Can I simply wash off cottonseed oil on canned oysters and be just fine?
RAPESEED OIL IS poison to the body and another name thats used to conceal it is….CANOLA. OIL….RESEARCH RAPESEED….ITS IN ALMOST ALL PEANUT BUTTER AND WE FEED IT TO THE. ELDERLY. AND OUR CHILDREN!!!!!!!!!!!!!!!!!!!!
Thank you very much for this concise video about oils. Tallow is from cattle. Is it safe because we don’t know if the lard is form cattle that have been treated with medications or fed GMO? Is that a pertinent question? I eat the eggs, fed non GMO grain. I splurge on organic veggies. (Why not? I don’t drink or smoke. I must spend my money on something!-a little joke.). I’m confused about what appears to be oils versus lard. The lard at my grocer’s has no statement about added hormones, etc. I’m aware of the eat meat diet versus the Mediterian diet of small amounts of meat.
The only thing I use canola oil for is to pour into small cans & place in the garden to trap earwigs!

I don’t know if animal fats would be any better at lubricating the skin or holding onto moisture than vegetable oils but they may provide some other benefit.
I think I am deficient in linoleic acid due to my continuous use of avocados, avocado oil and olive oil as my primary dietary fat source. I think this lack of this omega-6 fat has been a huge contributor to my gut issues. I decided to incorporate organic grape seed oil into my diet starting a few days ago and I’m already feeling better.

Read the labels! (I know this one is squarely on me) For the last few years I was using “olive oil” for and on everything, low heat cooking, salad dressing, and just a topping for everything: Meat, fish, veg, quinoa. I’m a healthy person with an excellent diet and maintain a healthy weight for my height (6’1 @ 175 lbs). However, my blood triglycerides we’re always high (around 200 mg/dL) and no matter my died and exercise I could not get them down. At my last physical my Dr. strongly recommended going on a statin. I told him no, let’s retest in 6 months and see if I can make some diet/lifestyle changes.
I got home and was both frustrated and depressed. I exercise regularly: cardio and yoga and kettle bell circuits with long weekend bike rides. I drink a minimum of 100 ounces (four 25oz bottles) of water a day + tea and food based water to meet hydration goals) I don’t smoke, I occasionally have a beer or a glass of scotch… Very occasionally, I don’t eat processed foods. I don’t eat junk food (ok I live in California so I do have the occasional taco Tuesday bender). I exercise regularly, and my diet consists primarily of fresh fruits and vegetables and lean meats with no wheat and very few deliberate carbs (no one can ever just give a pasta completely). What could I do?
I started looking at everything in the fridge and pantry and finally grabbed my big dark green bottle of olive oil. Now this brand of olive oil with the fancy Italian name I’ve been using for 10 years. Figures prominently on the shelf of my market in the olive oil section and comes in a nice dark green bottle with nothing but olives on the label and in big letters proudly states “extra virgin olive oil cold press”… then I noticed it! In very fine print above the very large letters of “extra-virgin olive oil cold press” “premium quality” were the words “canola oil and.l Turns out my dark green bottle of extra virgin olive oil cold press premium quality was 90% canola oil blend it with 10% olive oil. I have been poisoning myself for a decade!
Needless to say those moderately expensive bottles took an express trip to the trash. And I walked to Barrons and got some new Nice dark green bottles of label inspected 100% pure extra-virgin olive oil first press cold press… That will now be the staple in my pantry.
I’m on a fast today and tomorrow (I intermittently fast at least two times a week but for the next two days I’m on a hard water only fast). I will then go back on my carefully researched highly organized and well constructed diet but this time without smothering everything in canola oil poison. Looking forward now to my blood test in September.

I just had a food sensitivity test done and turns out coconut is on the list. So I am now looking for a new oil since I usually cook with coconut oil. I heard at one point that olive oil cooked causes it to oxidize. Is olive oil only good if it’s used cold? Or is it safe to cook with?

