For those freaking out over the addition of cornstarch: Italian hot chocolate has always been made this way. Also, from the comments about its being “unhealthy,” I think some of you may be confusing cornstarch with corn syrup.

Corn Starch? you guys are nuts. Worse crap you can eat. Put organic pure cocoa and a couple of drops of Stevia or Monk fruit extract and you are good to go. Cocoa from what I have read has 10 times the antitoxins that blueberries.
Use and Italian sized cup for your Italian hot chocolate and an American mug for your American drink. Good things come in small quantities:)

I wonder if you can use a little bit of coffee and add it to the hot chocolate. I’ve heard that coffee helps enhance the chocolate.
I have some “97.7%” chocolate in a local store. That beauty comes in a box that contains 12 small chocolate pieces in individual wrappings (12*7.5 = 90 gr). One piece of chocolate per 200 ml of milk gives me some soft hot chocolate.

Q: Why are you recommending that I use a very dark chocolate bar? Can’t I use milk chocolate if I don’t like dark chocolate?
A: Milk + dark chocolate = milk chocolate. Milk + milk chocolate = very milky chocolate, which maybe you’ll like, but I suspect you’d think was kinda bland.
Q: Do you realize that 70% cacao isn’t “very dark” or “very intense” to me?
A: Yes, and I’m so very impressed by you and the relative scale of your genitalia.

I’ve read that maple syrup is not a fully inverted syrup, and an inverted syrup is useful to mix with the cane sugar because it makes it impossible for the syrup to form crystals and seize up into a sugar ball in the pan. But that’s only a possibility, not a certainty, anyway. So, maple syrup would probably be fine.

do you know if your cocoa powder is dutch processed or not? I’m trying to get a brand that is but it is never labelled as such. Yours looks pretty dark, I have Fry’s cocoa powder myself (in a can) but it’s really light in color making me think it isn’t dutched even if it says so on the amazon website, but then it’s also been in my fridge for years (unopened but still) so I’m just trying to figure this out as best I can…

I am ten years old and this is the first time I have ever made hot coco and really liked this recipe but mine tasted a bit dull so I added 3 tsps/ 2 tsps of warm water with instant coffee powder and it became very tasty and also thank you alooooot for this wonderful recipe and I can promise that not other hot coco recipe could win over this one
I got a comment from somebody that there should be also a pinch of vanilla and salt. Actually, in my original recipe no, there should not be salt, or vanilla or cinnamon, or anything else. I myself like vanilla or cinnamon, but I cannot use it too often in any kind of drink or baking because it palls very quickly. It has a specific aroma and I believe that there are many people like me. I heard complaining from some people even about SMELL of cinnamon at our local shopping mall, because there is a bakery that produces cinnamon rolls and people are tired even to smell it. Same thing about vanilla. As for salt, I myself never add it, as I use a pinch of salt with hot cereal, with other dishes, so why to use in hot chocolate? I like a natural,original taste. But,as I said, you can add cinnamon or vanilla, or even salt as you wish to my original recipe.

The delivery here is more personal, less clinical, seemingly more comfortable. In Italy we always had just chocolate powder with milk, just as like the American version. The version with starch is called Bar Hot Chocolate, and is not common at home.
Some who want it lighter or are vegans, use Water instead of Milk.

I’m from Germany and I use Nesquik cocoa powder and (sometimes cold) milk to make my hot chocolate. It’s great.
For the Italian one, if you balance the ratio of cocoa to corn starch to 1:1, and then simmer it real nice, and then refrigerate it, you’ll have pudding

Organic whipped cream with a little lakanto sweetener. Regular whip cream has carrageenan an inflammatory.That is how I make my hot chocolate except the almond butter. Mixing power cocoa and hard chocolate makes it thick like European hot chocolate. What does the almond butter do to the taste.

I only used half the cornstarch stated and it was still very thick. I would say as others have that it turns out to be more of a dessert and you could not drink it. So, maybe I shall add more milk/less starch next time. I also only used 1 tablespoon of sugar and that was sweet enough for me.

Is this drinking chocolate or spooning chocolate. Because you’re not drinking it. Also, what happens when this recipe gets cool? Looks like too much and it would just solidify in the mug.

Thank you for clarifying that the starch goes in AT THIE BEGINNING with the cocoa. I tried many recipes, and most were adding the starch near the end, giving it a starchy aftertaste.

I made the italian version with the following alterations: Only 50 g Dark Chocolate and only 3 teaspoons sugar. Definitely a keeper, but next time I’ll use even less sugar because the chocolate is sweet already.

I don’t get how the tart is mexican inspired… I thought it was going to have chile, (aztecs drank chocolate with water instead of milk and a bit of chile). Although thats not properly mexican, but indigenous, hot cocoa in the other hand is a big thing, we accompny this drink with sweet bread or churros (CHURROOOOS <3). Anyways... can't wait to try the mousse and the cookies and the tart without the caramel thing. <3

There are vegan recipes floating around the internet EVERYWHERE with vegan substitution, but it’s SO easy to make ANY recipe vegan! It’s really not the same with anything glutenfree…

I’m from Mexico. looked at your last recipe. I believe all the items are typical, rather than inspired. Cinnamon, pecans, goat’s caramel, and piloncillo sugar are some Mexican cooking elements. and the obvious: chocolate is originally from my country. we are not limited to sour cream… but you are the expert, entitled to your opinion. not trying to be a bugger (otherwise I wouldn’t ask my question )
my question: how is the mousse vegan? especially in European chocolate the butterfat is high, and butterfat is animal based. so where do you get the vegan chocolate? and maple syrup: like honey, isn’t that illegal to vegans? again, not trying to be a prick. this is an honest question because I’m not vegan but I do appreciate vegan cooking. some great recipes.

2 days ago i did the butter cookies and then i melt dark chooclate 70%cacao and coverd them so they were white inside black outside yumme i love dark chooclate so much and its bodings

Corn starch??! LoL…. C’mon American Heart Association, if people are surfing the web for “healthy alternatives” recipes then they’re bound to find out that corn starch is NOT healthy at some point. Help your credibility a bit by researching healthier alternative thickening agents. If you’re going to use something that has such a high glycemic index number, like corn starch, then you might as well just add sugar.

For all the vegan viewers, convert any delicious chocolate recipe you see to “vegan”, by simply, taking out all the really tasty things like butter, cream and eggs in the recipe and replacing them with any random and weird combination of vegetables you find at the green grocers. i.e avacado and turnip.
