For the plastic wrap part, we used tin foil (we have no temperature resistant plastic wrap where i live) and placed a snug pot inside that, to not use rice (we had none in the house). It came out great. Just in case you need alternatives. DO NOT skip the step as the pastry will “melt” before hardening.

It would be nice if you told us what the gluten free flour is made of. Not all of us can buy pre-made mixes. Some of us have to mix our own GF flour. Usually GF flour is a combo of different flours together. The ratio depends on what you’re using it for (pie crust vs. cookies). So this tutorial is kind of useless because in order to follow your recipe I need to know which flour you used.
I didn’t realize that people did not know how to make real mashed potatoes until a friend of mine said that she had never made them. One of my kids loves them out if a box cause of the smoothness of them.

For all the ‘zomfgdon’tputplasticwrapintheovenwtf’ posts: There are particular cling-films/plastic wraps that ‘can’ go in to the oven without melting… However, if you are concerned, simply use baking paper, or use none at all, and spend a little extra time (literally 20 seconds) flicking out the grains of rice, baking beads, or whatever else you are using to merely weigh down the pastry as it blind-bakes.
I know how to have an entire Thanksgiving dinner on the table….call a catering company… drink wine and watch them cook

Mushrooms are not gluten free because of how they are grown today. They become contaminated from the material that is used to start the growth of the mushrooms.

Just made this yesterday. Firstly thank you Jamie and Jon for creating recipes for those of us who are avoiding wheat. Loved the pastry and even my husband who is British thought it the best he’d had including wheat pastry. I used the Dove Brand flour. Blind baking the crust really makes the difference. OK, now as an American, I’m really picky about my pumpkin pie. The filling tasted and looked more like a sweet potato pie. What’s the difference? Pumpkin pie is usually made with evaporated milk thus giving it a silkier texture all the way through. Also I do not recommend putting lattice pastry across the top of the pie. It’s hard to cut as the pastry is so soft and is not traditional for the pie.Using fresh pumpkin is fun but it is time consuming. I’d probably do the pumpkin thing a day before if I don’t have time on the pie making day. I will use the pastry for many pies, but will use my regular pumpkin recipe. Thank you again for all you do to help us attain tasty, healthy and appetizing food. Bravo!

I always make enough mashed potatoes for potato cakes..I add egg and little flour and fry..my hubby likes eating just like pancake..syrup and butter..it’s not very healthy but it is delicious.
I’ve never seen a pumpkin pie actually made from scratch! Other than the gluten free bit, this was so cool. I assume if you want your gluten just substitute the flour accordingly?

That’s something I’d like to see. How you do your leftovers. I’ve not gotten used to cooking for only 2 after cooking large but there’s only so much one can do with lots of gravy, salads already mixed with whipped topping, etc. ❤

You might see I’ve been viewing all your vids today. Searching my pantry and your videos for something extra special to make Hubby for a treat. I just catch new tips every time. Stepping outdoors to apply non stick baking spray. A towel to prevent spatter. My error lately with my Hubby’s distractions is raising my big stand mixer to clean the beater a bit and accidentally turning it to far to pulse. Plastic wrap for blind baking! I never would have thought of it. I was taught young to use foil (with dry beans), but hated how it deforms my pretty crimped edges or poked gashes into the crust. Thank you for this!

Does rice paper do anything other than help you simulate the look of a turkey? I’ve never worked with it in my kitchen before and would need to go to an extra market for it. I love the jackfruit idea though, can’t believe I hadn’t thought of it since my wife has a wheat and soy allergy.

Another suggestion, I have a hard time with the gum replacers for gluten (my son is gluten free) and struggled with getting a crust to work……so we make the pumpkin pie crust less. Baking it in a well greased glass or glazed ceramic dish works well. And adding several (we use between 4 and 6 farm fresh eggs in a double pie9 inch by 13 inch dish) extra eggs holds the filling together.
all this gluten phobia is pure nonsense.. you remove natural binding and add some synthetic gum. SOLVED:D

the fried onions “i pile them bitches high” hahaha yassss. i could eat an entire casserole alone. thank you for making this, i have been wanting to make one for forever and havent since going vegan. if you mix lots of onions into the green bean mix they get kind of soft and are TO DIE FOR, then bake the whole thing omfg. the onions get all oily and crisp and fucking scrumptious
I like that you use fresh pumpkin and roast it yourself, instead of using canned pumpkin!
For the blind bake, you don’t have to use plastic film. Tinfoil might work. I use “papel manteiga”. Not sure what it is called in English.
Also, you should keep the rice in a jar or tupper, so you don’t waste a portion every time you blind bake something. Just reuse the same rice over and over. My grandma use the same rice for 50 years.
Not sure if you need to prick the pie when you blind bake it. The weight of the rice is there to keep it from rising, so the air should com out the sides anyway.
Please don’t heat up plastic wrap, when it’s directly touching the food. Since not all plastic wrap is produced the same way, it can contain chemicals that you don’t want to eat. Use parchment paper instead, that’s what it’s made for.
Also, you don’t have to scoop out the flesh. The hokkaido skin is eatable, and after being cooked in the oven, it’s soft enough to blend. So save yourself some time =)

