Ingredients ¼ cup cashews 1 14-ounce can white beans Juice of 1 lemon 2 teaspoons curry powder ½ teaspoon cumin ¼ teaspoon salt 1 clove garlic (peeled and minced) 2 tablespoons extra-virgin olive oil 2 tablespoons cilantro (chopped).Curry Leaf & Brown Mustard Seed Tarka, optional ; For Serving: Sliced Cucumbers rounds, chips ; Place the cashew nuts and white beans in the bowl of a food processor fitted with a steel blade. Puree until smooth. Add the Maya Kaimal Coconut Curry and salt and pulse until combined.

Thank you so much for your wonderful videos! Is there any way to make this without oil? Do the spices require oil or fat in cooking or roasting them to get the benefit and flavor? I cook sattvic and Indian dishes everyday because the herbs and spices are beneficial for my health as well as the foods are just absolutely delicious. I used to use ghee but now I am cooking with no oils because my health is benefiting much more greatly by doing this. I don’t know if it’s best to have the fat in cooking the spices. I know for flavor it does change a bit. Maybe you have a great alternative for me?❤

This is absolutely, hands down the most delicious curry I have ever tasted! What’s even better is that is is vegan and the navy bean’s delicate flavor and texture soaks up all those amazing spices. This is a lovely dish. I made it for the first time along with the roti. This will likely become one for my top 10 vegan dishes.

This is an authentic Mauritian food. I decided to surprise my Mauritian partner and cook something from his country. When he came home, first thing he said was it smells like Mauritian food and when he tried it he said this is just like in Mauritius. I liked it so much that I had 3 servings. Thank you:)

I’ve looked at a few white bean hummus recipes, and wasn’t happy with them.
This actually looks very promising. Visually, it looks a lot more like real hummus than the others I’ve looked at.
