Creamy Pumpkin Soup Recipe

Ingredients 1 cup chopped onion 2 tablespoons butter, melted 2 (14.5 ounce) cans chicken broth 1 (15 ounce) can pumpkin puree 1 teaspoon salt ¼ teaspoon ground cinnamon ⅛ teaspoon ground ginger ⅛ teaspoon ground black pepper 1 cup heavy whipping cream.Directions. In a large saucepan, saute onion in butter until tender. Add the broth, potatoes and pumpkin; cook until the potatoes are tender, about 15 minutes.
Add in pumpkin puree, chicken stock, and spices. Whisk in pumpkin puree, chicken stock, cinnamon, cloves, salt, and brown sugar. Bring the mixture.Heat oven to 400° F. On a rimmed baking sheet, toss the pumpkin with 3 tablespoons of the oil, ½ teaspoon salt, and ¼ teaspoon pepper.
Roast, tossing once, until tender, 20 to 25 minutes.With exceptional flavor and creamy texture, this soup (made with soymilk), will please tastebuds. Plus, the pumpkin makes it pretty!1. Heat a large sauce pot over medium heat and add in the olive oil. Add the onions and garlic and sauté until translucent, about 5 minutes.
2.In a 4-qt saucepan, saute the onions in butter until transparent. Add all the other ingredients, except the cream.
Bring to a simmer and cook, stirring occasionally, until.Add onion, garlic and sugar; cook for 1 to 2 minutes or until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low; cook, stirring occasionally, for 15 minutes.
Stir in pumpkin, evaporated milk and cinnamon.Step 1 Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until soft, about 5 minutes. Add curry powder, salt, and cinnamon to the onion; cook and stir 1 to 2 minutes.Add a little oil to a pan and then add the pumpkin, garlic and onion.
Gently cook for 5 minutes, stirring every minute. Add the rest of the ingredients and simmer for 10 minutes until the pumpkin has softened. Add to a blender and blend until smooth.In a heavy soup pot or Dutch oven over medium heat, heat oil. Add onion and garlic and cook until golden.
Meanwhile, halve, peel, and scrape out seeds of the pumpkin.Brush pumpkin quarters and sweet potato with a little olive oil and place onto a baking sheet lined with parchment paper. Roast for about 40 minutes or so, until the flesh is soft. Heat the coconut oil in a large pot over medium heat and roast the onion for about 6-8 minutes until translucent.This keto pumpkin soup starts out with common pantry ingredients — chicken stock and pumpkin puree.
A generous splash of heavy cream makes it super creamy. I like to add garlic, fresh thyme, salt, and pepper for extra flavor. If you like, you can add a pinch of cayenne pepper for a little heat.
Add the pumpkin flesh, cinnamon, nutmeg, cloves, cayenne pepper (if using), and a few twists of freshly ground black pepper. Use your stirring spoon to break up the pumpkin a bit. Pour in the broth.
Bring the mixture to a boil, then reduce heat and simmer for about 15.Preheat the oven to 360F/180C and line a baking tray with parchment paper. Place the pumpkin and garlic cloves in, season with salt and pepper, and drizzle 1 tablespoon of oil, then, with your hands, mix to coat.
Roast in the preheated oven for 25-30 minutes, or until the pumpkin is fork tender.

if you don’t have a conventional oven (like i dont), then put the pumpkin in the microwave oven for 15 minutes on high, and the end result is the same, because the longer heating time evaporates pumpkin’s extra water and concentrates the flavor. you can also skip the killed animal juice by adding vegetable broth, or more half and half to the mix while cooking it-

I tried this with chicken stock and wasn’t the biggest fan but just made it with vegetable stocks and much prefer the taste. I dont think chicken went well with the pumpkin taste.
Very tasty. I fry the onion in olive oil instead of butter (healthier) and add 1 tsp of cumin and 3 tsp of vegeta (vegetables stock) when I don’t have chicken stock. Thank you for sharing the video.

I made this awesome soup. But I added something to it: I topped it with crispy fried high-protein tofu. It was like tofu french fries, in lieu of crutons, tossed them with chili powder and salt. Then your amazing soup became a meal!

That is a butternut squash not a pumpkin. Pumpkins are round and a march deeper orange color.

What you used there is called butternut squash in the US but I think any squash that is pumpkin-like should do the job just fine. Loving this recipe!

One question though, here in the UK the only fresh pumpkins I’ve tried to cook are the ones available during the Halloween period, they look quite different to the one in your video which more resembles a round version of a butternut squash, the ones I’ve tried have far less flesh and are more watery in texture. Are they the wrong variety to use for this recipe? Thank you x

Edit: I realized what I did wrong. The video didn’t specify what kind of stock I was supposed to use, so I used chicken stock. Clicking on the printable recipe, found out I’m supposed to use vegetable stock.
