Almond meal and cauliflower rice make a great surprising low carb substitute for fine cornmeal polenta and cooks in less than 5 minutes.Chop the cauliflower head into chunks and pulse the pieces in a food processor. Pulse until all the cauliflower is in very small grain-like pieces.
Heat a large frying pan on a medium heat for a few mintues. Once the pan is warm, add the cauliflower.Bring stock, 1 cup water, and salt to a boil in a saucepan over high heat.
Slowly add polenta, stirring constantly with a whisk. Reduce heat and simmer 5 minutes. Add cauliflower; cook 5 minutes, stirring occasionally.Make the polenta: In a medium saucepan over medium-high heat, bring the almond milk, water and a ½ teaspoon salt to a gentle boil. Add the polenta and whisk to combine.

can you use, egg beaters, parmesan and count the carbs in corn flour to a limited of 2 table spoons. but bake it instead to lower down the fat content. I think the outcome would be the same if your just doing KETO.

Using almond flour as a base, or even hemp seeds makes a good grits substitute too. I like to combine hemp seeds with chia seeds, but almond flour is a lot cheaper if you want a big bowl. Add some butter, butter salt, heavy cream, black pepper, shredded cheddar or american cheese and call it a day.

Im a southerner. From N.O. you aint gotta do all this fancy shit. Just boil the dang cauliflower, mash it up, then put salt, pepper, and butter. AND BOOM, ya got a gritty textured low carb substitute. It dont taste like a grit. Its not corn. But, it will give you the feel of grits. It works for me. Throw some egg & bacon, and you good to go.
If you feel that passionate about having real grits, just eat real grits once month. It aint gonna kill ya. If you’re fat adapted, you will burn through that shit easy.

I make Keto grits\polenta by cooking coconut flour with chicken broth, butter and cream cheese. It’s delcious!
Polenta is ground whole corn or as we call it in the US, cornmeal. Grits are just the germ of the corn kernel.
As a Mississippian, i decided to give a try and they were good. I personally did not like the garlic powder and the smell of the broth. It was still good though. I would recommend to some people.

I just made these. I am a southern girl who LOVES grits. In my opinion these aren’t terrible, but they aren’t an acceptable substitute for grits either. The texture is ok, I used a mortar and pestle so they still had some grittiness to them. I can’t get over the grassy/spinachy taste of the actual chia seeds. I may try the hemp hearts and see how I like that. HTH helps someone.

Since you are so good at responding, one question… would you estimate that large head of cauliflower that you grated, was 16 to 20 ounces? I’m trying to calculate using a 12 ounce bag of frozen and downsize the liquids. Yes I know, I would go for the grated first, but sometimes I don’t have it! you should try making a keto beef patty with fathead dough. it’s awesome! same recipe for the dough just flatten out, stuff them, egg wash them and put them in the oven.

This southern gurl loves grits and cannot wait to try this recipe. I use to eat fried catfish and grits for Sunday morning breakfast at my grandma’s house before church. I have a similar recipe-I use super concentrated homemade chicken broth (its super gelatinous when cold) ground chia seeds, hemp seeds, hwc. I don’t use cheese and love the texture. I think y’all should give Keto Connect’s recipe a try. I want to challenge you to take a photo of yourself or film yourselves trying the recipe and put it in these comments. I think it’ll be fun!

I wonder if using white chia would make it more eye appealing … it sounds like it would be tasty, at least, as a savory hot cereal replacement. It’s nice to see something other than cauliflower.
Chia seeds are a good source of omega 3’s which your body does not make naturally. For the most part we can also get those from fish. I happen to hate the flavor of fish so I rely on chia a lot. It’s great for your heart and can reduce the likelihood of stroke. Great healthy recipe!

This is a very tasty recipe. I would add the cheese after the cauliflower and cream had reduced to the desired thickness -mine wound up mostly melted to the bottom of the pot despite stirring frequently and watching the flame. Otherwise the flavor was delicious. Thank you Sahil for generously sharing your talents with us. I make several of your recipes frequently and enjoy watching your videos.

For Vegetarian try use Some grilled portabella mushrooms or any thick cut veggies would work out well IMO….!

What about using hemp hearts? They’re used in your overnight oats because it’s similar to oatmeal, just like grits are similar to oatmeal (waiting on the comments to come bashing me on how grits aren’t like oatmeal. Lol)

I made these and they are soooo good! Next time am gonna start off with using 2 eggs instead of 3 cause even though I put salt on the cauliflower rice and let it sit 20 minutes and then squeezed a lot of liquid out and then waited another 20 mins after mixing everything into the cauliflower rice and put an additional 2 tablespoons of coconut flour it still felt really moist, but they still came out so well. Thanks Mega! I just accidentally made keto grits or keto polenta today. I accidentally ground my cauliflower for rice too fine. I added cream, butter, harissa seasoning, parmesan cheese and some brie. Who needs regular polenta? This came out SUPERB!!!
I’m a southern girl and absolutely love grits. Giving them up was painful. I will try this but will have to call it something else. Seriously cannot call it grits.

The coconut milk was coming through a bit too strong for me though, so I think next time I’ll try it with heavy cream.

Easy to get exces liquid out add a bit salt let it sit about 20 and pour it in a kitchen towel and squeeze the liquid out.

I bet he would have fun with Cajun cooking… get some gator and bread it up crispy keto style with some Tony’s ya. Shrimp Etufe, Gumbo, Jabolia… I’m going to have to get another head of cauliflower to go with the shrimp in my freezer.