Me too I only cook my favorite sides when I make my thanksgiving dinner. Which are mash potato, stuffing, and gravy.
I just do it the cheap lazy vegan way.
This year for the stuffing I added to the instant stuffing mix was frozen mixed veggies and some cubed pre-fried by Phoenix Bean tofu, boiled it in water with a bullion cube. Once it came to a boil I slowly added the vegan instant stuffing mix. Then in a bowl I added mash potato, on top of that the tofu veggie stuffing I made, and poured on some pre-made vegan mushroom gravy. It was so warm and yummy all layered together.

I don’t use a mixer for my mashed potatoes. Horrid as it may sound to you, I use a hand masher, and then…use my ricer to get them smooth. To me, the hand mixer makes them slick, or even slimy. Just a suggestion for someone else to maybe try. I also use a whole stick of butter to make them creamy yes, butter, not margarine.
I still read all 3 of the Tightwad Gazette books each year. They help keep me on track (not that you don’t, but I was reading her work before you wrote the cookbook, “Not Just Beans”. I take them to the laundromat and read while the laundry is working.
Just a little tip for your mashed potatoes, heat up some milk in the microwave, and use warm milk, it keeps the potatoes warmer, and makes it creamier

In the US, we always had pumpkins specifically labeled “pie pumpkin” available in the store. Now that I’m living in Europe, I’m not sure what type of pumpkin to buy because the varieties are different here. What type of pumpkin do you recommend for this pie? Mentioning about the boxed potatoes, my mom’s parents used equal parts potato flakes & potato buds with heated milk & butter. My grandfather had a special pot he would beat the potatoes with a spoon. BEST mashed potatoes that aren’t real! Gravy was always made with flour & water in a special cup that I always had fun shaking when I was a kid.

FULL RECIPE
Ingredients
Jackfruit Turkey
2 (12 oz) cans of young jackfruit
1/2 cup vegan butter
1 teaspoon vegetable bouillon seasoning
1 teaspoon thyme
1 teaspoon sage
2 cups of water
Salt and pepper to taste
10-15 sheets of rice paper
INSTRUCTIONS
For marinade
Drain and rinse your jackfruit
Add butter, Bouillon seasoning,1 cup of boiling water and salt and pepper to taste.
Mix together and add some sprigs of thyme. Leave to marinate in the fridge overnight.
When fully basted pull off the sprigs of thyme and add them to the marinade. This will serve as the filling for your turkey.
To assemble the turkey wings.
Fill a shallow dish with water and place your rice paper in for 5 seconds on each side. Move quickly as the paper can be difficult to work with once wet.
Add rice paper directly to your greased cooking pan or into your air fryer and fill.
To make these look a little more like turkey wings I added a small skewer to the end to imitate a bone. But this is optional.
Fold rice paper over the top and then over the sides and wrap the remains around the base. If the paper is ripping just add another layer of rice paper over the top.
For the base of the turkey I used 5 pieces of rice paper layered with one in the middle and four layered around the base.
Add in the rest of your jackfruit and fold up each of the sides carefully. Add one layer of rice paper over top and fold into the sides. The flip over and add another sheet to the bottom.
Arrange pieces how you would like and add more of the basting marinate over the top. Bake in the airfryer at 390’ for 15 minutes. Or you can place in the oven on 425 degrees F for 20 minutes or until golden brown.
Transfer to a serving dish. Garnish with thyme and cranberries, smoother with mushroom gravy and enjoy. Find the mushroom gravy recipe here:
Green bean Casserole
Ingredients
1 can white beans
2 Tbsp vegan butter
2 cloves garlic (minced)
1/4 cup onions (diced)
salt and pepper to taste
4 cups of fresh green beans
2 cups mushrooms
1 cup fried onions
Instructions
Drain out the reserve from the white beans. Save this to use in the next peanut butter pie recipe.
Blend the white beans until smooth and set aside.
Add butter or olive oil to a cast iron skillet or large saucepan over medium heat. Add garlic and onion and cook for 3-4 minutes or until translucent.
Add about ¾ cups of cashew milk and flour. Slowly whisk in water then add the bean mixture and salt and pepper to taste.
Continue to stir, bring just to a boil, reduce heat to medium, stirring constantly, until gravy has thickened to desired consistency.
I am also adding in some sauteed mushrooms and onions but these are optional.
Add your fresh green beans to a baking dish and smother in gravy
Sprinkle on fried onion pieces
Place in the airfryer at 310F for 15 minutes. Or in the oven 350°F. for 25 minutes or until the bean mixture is hot and bubbling.
Peanut Butter Pie
Ingredients
1 12oz Tub of Creamy Salted Peanut Butter
1 14oz Can Coconut Cream (chilled overnight)
1 can 12oz aquafaba (optional)
1 cup Powdered (Confectioners) Sugar
1 tsb vanilla extract
1 cup Melted vegan chocolate
1 pie crust
Instructions
Poke holes in the bottom of your premade pie crust and bake according to package instructions.
Set in the freezer to chill while preparing pie filling.
In a blender add Aquafresh and blend until mixture forms small peaks. About 5 minutes.
Remove one can of coconut cream from the fridge and scoop the cream from the top. You can add the rest to melted chocolate pieces to make a chocolate ganache for the top of our pie.
Add one jar of creamy peanut,vanilla extract and powdered sugar to a blender and pulse until smooth.
Add the filling to your prepared pie crust, making sure it has cooled completely. Then move back into the freezer to set.
Top with whipped cream and melted chocolate and enjoy.
Brown Gravy
INGREDIENTS
1/4 cup + 1 tbsp. wheat flour
1 1/2 tsp. onion powder
1 tsp. garlic powder
1/4 tsp. rosemary
1/8 tsp. thyme
2 cups low sodium vegetable broth
2 tbsp. low sodium tamari or soy sauce
salt to taste
INSTRUCTIONS
Pre-heat medium sized sauce pan on medium high heat.
Add all dry ingredients to sauce pan and whisk for about 30 seconds.
Whisk in veggie broth and soy sauce until all ingredients are well combined.
Lower heat to medium and bring to a boil. Reduce heat once more to low, let simmer and whisk to thicken.
Remove gravy once it reaches desired consistency.

