Love the video. Many “authentic” NY bagel recipes call for leaving shaped bagels overnight in the fridge. Is there a sacrifice to taste or texture in leaving out the overnight proofing?

Bagels have a chewy exterior because they are boiled (in honey water i think) first…not sure if that would work with this recipe, but I use a similar Flour + Greek Yogurt + Baking Powder recipe to make high protein pizza crusts!

These convertions are very off! Im trying to make them at the moment, 500 grams is not 3.5 cups. Rather 2.11 cups. 3.5 cups is around 850grams. Not sure which measure is the correct one. Having major issues with getting a dough that Im able to kneed, keep getting very watery doughs.

Made these with all purpose flour, used a little less water to make up for it. I also baked them in my large toaster oven and I had to flip them because the tops were getting cooked too fast. Even when I turned it down to 375. Even after all that they still came out great and super soft and fluffy on the inside. Def making these again!

I made cream cheese one day and the next day I decided to make bagels for a first run and nailed the one minute boil, the chew is outstanding. I took the whey from the cream cheese and decided to make a “double sour” whey bread with it. It was an experiment and it was the best loaf I have made. The dough rose to the lightest and fluffiest and almost poured out of the bowl, the moisture, the crags in the crust, and the texture were all outstanding and it was a pretty loaf too.

Made these and they were great! Everyone was asking for the recipe:) I didn’t have bread flour so i guess i just added a random amount of baking soda and baking powder to the flour and it worked out. Topped them with Sesame seeds and it was a 10/10

Came out excellent. Former New Yorker living in Florida during quarantine. These came in clutch. First time I made it exact and it came out great. Second time I made these I tried to make an egg everything bagel. Turned out really good. 4 yolks and lower the water to 250ml. Also, on the second attempt I used a stand mixer. Slowly add the wet to the dry. I would use more yolks to get that yellow look but I’m not looking to have a ton of egg whites leftover. If you try more yolks I would lower the water content even more. Anyhow, loved the recipe. Thanks.

So I will keep using my recipe: 1) Walk to my local neighborhood bagel store. 2) Use my good looks to flirt with the counter-lady, so I don’t have to wait on line. 3) Ask for 6… but she always throws in “An extra one… for my favorite customer”. 4) Walk back home. 5) Toast… and apply 2 ounzes of cream cheese. 6) Enjoy.

I couldn’t get the recipe on the website so decided to write it up for your viewers. Thanks for the recipe!
Ingredients
3 1/2 c bread flour
1 1/2 c warm water
2 t salt
2 t yeast
2 T sugar
Instructions
Add one cup of flour to bread bowl, add yeast and mix. Add warm water. Cover and let sit for about 10 minutes.
After the batter has puffed up, add flour, salt, and sugar. Knead dough with dough hook or by hand (will take some time).
Cover and let sit about 2 hours. Remove to working surface. Divide into 8 pieces — create balls (tucking seam under and roll on surface to remove any seams). Put on greased pan and let sit (covered) for about 15 minutes.
Get water boiling in high-sided pan or pasta pan.
Slightly flatten ball and create hole in the middle. Repeat for all and then place in simmering water (just under rolling boil) for 1 minute. Flip and boil 1 minute on the other side.
Remove and let set for a minute or two. Brush with egg wash (egg and water). Top with sesame seeds, poppy seeds, course salt or whatever you like for toppings.
Bake in over at 200-degrees Celsius (or 392-degrees Fahrenheit) for 20 minutes — let cool — enjoy.
Would totally recommend making bread. You can even do a no knead bread! Most of the time dedicated to making bread/sourdough is letting it rest and proof. Kneading bread is also so satisfying. I hope you give it a try with your yeast!

Wow that was one of the easiest looking recipes I have ever seen for bagels! Are they like NYC bagels? Hard outside but chewy inside? You put nothing in the bath water? Lye or baking soda? To add an everything seasoning would it still require the egg wash?

I haven’t tried sourdough but have made other breads like cinnamon rolls, milk bread, steamed buns and like normal style wheat bread. Sourdough seems so much and kinda intimidates me, hehe, maybe one day I’ll give it a whirl. Oh and I have tried bagels, I need to get better at those because they were just ok.

here are a couple of Tweeks…
(1) MALT IN THE DOUGH: contributes a mild sweetness as well as important ingredients such as mineral salts, soluble proteins, dough conditioning enzymes, flavor, color, and nutritive materials. These give us the incredible rich brown crust of the typical New York bagel, while adding flavor and aroma to the finished bagels.
(2) THE WATER: Sugar (white or dark), honey, and malt added either to the boil and/or the dough increase surface caramelization and also lend a subtle glaze. Personally, I always use malt incorporated both into the dough and into the boil. It adds a subtle sweetness and cereal flavor that complements the bagels.

I made these yesterday with homemade Nutella..so good. Kinda squishy/soft/flaky on the inside, so less of the “bagel” texture but honestly I loved it way more than a regular bagel. Left it in for 22 mins and it was perfect

I saw your video and immediately made these! I was skeptical because my dough was super sticky but they turned out awesome!!!For one batch I did everything but the bagel seasoning and the other I mixed dark brown sugar and cinnamon and they came out crunchy and delicious!!!!!

You can also boil these in the salt water before baking. That makes them puff more. Also instead of rolling into a log to shape them, roll in a ball and poke your finger through the middle to make the hole.

I made this bagel countless times and it’s foolproof! For bread, check out pinch of yum’s no knead bread. So easy.
To make it more chewy try expandex. You can find it on Amazon. I am gluten free and it gives pizza dough it’s chewy texture. I would think it would work similarly here. You would substitute some of the flour for expandex. I may try it with your bagel recipe. If I do I’ll let you know.

A useful tip for seasoning bagels is to wait until they are fresh from baking and dip them in the bowl of seasoning immediately after. That way your seasoning stays on the bagel without a mess!

I made these bagels and they aren’t that great. They look and smell incredible but they are very chewy and its almost a chore to eat them. Being completely honest the cheap froze bagels are better than this and I would almost go as far as saying it is one of the worst bagels I’ve ever had. Its pretty and smells good but the texture and flavor is all wrong.
my bagels are rising too much in the oven. so much so that the hole (even after being stretched very wide) is barely noticeable after they’ve finished baking

After watching your video, I’d like to give some criticism. First, some of your shots aren’t lit very well and it can cause distraction for the viewer. Second, a lot of the commentary could be quicker or more brief. Although, the extra explanations are a stylistic approach versus some other videos, which are more brief, it might not be favoring you as well. I think you should focus a lot on what you did in the beginning, which was very cinematic shots. It is very pleasing for the viewer versus static, long, somewhat close up shots, where your hands and arms are in view. Also the burnt bagel part was a tad much and it could have been more fluid in the beginning.

Omg!! These bagels are phenomenal!! You are an amazing teacher. They are so light and airy. Not dense like most bagels you buy. I did plain, everything, sesame seed and sea salt bagels. I also left the holes as is and made bagel bites. Super excited and can not wait to try another one of your amazing breads.