Spanish Extra Virgin olive oil is sold straight from the olive press in weekly open air markets all across S. Spain. Olive oil is treated lthe same as wine. there are several well known varieties if olives such as Picual & Hojiblanca, just to name two. In the Cities you can always find a Gourmet food store with a big range of oils. Everyone uses olive oil for cooking & on toast instead of butter because Spain is a low volume Dairy producer. …….and the wines are superb.

Crisco cooking oil was Originally formulated by German Scientists as a smokeless oil for their submarines. lol Procter & Gamble bought the formula and turn it into a cooking oil and donated money to the American Heart Association to indorse it as a healthier choice over cooking fats. the most surprising part of the story was Nina doesnt believe in danger of high fructose sugar. Yeah sucrose (ur everyday sugar) will break into glucose and fructose and some part of glucose will further metabolized as fructose, fructose are junk that burden the liver. But nowadays there are mostly fructose food, which is sweet but doesnt increase ur sugar blood level, since fructose has no reason going into blood circulation (its junk), and glycemic index solely measure the glucose level on ur blood, so they are marketed as low or no sugar sweetened food or beverages. If this presentation was on 2015 or earlier I would not be so surprised but its after those dr robert lustig and dr jason fung presentations, wtf.

I went to the ER Saturday night and they checked out my heart. Every single test came out normal; it’s another issue causing the pain, nothing to do with the cardiovascular system. And yet they still printed info. off their system or the internet and gave it to me. It was the same old advice: lots of fruitsandvegetables (as if they’re the same thing), lots of whole grains, polyunsaturated seed oils. Yeah, no. Fortunately my doctor agrees with low carb.

Butter increases cholesterol but also medium length triglycerides. Read the 1967 study by Rosenman on the effect of lipids and IHD. Both triglycerides and Cholesterol ratio are a factor.

The ultimate problem with the 7 country study was that they studied 22 countries and cherry-picked the seven that best fit his hypothesis. He was a corrupt fraud not a decent guy who made a mistake or two.

the main benefit of eating a high fat diet is the reduction in appetite. fats satisfy more quickly and with less far less volume than carbs. i lost 25 lbs in 2 months on a keto diet. and i feel much better physically and mentally.
I live in Trinidad , there was a chart that showed a jump in deaths by heart disease by 40% in 1985-6. The chart does not exist anymore. I did download it.
This is really good work however, fructose not glucose is the main carbohydrate weight adjuster. High Fructose Corn Syrup in most of our food and liver chemistry is what’s making us fat and malnourished.

