What is the time needed to proof if you do during the day? Does it have to be an overnight?
I wish you would make the no-knead variety and compare it with this one.
You should try making Sally Lunn bread! It is traced to colonial history and doesn’t require any special equipment to make. Just a bowl, wooden spoon, and a loaf pan (or many people make it in a bundt pan!)

I made these and they were perfect, I never used both yeast and baking powder in english muffin recipes but this is magic, try it.

Emmy crumpets and English muffins both totally different but yes both cooked in a skillet or griddle though you really should do a crumpet video though
This is my favorite English muffin recipe and I have made it a lot! When I put mine on the griddle, I like to put them on domed (or risen) side first because I find that they look more uniform that way. Yummy.
*cringes in english* crumpets are so different. they’re little rubbery discs with a bunch of holes in it. english muffins are the little bready things shes making.
Heads up to the vegans out there: you can make skillet bread by making sopaipillas (Chilean fried bread) really good! You can make it with pumpkin or without. With is more savory and without is more like a toaster strudel bread taste. They are super easy to make!
That powdered buttermilk can be a life saver — as a Southerner who makes biscuits all the time I can attest to it. Note, however, that the recommendations are to mix it directly in with the flour/dry ingredients and then add the water when you would have added in the milk. That way also keeps a few extra dishes/utensils clean:-)
Vinegar works better to turning regular milk into buttermilk.
You should probably look into the scandal around Better Help’s ‘councilors’ and their recording what you say to them, before you use it.

Because of you I went out and purchased this book after one of the other videos that you did where you referenced this book. I have not made anything yet but I have had the opportunity to kind of look through the book and absolutely love the setup of it. My son and I can’t wait to use it.
I use that powder all the time but I do not reconstitute it I just add it into the dry ingredients. It gives that tart buttermilk taste and my cakes rise so beautifully with a lovely crumb! Tender and moist… oooh yummy! Try it in biscuts and buttermilk pound cake recipes…
Sorry / sumimasen Emmy! But English Muffins are NOT crumpets! They are two different things! Crumpets are a little wider, flatter and will be full of holes that are visible from the top!
Now I know you were excited to eat them at once but we usually cut then in half and toast them! Oh so delicious with butter, and jam, honey or even lemon curd!

Ahhh, but crumpets are completely different! A crumpet is kind of like a really thick American pancake. They’re made with a runny batter with yeast added so it rises. You cook them on a griddle in the same way, but you use those metal egg ring things so they hold a circular shape. You leave them to cook so that lots of bubbles form on the top and burst. They have an amazing texture and are fantastic. They are the perfect vehicle for loads of butter! Dig out a recipe and try them, I guarantee you won’t regret it:-)

Hi chef I love your recipe they look so delicious and tempting I want to know once I make the dough and keep it in fridge for 12 hrs (night) and remove it from the fridge in the morning, I have to form balls of dough immediately or wait till the dough comes to room temperature and then form the ball? Just tried your recipe for English Muffins, came out slightly a bit stickier, probably cause I went and bloomed the Yeast first by putting it into the water and putting all the sugar in it. But after on the pan and baking for 10 minutes, although didn’t look as beautiful as yours, and didn’t have any corn meal, but the Taste and Texture was AWESOME! Your recipes have never failed me

My oven broke a while ago and im sad i cant bake my own bread like everyone else but im sure there are more people who like me dont have an oven and i think some interesting recipes for you to try are the two ingredient naan where u just use plain yogurt or sourmilk (also known as maas) in South Africa and flour and also steamed bread also known as ujeke in South Africa. Would have preferred for you to use the other non oven option to finish them off. Using the oven kind of took away the entire point because i would be curious if that would work aswell by the covering them.
FYI, whenever I’m doing any yeast dough and it needs to rise to heat up my oven to 50°C turn off and leave the dough for an 1 and I don’t have to worry about anything

If you tend to keep your house cooler (as my husband prefers) you can turn your oven on (I just set it 350) for about 10 to 15 seconds (just until you can feel that’s it’s slightly warm when you put your arm in) and let your dough rise in there.
I imagine that Emmy’s book shelves are full of bread recipes, vintage recipes, and vintage bread recipes.

I love The Breadmaker’s Apprentice. I have another Peter R. book that has a crumpet recipe that I love even more than the muffins which I have made several times. Crumpets are not meant to be split and require a ring (like the one you used for Japanese pancakes). Clotted cream and jam on top make a wonderful Christmas breakfast or lunchtime “snack” for those like us who eat holiday dinners in the late evening. I think some quarantine crumpets are in order for Sunday breakfast this week!

These are most certainly not crumpets! Crumpets are cooked in crumpet rings and are only cooked on one side, giving the characteristic holes on the top.

This recipe is gold. My muffins came out beautifully. They were also also fluffy with lots of nooks and crannies and crispy when toasted, better than store bought. I just hope the recipe for the starter yields just enough to cover 300 grams. There is more than plenty left using the original recipe for the starter unless I am making muffins everyday.
My starter over reacted rose to double the size in few hours and I had to stir it down several times otherwise it will over flow. I followed your recipe to a “T”, 2 2/3 cups bread flour, 2 cups lukewarm water (100 degrees F) 1 1/4 Tsp instant yeast and 1 tsp honey.
Can I put the starter in the fridge rather than kitchen counter?

Anna, I’m a little unclear on the starter. You’re supposed to feed it like a sourdough starter every other day, and feed it every other day as well. How much flour and water should you continue to add to it? Can you use it as a sourdough starter?
Could I substitute for my sourdough starter? Perhaps less in grams?

I made these and they were just like store bought. Missing the egg, milk, butter and a little vegetable shortening for the homemade texture and fluffiness and flavour. I think you’re great but this recipe was a fail for me.

Crumpets are a different thing in the UK. It’s different to muffins. Crumpets are made with soda not yeast, cooked only om one side with bubbles on the top side

7.5g dry yeast
14g sugar
200g warm milk/butter milk
55g unsalted butter
26.5g vegetable oil
10g salt
420g bread flour
corn meal/ corn grits (it depends on how much you want)

I make my own buttermilk. It’s not 100% the same, but it works well enough. Same quantity of 2% milk but add 2-3 tablespoons of white vinegar and let it sit for 3-5 mins. Before adding it to my recipe, i will give it a quick stir.

I’ve never seen an english muffin recipe that didn’t include rolling the balls in cornmeal, my usual efforts always results in a very sticky dough that requires the corn meal to handle them. I’m definitely going to try this though, the corn meal is such a mess and goes everywhere when you fork it open.
I cook in restaurants and I’ve always wondered how much cleaning these guys actually do at the end of the shift. Do y’all sweep and mop? Do you do all your own dishes? Everything always looks so incredibly spotless to the point that it makes me wonder if there’s a hired out detailing crew or something.

Thanks Claire! I made my dough yesterday. Baking today. So excited! I substituted 1 1/2 C of whole wheat to see if I got a little more flavor, and I’m using semolina instead of the traditional corn.

Don’t flour your table but misting your hands helps a lot. You can also mist the table to make things easier.
