followed instructions. The outside looked beautiful, but the inside not too much. Any suggestions on why it tasted doughy almost?

I’m sorry that this recipe was not successful for you. The dough is not easy to work with but I tried to show how I pull it off. I make this often. The only time I had a problem with the dough is when I tried to use regular yogurt with more flour. If I’m not there in the kitchen with you I’m not sure how to help you make it successful. I know some people use bob’s red mill pizza crust for stromboli and there is a video on YT about it but I never tried it myself. Maybe you could try that one.

I don’t have a pressure cooker. what can I do in comparison for that step? Would a convential oven work for that step?
I’m not against being vegan as I think it’s great, but something has always puzzled me is why vegans think everything must taste like meat?… Being Kosher I don’t eat pork, but I don’t want things I eat to taste like pork either…. Just one of my quirks I guess…. I have many….
Hi jb, did you make the stromboli or calzone? For the calzone you need to make sure that the sauce is placed on top of the cheese and pepperoni and does not come in contact with the dough. The stromboli, on the other hand is a little softer and almost doughy in the center. You could try cooking it longer or rolling it so that it is wider and has more surface area and less spiraled layers. Also rebaking leftovers on a foil lined baking sheet for 10 15 minutes will produce a crisper effect.

Just came across this.. I’ve had seitan explode. Usually it was in the oven but the last time I pulled it out of the oven and right as i turned away from it, it exploded and it sent hot chunks of seitan in every direction, including all over me. It’s actually still on my ceiling and i keep finding pieces here and there. I haven’t tried making it since. It’s usually because the pressure builds up and it isn’t wrapped tight enough. I cooked it too long and it just couldn’t handle it.

i tried this too, and mine came out horrible the dough is so hard to work with. it fell apart and crumbled so i couldnt make it =(

Chef Jana…….Hi from NYC, USA! I love your simplistic cooking of yummy vegan food. I also love you because you are looking out for the fur babies. I have a question. I’m always on the look out of making some type of mock-meat that I can use in a soup, stew, saucy recipe that won’t become soft and spongy once it is soaked in liquid. Do you have any suggestions or can you work on a recipe someday?

Hi Jana. Unfortunatly my deli slices came out very dry… I followed the instruction Bit by Bit. Do you use the whole wet ingriedients? Cause it was at first way too wet… If Not, could you give measurements that fit perfectly? Maybe even in Grams instead of Cups?
Why not put the broth ingredients into the pressure cooker with the seitan for that first two hours so it infuses the mock meat? (And save time?) I don’t know; I’m asking if there’s a reason to not do it that way? I’m looking forward to making some. Thanks for the great use for chick pea/besan/gram flour, too. Also, do you use the broth after you’ve cooked the deli-seitan as a soup or soup base? I bet it would be a good soup to have with a deli-seitan sandwich!
@WindRooster Bisquick just started their gluten free line last year I believe. It has worked out well in so many of my recipes. Try it out. It’s pretty versatile.
Great job. I would need about four times the seasonings, and I would use the vegetable stock instead of the water for steaming, adding some flavoring to that as well, such as pickling spices.
I don’t like to cook food in aluminum foil, so can I use corn husks, tamali style?

A lot of ppl prob already know but just in case its helpful for anybody, you said you could get a big thing of tofu at Costco. I just wanted to add that the oriental grocery stores are also an excellent place to get tofu way cheaper than the regular supermarket. And Indian grocery stores for chickpea flour. If you live in the city like me and Costco is all the way out in the suburbs, it could be a little easier too. Thank you for the video! Oh yeah do you think it would be ok if maybe after steaming it but before putting it in the oven, if you poked a couple holes in the foil with a fork? To keep it from exploding?

You’ve accomplished more in one year than I have in almost two. My anniversary is coming up on 3-31-13.
My stromboli vid has the highest amount negative feedback from people having trouble with it.
I think part of the reason we’re both pretty successful with GF recipes is because we were both experienced in the kitchen already. I couldn’t imagine trying to manipulate a GF stromboli dough without having lots of kitchen experience already. I guess there’s some benefit to getting older. HUGS!

You can use guar gum instead of gluten for gluten free option

Can’t wait to try this. I get Quorn vegan “turkey” deli slices-I love them,but they are SO expensive. I was thinking if I used Better than Bullion “No-chicken bullion” it might taste poultry-ish,and maybe the “No-beef” like roast beef? I don’t have a pressure cooker (too many kitchen gadgets to find room for now!) How long would I have to steam them for in a regular stove top pot? Or could I do it in the oven in a Dutch oven?

Hi Jana, can coconut sugar be used instead of the white sugar? Also, no gluten flour, if someone is gluten intolerant.
I just made this and I really like it!! I think for my next batch I’ll double all the spices because the flavor is pretty subtle.

Maybe used unbleached parchment instead of plastic wrap. Do not want plastics in food.
I tested out your recipe today. It turned out great! This is my first successful batch of seitan. It’s going to be great on sandwiches. I had to make a few adjustments because of the ingredients I had on hand but your process worked very well.
You actually don’t have to knead that! If you have the patience you can let it sit on your counter for a few hours and it will autolyse. Think about it…you’re not activating the gluten in vital wheat gluten bc it’s already just gluten. Idk if that makes sense lol

I never use corn starch but use arrowroot powder when needed in my recipes.

I made this recipe substituted buttermilk from farmers market and added rice flour aswell until it turned out doughy. I followed the cooking instructions in this recipe. it turned out great. just be patient when making this recipe.