The story is a lot more complicated.
1. Animal fat is far from 100% pure satured fatty acids, but only about 40%., the rest is mostly mono-unsaturated and omega-6-PUFA. Not only has human nutrition changed, but also animal nutrition for the meat industry. Animals that eat crap tend to have a crappy fatty acid composition, which is why more animal fat is not the answer for a better omega-6/3 ratio.
2. Increasing animal product consumption in a way that is health-wise acceptable at least requires organic grass-fed animals. For the larger picture of entire countries or even the world’s population this is by no means anywhere close to being realistic, sustainable or affordable. Although those aspects were partially mentioned, there is no solution to this.
3. Talking about diabetes, insulin-resistance and weight-gain effects of carbohydrates/insulin response it should be mentioned that not only carbohydrates provoke insulin spikes, but also certain amino acids, especially leucin, which is high in animal protein.
4. People get the wrong message because nutrition is much more than just energy supply. Some people might understand this as a free pass for “from now only only chicken nuggest deep-fried in lard”. By the way, I feel that the tunnel-view focus on lipids is missing out on other important problematic aspects like e.g. advanced glycation endproducts (AGE) and advanced lipoxidation endproducts (ALE), whose main exogenous sources are meat and dairy. Nobody can seriously deny the value of vegetables. The problem with animal products isn’t just about what they’re made of, but also and mostly about what’s missing, i.e. fiber and an endless variety of phytonutrients. Meat is actually very nutrient-poor. Who thinks some amino acids, fat, iron and B12 already make a good argument for a healthy food has a pretty naive idea about the complexity of biochemistry. Apart from vit.B12 plants have all we need and that’s good for us, and thats thousands(!) of different benefitial molecules. And anybody who believes that the amino acid profile is too incomplete is invited to name how many people he/she knows with Morbus Kwashiorkor (yes, that’s what clinical protein deficiency is called).
5. The shown correlation between obesity and the appearance of the nutritional recommandations guidelines that we know as the pyramid of a modern western diet can also be explained by the fact that at the same time we had a change from real food to more and more highly industrially processed food in every(!) sense, not just oils and carbs.
6. I agree that the mentioned benefits of eating less carbs regarding obesity and diabetes risk are supported by pretty much all existing evidence. But maybe eating less carbs isn’t the only possible answer: the same effect is achievable by eating less often (=intermittent fasting), eating more complex carbohydrates, avoiding table sugar and adding more fiber to the diet.
7. Yes, fat and protein are more satiating than carbs, but what’s still far more satiating is volume, which is why it’s hard to overeat on water-rich low caloric density vegetables. The “sellery example” is intuitively convincing but not supported by actual evidence. For example people who eat a salad prior to eating their main dish “ad libitum” have been shown to eat less total calories despite the additional salad.
8. It’s true that sugar consumption (and also high fructose corn syrup consumption) is on a decline since many years now, while obesity is still on a rise. But talking about correlations: also total(!) meat consumption is still on a steep rise that started in the 1940s! The demonstrated numbers are misleading: yes, pork and beef consumption are going down, but simply because they have been more than replaced by chicken/poultry. This seems conflicting with argument made (and why that graphic was shown) that carbs as the main cause of the obesity crisis.
I think here is the real answer for the problem: instead of going low-carb and replacing all that vegetable oil (and the omega-6-FAs and trans-fats that come along) by more animal fat, we might as well cut down on animal products AND vegetable oils high in omega-6-PUFA (meaning that “extra virgin” flaxseed, hempseed and walnut oil are among the few acceptable exeptions), eat less often and go back to unprocessed REAL food that doesn’t need an ingredients list. CATA is a bunch of good guys. But they embraced the idea of very high meat diets. These ideas are backed by meat and dairy. Try this: eat mostly large amounts of fresh berries, fruits and vegetables and beans and steel cut oats with some protein supplementation, a full range of vitamins and minerals->things like flaxseed oil and fish oil for omega 3->ideally 25%of all oils taken during the day. Once your body pulls out of the insulin resistance mode carbohydrates will not create harmful sugar spikes. Add a good 1 to 2 tablespoons of coconut oil daily. Add in olive oil/peanut oillimit overall quantities tightly. Expressly NO rapeseed or canola oil. Severely limit fat intake. Limit food to a 4 to 6 hour eating window. That said, stop processed sugar consumption, learn about stevia extract and powdersvery good it protects good probiotic flora and destroys the bad. Listening to the Q&A now and a woman asked about cholesterol: what people need to know abut LDL is that there are TWO types, one is considered benign and other causes arterial plaque. Pattern A is the good one and it is created by unoxidized fat being enveloped in Low Density