Ingredients 1 cup ginger (peeled, thinly sliced) 3 cups water 1 cup sugar Optional: additional sugar to coat.Toss ginger with sugar in a bowl. Step 3. Combine ginger-sugar mixture and water in a large skillet or wok; bring to a simmer. Reduce heat and cook, stirring occasionally, until sugar melts into a syrup and starts to crystallize, about 1 hour. Continue stirring until syrup is mostly crystallized and ginger comes together in a pile in the center of the skillet and very little syrup drains out; remove from.
Combine water and 1 1/2 cups sugar in a small saucepan and bring to a boil. Add ginger, reduce heat, and simmer for 20 minutes. With a slotted spoon, transfer ginger to a wire rack (set over a pan or dish so your counter doesn’t get sticky).
Let.Place the sliced ginger and 5 cups filtered water into a medium-sized non-stick sauce pot. Cover and bring to a boil. Reduce to a simmer and allow to simmer covered for 35 minutes, or until the ginger is fork-tender.
Meanwhile, prepare a rimmed baking sheet by lining it with parchment paper or a silpat mat.Mist a cooling rack with nonstick spray and place it on a rimmed baking sheet lined with parchment. Put the ginger and 3 cups of water in a medium pot over medium-high heat. Cover and cook until the ginger is tender, about 45 minutes. Pour off all but about 1/4 cup of the water, reserving the cooking liquid (see tip.

Divide the dough in two and roll each half into a log of about 1.5 inches in diameter. Roll each log in turbinado (if using) to coat it evenly all around.
Wrap with plastic wrap and chill overnight.Directions Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment. Peel the ginger root and slice into 1/8-inch thick slices.Fresh ginger, balsamic vinegar, soy sauce and sesame oil provide a nice blend of flavors in this Asian-inspired recipe for fresh sugar snap peas.

Why wasn’t the water with all the ginger flavor from boiling the ginger used instead of using fresh water?
So I tried to make got to where med heat then all the sugar came to the top turned to like powder like rice.so I turn heat all the way then immediately tyrned brown took off heat kept stiring notice getting very sticky took off pieaces on plate wait lill bit then noticed it hardened up so not able get it rolled in sugar.I tasted.it soft in the middle and lill spicy like feeling burned on tongue.any idea what is going on thks also I had in pressure cooker 10min on medium
here’s a suggestion from a career cook witha recipe passed down from my mother. Where she got it? I don’t know but I prefer these results.
1. peel ginger with spoon.
2. grate or fine mince ginger.
3. combine a 2/1 ratio sugar to ginger (by volume) in a skillet or low sauce pan with just enough water to coat.
4. bring to boil on high.
5 cook and stir and cook and stir and cook and stir from watery to light syrup to heavy syrup to “GLOOP” all while lovering the flame to PREVENT CARMELIZATION.
6. CRITCAL STEP! Once solid crystals start forming at the bottom of the pan, turn to the lowest heat you can and STIR STIR STIR LIKE CRAZY! The goal now is to cool the molten mixture and evaporate excess water.
6.2 once the “BLOB” is really thick remove from heat and use a fork to areate and DRY. You’ll know you’re doing this right as small crystals become big crystals as it “blob” cools. work it with the the fork breaking up the blob and work until its becomes granulated again (with chunks of ginger).
7. once “dry” place onto wax paper to cool. it should look like sugar with ginger chunks not ginger coated in sugar.
8. bag and tag ina cool dry place and add to green tea, the end:)

With the water make ginger tea and honey. It is just delicious. So you will end up with so many goodies with just one recipe
I made a batch last evening. My Ginger was rather broad so my slices were larger. They are soooo delicious and far better than the shop/store ones, and much less expensive too! I tried this with much less ginger than is used in the video, and unfortunately it burnt during the water stage! I was simmering it and checking every 10 minutes but between one check and the next the bottom of the pan was completely black XD I guess I didn’t use enough water? Or had the heat too high or something?
Anyway I’m not discouraged, I’m determined to try again! But just a recommendation to keep a very close eye on your ginger, especially if you are using less than the video.
I’d have to double the liquid & sugar to have ginger syrup to add to: tonic water, oatmeal, plain Greek yogurt with some of the candied ginger (this is what I do with my candied citrus, its syrup and Siagon Cinnamon, Yummy).
I just finished making over a lb of candied citrus peels & syrup & gave a couple of jars away. My neighbor huggeg her jar ☺!
Now i have my sights set on doing the candied ginger!

Does it have to be done with sugar or can you use some other type of natural sweetener like honey or agave nectar?

Now I see why it’s so expensive to buy candied, a more healthy, if spicier, solution is to rest the ginger in honey and eat it later. It doesn’t affect the taste of the honey itself, while still mantaining to be healthier.

I has bad stomach pain for 2 days and have been living in the bathroom. I am thinking its IBS from some medication I take for sleep and anxiety. Anyways I just cut pieces of some ginger up and put it in some sugar. My stomach is still sore inside but I am able to lie down and get rest without feeling comfortable and I also do not feel the uncomfortable cramps I have had for a whole 2 days now. sorry i love the idea but u made stuff way to complicated. all those words was not necessary. i can put all of this into a 3 minute video saying peel cut boil add 1 cup of sugar in a 1 cup of ginger 3 tables spoons of the boiled ginger water in it and stir on the stove on medium. then dip them in sugar. now was that so complicated.

I’ve not tried but the water in the first cook can be used by adding lemon juice and use it as a refreshing drink. Maybe add more water if it is too salty. Or maybe some sugar.

You might try growing your own ginger from ginger you buy. There are videos on youtube of people doing that it’s easy. I’m sure you’ll have all the young ginger that you’ll need.

That’s true…it’s irritating..so many times she keeps on saying gingerrr. But the recipe is quite nice indeed!!!!
I believe it’s the components that give ginger it’s pungent and spicy flavor are also what give it antiviral and antibacterial properties.
While I love the flavor of ginger, I eat it for it’s health benefits as well, so I will not be draining the water. Or maybe drain some of it, and
save that for ginger tea. When you simmer it to the point of making a syrup, you can also save that to add to desserts.
Some recipes even suggest this. In any case, I wouldn’t want to waste all the health benefits and flavor!

Maybe you just need to make sure what you buy is fresh and young so it’s not woody. All I know is that the thicker pieces were tender

Candied ginger is what is eaten before setting out on the ocean, it prevents seasickness & is also great fot upset stomach in children & adults.
Also if you are new to sailing or yachting, spending a few days on a vessel while it’s in port hepls your body adjust to the constant motion. Then you can enjoy your voyage & have candied ginger before starting your voyage.

i was thinking of doing Candied local Blood oranges since there amazing around where i live and you can only get then in the being of the year at the local farmers market. i would have to buy allot of oranges since i know they would not make it very long in my house.