I agree with with the topic of kids working. My daughter started her first job when she was 17, she did so good and loved it. Then when she got ready to move out a few years back she was all saved up, bought a lot of her own necessities and was able to sign her first lease on her own merits. She has done so well for herself. So proud.
Hi, Jon! I tried this recipe with my grandmother and we absolutely loved it. We just had a little problem: the neck pumpkin (we’re in São Paulo, Brazil and that is our best pumpkin for desserts). But it got too watered after cooking so we added this non-flavored powder to make the filling closer to a pudim. What do you suggest to fix this next time? Thank you
I always thought the point of resting the pastry dough in the fridge was to let the gluten relax. If there’s no gluten in the dough, why is resting recommended?

All you really need is a gluten free pastry dough and the doors are open! So much you can be able to do! I actually have made a complete Thanksgiving feast gluten free! Yes, even the stuffing (dressing?). Japanese Milk bread and corn bread works WONDERS (gluten free version of course!)

That’s exactly what my son is doing my daughter-in-law is an only child and so when my son and daughter-in-law are keeping an eye out for her father’s so anytime they want to have property and have him live on the same property. The book boundaries is amazing.

This is such a cute idea! I might try this for either thanksgiving or Christmas and use hot/bbq sauce to give the skin a nice crispiness and smoky taste. Ignore the negative comments it looks great!

We are not dairy free but I have been making mashed potatoes with broth for years. Sometimes with milk, sometimes without depending on what’s in my fridge

Lumpy gravy comes from pouring in the too much flour mixture too quickly at the same time. Poor in parts of the mixture at a time while whisking the pan. I love how You two work together in the kitchen.

Salty Crew. Can’t choose a favourite. They all looked amazing. I really liked how simple that cranberry sauce recipe was. I feel like those sides would all go well on a sandwich. I think for a main dish instead of having a turkey or tofurkey I would just get a delicious loaf of bread, slice it, and put it in the center. Carbs mic drop.

Old family make ahead recipe; 5 lb. potatoes cubed and boiled mixed with 1 8oz cream cheese and 1 stick butter (add some of the potato water if too dry). Make a day or two ahead and just reheat in casserole dish in oven.
For the turkey, you showed liquid smoke, but liquid smoke is not listed on the ingredient list. Is it included?

Awww, such sweet people! Did you notice his shirt was freshly pressed and she has the house clean and tidy but very cozy and welcoming? Thanksgiving AM, I am typically running around in a house dress, looking homeless and yeah. Before everyone arrives I get it together, hurry and go over the bathroom one more time, vacuum, DH sees to the farm chores and such. Very fun to see people that really do seem to have it together from the get-go!
Just a comment for Jill (and Tawra too)… I understand that it would be a BIG undertaking to write a devotional book especially since you have health issues…but you have been such an inspiration on your videos you made a couple of years ago! I have been watching whenever I can…I missed them when they first came out. That took a lot of work I know. I think I have learned more from your videos about those difficult years than I have in many Bible studies I have attended. Thanks so much for your insights.

Loved the show I was watching on YouTube from my I phone and I can not figure out how to comment while the show is live.