Lipoprotein. Critical note: saturated fat doesn’t oxidize. That is why animal fat has been used for thousands of years to preserve food that is kept underneath it (foodies, see rillettes) without the need of refrigeration or of preservatives. That is why it is called saturated oxygen can’t bind to it or get through it. For veggie based folks you need to look for coconut fat or palm fat the kind that is solid at room temp. The kinds of fats that do oxidize are monoUNsaturated and polyUNsaturated and both of those come from plants. If you keep them for too long the will naturally go rancid through oxidation. If you heat them up the process happens much faster. These fats create Pattern B LDL and this is the stuff you don’t want in your system. I know Nina goes over the differences of lipids in the book but I don’t think there is mention of Pattern A LDL and Pattern B LDL. Most doctors, at least the ones I have talked with, have no clue there are two pattern types to LDL. Knowing which one you have pumping through your system is critical.
Next Q is about HFCS fructose is VERY different than glucose in that it isn’t registered by insulin as blood sugar. Fructose goes straight to the liver in order to create triglycerides fat to be deposited in adipose tissue. It is the sweet part of what we think sugar is (ref: Gary Taubes on this). And the real issue is that, as the man asking about it comments, it is everywhere. It is nature’s way of letting animals put on fat easily, that is why sucrose comes in a bundle to do just that and seasonally at nature intended it to be. But now, but to man’s messing with things it can be readily had anytime anywhere. Try getting people off fructose. They just don’t want to do it. Note: grains, nuts, legumes and seeds were nerve meant for animals to consume and these little packages contain a lot of glucose as well as toxins to ward off unwary animals trying to eat them. Aside from nuts which have been bred for millennia to be tolerable to eat by humans, and some seeds which can be consumed in their natural form (like sesame and chia), grains and legumes are toxic and inedible unless they are cooked which reduces the toxicity.
Next Q is about what drives appetite. Nina nails the next question but in a round about way. What drives appetite is NUTRITION and ENERGY, and the problem with what people eat these days is the it is calorie rich but nutritionally lacking: specifically, high in carbs, fruits and vegetables and low in meat (red meat has the entire spectrum of vitamins and minerals humans need) and low in saturated fat (which has twice the amount of caloric value to it than glucose AND is used all over the body for things other than energy. Glucose can ONLY be burned off for energy). The issue these days is we have been told not to eat the most nutritionally dense food possible (red meat) and not to eat the most energy dense thing possible (fat). And the guy asking questions mentions SALT; it is necessary for every living thing on the planet and we are told to avoid it.Excess dietary salt gets dumped (as does excess fat IF you are not in glycolysis!)
Q about Fast Food and if it is the cause for obesity and diabetes it doesn’t matter what the form of the food is… if it contains fructose and glucose it will head you in the direction of obesity and diabetes. Your body doesn’t care if you are ingesting white sugar, raw sugar, honey or agave… once it is in your body your body will react to it. It is the same with your food. Q about veganism and vegetarianism when agriculture started 13,000 years ago humans began to systematically destroy the planet. Lots of stuff is being done now to sustainably get animals back onto the land so it can recover, and still have our plants to eat (if you eat them). When the study said healthier when consuming saturated fats, was that veg. sat or animal fats? Have heard of studies of worse with animal protein/fats and wonder if cause was animals health and organic might have made a difference. We are the only animals that eat a “balanced” diet. Lions eat meat, horses eat hay. giraffs eat leaves, cows ear grass.. their whole lives. Where did the notion of “balanced”come from? (I’m just sayin)
At least she’s focused on the fact that politics (and more importantly vested, monied interest) are involved in dietary recommendations. However, she ignores critical studies and make negative generalizations about things that do have OTHER peer reviewed support, such as while food plant based diet, the fact that there ARE huge amounts of antibiotics and hormones in our commercial dairy (based on NUMEROUS) peer reviewed studies. And on it goes. Thankfully, the sheer volume of peer reviewed studies are coming, and they do not support many of her assertions.
That is the definition of “Science”. If anything cannot be repeated or replicated it is unscientific.
There is intellectual property rights, copyrights and all those other things for the specific reasons of science. If someone gets a hold of your “recipe”, they can easily replicate that phone, that super car, that meal, that machine and all of that is science. Companies make you sign an NDA for the simple reason of protecting their “company secrets” which are basically scientific knowledge.
The source code that runs on my machine can run on any other machine with the right environment or software installed, that is science. But anything you have to say that cannot be observed practically or repeated is nonsense and unscientific.

