Arrange arugula leaves on the cooled omelette. Sprinkle the feta cheese on top, then arrange the carrots, bell pepper, and zucchini along the middle and sides. Leave about two inches from one end empty for easier rolling. Roll the omelette, keeping the edge under it once rolled.Heat oil in a large non-stick skillet over medium-high heat.
Pour in eggs, and tilt pan until bottom is evenly covered. When edges appear cooked, place feta mixture in a line in the center of eggs. Using a spatula, fold eggs over top and bottom of cheese, then fold sides over.
In a small bowl, whisk eggs, green onion, milk and seasonings until blended. In a large nonstick skillet, heat butter over medium-high heat. Pour in egg mixture. Mixture should set immediately at edge.Whisk eggs and milk until blended.
Add to skillet; tilt skillet to evenly coat spinach mixture. Cook 2 to 3 min. or until eggs are almost set, occasionally lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath.Heat oil in a large non-stick frying pan over medium-high heat.

Using a metal spatula, fold eggs over top and bottom of cheese, then fold sides.Whilst the roulade is baking make the filling by blending the cream cheese and feta together until it’s smooth. Wow! This is exactly what I had for breakfast this morning! My version doesn’t use dill. I put sour cream in place of the milk, and I’m generous with the feta because I LOVE it! Then I chiffonade some fresh basil and sprinkle over the sliced tomatoes and the eggs. It’s my favorite breakfast.

I had to make a vegetarian version and w/o cheese because I’m lactose intolerant. Still just the flavors of the spices made my day!! Yes this is eggs to a different level. After watching countless phyllo pie recipe from Akis, I made 3 different types of the recipes and it was delicious and crunchy. Jamie didn’t scotch the top of the pie to let the liquid evaporate and add more layers of the phyllo sheets in between before adding the filling, it would have been more crispy.

This is one of my favorite things to make for breakfast! LOL. The only thing I do differently is that I put shredded spinach in the egg, but i put about a cup of chopped asparagus in the “middle” with the fetta cheese (I only put a small amount of feta, it is pretty strong in flavor). Sooooooo good.

For some reason, fresh oregano is just an awful taste to me. so tart and peppery? not sure how to describe the flavors. We put some in a cucumber and yogurt dip the other day and it was inedible. Am I nuts?

You are a really good cook and many of these recipes show a substantial talent. (Don’t you hate it when people never give you any credit for anything because of the way you look? In Bulgaria we have similar thing, we call it “banitza”. I think all the Balkan countries have different versions of pastry dishes with fillings but chefs don’t really know much about Balkan cuisine, except for some Greek and maybe Turkish dishes.

Too many flavours. I think he falls for a common failing whenever a traditional dish meets an affluent western kitchen. Also, too much rote practice. You don’t need to cook the spinach at all. You don’t need to add salt. And too many eggs! I think he wanted to make a frittata which has become the go-to “chuck everything in” dish. Chuck anything in, not everything.

We make this in Bulgaria. Its called Banitza. you can also make the filling with Stinging nettle eggs and feta cheese. Its reaalllyyyy good and tasty not to mention healthy. You can also have a drink called ” Airan”( yogurt and water) to go with it.

There’s nothing wrong with breaking the so called food rules so it’s not “authentic”, it’s about what tastes good to you, and adaptation.
This is definitely and without doubt a fabulous spinach pie and I’d love to try it!!!! Congrats Jamie Oliver on this!! Yes it is Greek inspired….. but it cannot be called Greek “spanakopita” since that term refers to a traditional recipe with specific ingredients. Nevertheless there’s no reason not to enjoy both…. the traditional and the inspired version (smiiiiile!).

Why on earth would you go and ruin an excellent spinach and feta cheese recipe with adding nonsense like pine nuts and rosemary and for God’s sake oregano on spinach. Are you mad. spinach does not go with oregano and rosemary they over power it. Dill, parsley, mint and green onions my friend.

Tried this recipe…worked great..EXCEPT recommend SKIPPING the cooking for 2 min. On the stove top BEFORE putting in the oven..just pop it straight in to the oven..and bake at 400 for a few minutes Etc..truly a delicious recipe..
I did it. Very good pie. Just I used puff pastry.lovely. just forgot to make hooks with fork on the top and bottom and had to bake it much longer in the oven. But np. I did it after 15min when I saw the problem and it was ok. Great. all turn out good!
In Turkey: the exact same recipe, but they egg wash it with a bit of milk, soda, and the olive oil, it’ll be more crunchy in this way, and regarding the pine nuts, don’t fry them in advance, let them roast with the filo, in this way, they don’t get over cooked or burned.

I came here because it reminded me of spanakopeta, badly spelled, which is wonderful. If you took the idea of lasagna and then used phyllo sheets, spinach, feta cheese and other stuff, that’s about the idea. Layers of yummy.

The pine nuts are perfect? No, they are not. Many of them are burnt and will taste bitter.

siszam, you could try goat milk and butter since it dosen´t contain the same sort of lactose as cow milk dose,i´m lactose intolerat aswell but i can drink and use goat milk and butter without any probs or you could try finding milk and butter without lactose, but those usually taste horrible

I just made this, I had to use cheddar instead of feta and ham instead of bacon. But still tasted amazing. Keep up the great recipes.

I’ve got a question if anyone could help me out here! I’m from Melbourne and we get a lot of really good borek’s in our local markets (I’m assuming they’re Turkish). However, after doing my research, I found out that boreks are made with filo pastry. I’ve worked with filo before and I’m pretty sure they’re very flaky and crisp. However, the ‘borek’s’ I’ve had from these markets had more of a flatbread sort of outer layer. They seem to have been pan-fried (both flat sides are crips whilst the side and inside are still bready). However I’ve also had gozleme’s and they’re rather soft(like an Indian paratha). I’m just confused and I’m trying to find what was is that I buy at all these markets that say that they’re selling borek? Is there a special name for it? It defs cant be made from filo cause they were nothing like the filo related pastries I’ve had in the past! I’d be very appreciative if anyone who’s familiar with this cuisine could help a fellow foodie out here! Desperately want to remake them at home!

@Only3wishes, thanks! My learning disorder made me confuse the squeezing water out with steaming in water… I am guessing the precooking is to reduce the moisture from the spinach so it does not make the dish runny… Which means, yes you need to do this…
I make these a lot, but I’ve never tried it with spinach! It looks good so I’ll have to give it a try.

I wonder if I could substitute the bacon with mushrooms will it work out ok…I’ll have to try it and see how it comes out.
