If you are dairy free like me, you will love this dairy free chicken a la king recipe! You won’t even be able to tell the difference. I don’t know about you but I grew up eating Chicken a la King.Easy and elegant chicken dish. It’s a great way to use leftover chicken or turkey.
Green pepper and red pimientos make this a pretty dish to serve at Christmas.Chicken a la King is a filling dish consisting of diced chicken and vegetables in a cream sauce. I made this a dairy-free dish by using vegan butter and soy milk instead of butter and milk or cream. Prep Time 15 minutes. Cook Time 15 minutes.
approx. 1 1/2 lbs. (or 2 1/2 3 cups/whatever you have on hand) leftover roast turkey (or chicken), pulled or large diced; 1/2 cup frozen sweet baby peas, unthawed; 1/4 tsp. regular salt, (or to your taste for saltiness) fresh chopped parsley for garnish if desired *cooked.One bite will have the whole family shouting, “Long live Chicken a la King!” Here, we call for deli-roasted chicken, but this is a great recipe to prepare if you have leftover cooked chicken or turkey—just substitute it in.
You can also use a quick skillet chicken or boiled chicken.I just never got around to making this recipe dairy free after Son also went dairy free. Son hasn’t bugged me too much over the years about making gluten-free, dairy-free Chicken A La King for him, but when we went camping on July 4 th, once again he wistfully mentioned missing Chicken A La King. An immediate wave of guilt went through me.
Slowly add the chicken broth to the pan while whisking. Next add the coconut milk. Sprinkle the sauce with garlic powder and then stir to combine. Add the chicken and the frozen peas.2 cups gluten-free chicken broth.
2/3 cup heavy cream OR half and half. 2 lightly beaten egg yolks. Salt to taste.
For the Chicken a la King: 4 tablespoons unsalted butter OR olive oil. 3 cups cooked cubed chicken. 2 finely sliced green onions with tops. 4-ounce jar pimentos with liquid.In a large skillet over medium low heat, cook butter until golden brown.
Saute mushrooms until tender. Stir in flour until smooth. Slowly whisk in chicken broth, and cook until slightly thickened. Stir in cream, turkey and peas.
Reduce heat to low, and.Saucy and divine our latest version of Chicken a la King is both gluten and dairy free while still bringing out the widely familiar flavors. A soft layer of rice is bathed in a creamy and subtly earthy sauce boasting chunks of juicy chicken.1 tbsp butter (or dairy-free butter or oil) 2 tbsp gluten-free flour mix (a finely ground rice flour based mix is preferred) ½ cup gluten-free chicken broth.
1 cup milk (dairy or dairy free; I used canned full-fat coconut milk) 1 tsp poultry seasoning. ¼ tsp black pepper.Cook the Veggies – Melt the butter over medium-high heat and stir in the diced bell pepper, onion, celery, and mushrooms. Reduce the heat and cover for about 6 minutes, just until the veggies have softened.
Make the Sauce – To thicken the sauce, sprinkle the flour over the vegetables and stir for about 1 minute. Then, add the chicken broth one big splash at a time, stirring until.Directions. In a large skillet, saute the onion, celery and green pepper in butter until tender. Stir in flour and sugar until a paste forms.

Chicken a la King (or what we called it) is such a comfort food for me. We often had it when I was a kid. But I would say that our family version was more of a “chicken a la kitchen sink” as we used it to use up not just chicken but any veggies we had in the house. Sometimes we even added cheese because, well American and, well cheese.

Replace the flour with corn starch and serve over rice and it is gluten free. Replace the butter and cream with margarine and milk and it is budget friendly. Add another cup of peas and 2 diced onions and it becomes a lower calorie meal.
Here’s the lazy cooks recipe: Sautee mushrooms, onions & diced red bell pepper in butter; add 2 cans cream of mushroom soup, 1 cup of broth, peas and a 22 oz bag of oven-roasted diced chicken breast, stir, simmer for 10-15 minutes and done.

In Germany we basicly have the same thing, chicken ragout, minus the peppers. I usually cook a chicken soup and use the chicken and soup for the ragout, leftover soup can be eaten during the week, also i eat it with egg-noodles.

Sweat the onions briefly before u add flour, and then after the raw flour taste is cooked out, add bell pepper and cook for 1 minute before deglazing

Made this last night and my boyfriend and i loved it! I also added some yellow pepper and a handful of corns in the pot as well
One more point. I realise you are trying to make this easier for the average homemaker, and I respect that. But, again, browning the chicken before adding will add SO much flavour, and worth the added 5 minutes. I usually brown the mushrooms in the butter, put them aside. Then thoroughly cook through the peppers until they are slightly coloured. Put aside. Same pan, caramelize chopped onions. Put aside. Same pan, sauté cubed chicken until browned. By this point the flavours left in the pan are precious. Place everything back in the same pan, then add your flour until you can’t see any of it, then the cream and frozen peas. A little longer to make, but the result is a million times worth it. Thank you for your attention to this matter. Please email me if you’d like.
I think you should not crowd the mushrooms even if you have to do it in batches. Reason being, they should not end up soft at this point. To get the most flavour out of mushrooms, they should be browned. Put aside until all else is done, then add to mixture. They will soften while simmering with the chicken mixture, but the flavour will definitely enhance this recipe.