There are many logic fallacies in this presentation, and Teicholz is presenting a pretty basic lack of nutritional knowledge when stating that you won’t be able to overeat on pork chops because of the saturated fat, whilst the opposite is true for cookies, popcorn and potato chips:
Pork chops 43% calories from fat of which 35% is saturated.
Popcorn (microwave) 60% calories from fat of which 22% is saturated
Potato crisps 55% calories from fat of which 10% is saturated
Chocolate chip cookies made with butter 45% calories from fat of which 60% is saturated.
(This is all % of calories from fat per 100g of each product)
Most of those contain even more saturated fat per 100g than pork chops. She also states how pasta doesn’t contain either folate, iron, selenium, zink and some B-vitamins. Which it does, 1 cup gives you 70-80% of your daily selenium-requirement. A quick search also shows how there is in fact hormones in milk.
I sat through this whole talk, and ended up becoming even more sure that Teicholz knows as much about nutrition, as I do about journalism.

I don’t buy this theory. I know some Buddhhist monks lived to 90 even over 100 years old. They consumed vagetable oil all their lives. They didnt have heart disease or whatsoever. I think oil and sugar combination is the culpit. The following is an excerpt from a Harvard Medical School study report regarding omega-6:
It turns out that the body converts very little linolenic acid into arachidonic acid, even when linolenic acid is abundant in the diet. The AHA reviewers found that eating more omega-6 fats didn’t rev up inflammation. Instead, eating more omega-6 fats either reduced markers of inflammation or left them unchanged. Many studies showed that rates of heart disease went down as consumption of omega-6 fats went up. And a meta-analysis of six randomized trials found that replacing saturated fat with omega-6 fats reduced the risk of heart attacks and other coronary events by 24%. A separate report published in the American Journal of Clinical Nutrition that pooled the results of 11 large cohorts showed that replacing saturated fats with polyunsaturated fats (including omega-6 and omega-3 fats) reduced heart disease rates more than did replacing them with monounsaturated fats or carbohydrates.

Knobbe makes one very big fatal mistake in this lecture. He, along with the majority of nutritionists fail to differentiate between adulterated Linoleic acid vs. unadulterated linoleic acid oils! All factory treated vegetable oils are adulterated via hydrogenation and other processes designed to prolong shelf life. These factory oils are toxic to the human body and become even more toxic when heated. The unadulterated seed oils are cold-pressed, carefully refrigerated oils that can be used for a few weeks before going bad. These cold-pressed “health” oils contain the omega-6 linoleic acid that has not been oxidized and that are needed for a healthy body. Let’s just revert to some logic here! The omega-6s are essential fatty acids required by the body which cannot make them on their own. Omit the Omega-6s from the body and disease will quickly ensue. So in short, consume the right types of omega-6 oils, particularly do not charcterize them in with factory oils and do not demonize them at your own peril.
One last note, he says that all omega-6s are pro-oxidative. Not true! It is true that if one consumes adulterated omega-6 oils which are factory oxidadated before consumption to prolong shelf life, naturally, they will continue to be oxidative once inside the body producing the bad effects. On the other hand, consume a healthy fresh omega-6 oil that has been treated properly before consumption and they will be protected in the body, even deep in the cardiolipin by naturally occurring anti-oxidants before they can ever turn pro-oxidative!

I thnk this is why both keto and veganism appear to work, even though they are very different. Going away from processed good ie oils and high fructose corn syrup will resolve most health issues people have.
Do meat, butter, milk etc from corn/grain-fed animals have little omega 3 and mostly omega 6? These are already expensive but the free-range and grass fed ones are double, triple and even quadruple the price (and frankly who knows if the claims of grass-fed are true).
Is there no over-the-counter vitamin or supplement that would bind to linoleic acid in fat so it can be eliminated thru the colon or kidneys or broken down by the liver and then eliminated???

Thank Doc. I have been Keto for x2 tears now but want to cut my omega 6 even more. I currently use egg and olive oil to make my mayo. Should I be using a mix if flax, avocado and olive oil? Both my husband and I have been diagnosed with AMD 8 years ago but thus year after seeing 3 opticians who supported that diagnosis, I was told in April this year that I don’t have any symptoms of it to speak of. My husband nor I am overweight or have any other health conditions. His AMD is more advanced but hasn’t changed in the last 4 years. I follow Ray Peat’s work regularly so this is not really surprising to me. But even for a new person, this should be fairly easy to follow. Just from a biological perspective, no mammalian organism has unsaturated fatty acids to any significant degree in their adipose tissues. Whenever a mammal is eating another mammal, they are getting mostly a mixture of saturated fat. When a mammal eats carbohydrate, the glucose enters the fatty acid conversion cycle and produces saturated fat. So whether you eat sugar or fat, a human’s normal diet is always highly saturated.
This fits so incredibly well with Thomas Seyfrieds work, and I am convinced that man deserves a nobel prize. Well done and well researched.

Simplistic analysis, there’s some truth here, but layers of errors also. For example, cancer rates are high in non developed countries also, and these chronic diseases are occurring become we aren’t dying from infections young anymore. This video is flawed. People lived shorter lives in general, before the 1900’s. At 45 years old, you were already dead. Because today we live longer, we get these diseases. Those people 100 years ago, would also get our diseases today, if they would have lived that long. The medical field today, treats many types of diseases, whereas before you were left to die. My grand parents got cancer and diabetes. They ate all saturated fats. No corn, or soybean oils.

Acrolein is produced when fries (potatoes) are heated too high of a temperature. The oil is not the problem. It’s the way it is used. You should not eat too many fries because of this.

I really appreciated this video. In 1980s my husband had cancer, and we sought to find healthier eating habits. We switched to extra virgin olive oil, already used only butter, and did not tend to eat packaged snacks. We did eat quite a bit of high quality beef, and began to increase our fish intake. I threw out the Crisco, and we had far less pie crust, but some. The cancer recurred, and he died in 2007, so I believe our dietary changes helped him to overcome cancer for 22 years. A friend of his had a heart stint, was a hearty healthy person for the main, but his doctor insisted that he switch to margarine, though his wife felt it was a big mistake. He continued with problems, died some years later. I now take no prescriptions, no pain pills, and with sleep and supplements believe I have overcome fibromyalgia, widespread pain, severe headaches (no doubt migraine but no migraine med worked), sore joints etc. I have visual aura without pain if I eat MSG, soy (that is now in all processed it seems), or if I eat nitrates, high tyrosine foods (includes certain items, aged cheeses, fermented foods, overripe fruits, food stored too long, also caffeine if overmuch eating smaller amounts of these usually is okay, some I must avoid). I was past 80 when the aura without headache first occurred, my ophthalmologist worked me in next morning, and it turned out he had recently suffered from the same visual sparkling stars and traced it to apple cider.
Linking disease trends to diet change trends is always tricky. No coming back in this presentation is sugar consumption. One can also link these diseases to sugar increase or other trends. The beginning of the presentation is hence rather speculative. The link with unsaturated fats is uncommon, though, therefore interesting. With far extending consequences of thoughts about “healthy food”. And the biochemical backing in the second half is quite convincing.
One variable that hasn’t been considered is the life expectancy in the 1880s vs today (ie. an older population and higher chronic disease rates). Not disputing the main conclusion of this video. Another consideration is the divergence of the lines near the very end where heart disease decreases despite higher PUFA consumption (less smoking, less meat?).

So true, I was a victim to hydrogenated oils last year. I did not put it together that it can say 0 grams of trans fat, but can have trans fat in it. Now I make sure to avoid hydrogenated oils completely. Great video.