I cook this meal in a cast Iron skillet. When it’s done I cover the top of the dish with a layer of biscuits and pop the skillet into the oven to cook the biscuits. then serve to my family. they enjoy this dish very much. and it’s so quick and easy to make.

It’s one of those local faves that I grew up with as a kid but kinda forgot about it once I became an adult & moved out. I’m 33 now and this has just brought back so many memories. Whisk can help with lumpy gravy. Me and gravy do not get along lol. I always have a hard time making it, but getting better at it. My BF makes it and he sometimes uses a whisk, or fork, or wooden spoon. I watch plenty of cooking vids and I see a lot of people use whisks! Nice vid! Happy Holidays!

Again thank you for your ever so awesome instructions. You can teach more in 3.5 minutes than many can in 10 minutes or more. When one sees the dish, at first it may appear “rich” or high in fat, but the recipe and your instruction show it to be actually quite low in fat, IMO.
The option to use canned mushrooms is good because fresh have short expiration dates. Might saut’eed cut green beans substitute for the mushrooms if one desired? Thanks.

Or, you can buy three cans of Swanson’s Chicken ala king at the dollar store for $3.00. And it’s excellent. I serve it over Pepperidge Farm Puff Pastry shells and it is to die for.
Small amount of finely diced onion and sweet pepper with a splash of sherry and heavy cream,would make this VERY basic recepie so much better
The chicken ala king I’ve had in the past had this certain taste to it, some spice or herb or something. What you made was more like chicken and gravy over biscuits.

What about the red pimentos and touch of Worcestershire sauce? Chicken ala King had a certain taste. “Swanson” still makes it in a can of your store carries it.
Hot roux & cold liquid = no lumps. If you pour the liquid in so slow like that it will be lumpy. If you pour all of the cold liquid in at once and use a whisk, you shouldn’t have lumps. A good tip I once heard was even if you get some lumps, you can just pass the gravy through a strainer, of course that won’t work too well if you have veggies in your gravy.

The longest part of making this is baking the biscuits and precooking the chicken. Do those while you get everything else ready and it’s a 20 minute meal. Can’t beat that!

This tastes exactly as I expected and it makes me so happy to have this dish “again” and “for the first time.”
I made this and it is very good…never made a la king before. 2 egg yolks made the sauce a bit too thick; will use only 1 next time. I used 1/2 pkg (1 cup) of frozen peas/carrots, 1 celery stalk and 2 stems if green onion. I served it over a biscuit. My wife loves it. Thank you!

It would have been cool if you shaped the mashed potatoes into the mountain from the movie. Incidentally, my grandmother always served this over mashed potatoes, so this fits right in with comfort food.

“You do what you gotta do”…..lol…I just adore the way you chat along to those of us watching during your recipe demonstrations. Yours are amongst some of the best I`ve seen, the food of course is good (and being from the UK I`d never thought of American food being good, I`d thought more of it being fast food…I`d seen some American recipes where everything came out of a can or a jar!) but your slight comedic effect is just so entertaining. I sometimes whizz on with recipes and find myself muttering under my breath “just get ON with it will you!” but am happy to watch the whole of yours as you manage to entertain whilst still `getting right down to the bones of it` if you catch my drift. Anyway Chef John…I`m impressed….and it takes a lot to impress me.
Can I ask, do you always speak in this style, the uplift at the end of a sentence and the sing song quality? Or is it just when you are filming /cooking….it doesn`t grate as I had thought it would….I`m just curious. Thanks for some splendid recipes and making it so easy peasy too!
I like to mix it into a big pot of egg noodles. It doesn’t get any better that that.
Chef John, whats your thoughts on cooking pasta in the pan and making this a one pot dish? If so can you rack your noodle to find a preferred noodle. On a side note. Why do the french eat snails?…..They do not like fast food.

aha! I remember having Chicken Ala King in elementary school cafeteria! Probably not so fancy, and I don’t recall mushrooms but yes! Served on mashed potatoes!

I just made this, and it turned out delicious! The only thing I would change is to add the carrots in sooner because they weren’t fully cooked in the middle. I definitely recommend this recipe. Thanks Dave!
I used margerine, a medium onion, cremini mushrooms, gluten-free flour, and Almond Breeze (unsweetened dairy-free milk) and it turned out amazing!
I never heard of Chicken ala King that wasn’t baked, that how my mother use to make it.

Storing the sauce with a woks when adding the broth really helps prevent lumps.

I just made this. It came out delicious. I added extra peas and carrots.
Just dump the liquids in! Why you pouring so slow! And use a rubber spatula to mix da thing!
The dish I grew up with had green bell peppers and mushrooms and also a good glug of sherry or white wine.,
