I just watched the Aaron Sanchez version before this, and he was like, “Don’t seed the tomato! That’s a gringado move.” Also if your guac turns brown u didn’t put enough acid in it. I always do lime and maybe a half tsp of white vinegar. When there isn’t enough brightness in it it has that cloying stuck to your mouth taste and feel of peanut butter or bananas, which I hate.

For me:
Dice half of a small onion and put in a bowl with warm water
3 avocados in, tablespoon and a half of lime juice smash
Add a tomato without seed part in cubes
Add drained onion from earlier
+chopped cilantro
Add half teaspoon of cumin and same amount salt
Stir and done
Why is every guacamole recipe I find a white person or someone cutting clay grenades?
I prefer no onion and no Tobasco. Id also rather buy an avocado that wont be ripe for a couple of days than buy one that feels ripe at the store and risk it being too brown on the inside when you get home.

I learned to make mine the way the Mexican grocery store a few blocks down has been making it for many years. Avocado, a little seeded, drained fresh ripe tomato, a little finely minced onion, some fresh ground pepper, salt, a little garlic powder, and some fresh lime juice, that’s all there is to it, it taste fresh and delicious that way. They don’t make it spicy (I love spicy foods), in fact it’s one of the few things they make that isn’t hot, probably too much hot would over power the avocados.
A clear sealable piping bag with a reusable cap on the tip works a lot better. You just need to make sure you get all the air out which is easier to do if the avocados are a little warm before you cut them open, which is easy to do by running warm water over them for a little while, just never hot water. The last time I did this I think it lasted about a week.

That corn looks great! Two “secrets”……1) if the guac has to be exposed to air, squeeze a thorough coating of lemon or lime juice over the surface, this will halt most of the oxidation (I use lemon in my guac, I’m not a lime fan) and, 2) add 1 T. Helmann’s mayo to any of your recipes, it gives the flavor even more boost. Just try it and decide for yourself…….and, as always, seeing that beautiful hair and smile is a treat in itself anytime!
I recommend cherry tomatoes instead of Roman tomatoes. Add olive oil as well. For correction: Lemon juice helps the guacamole not to brown, it’s not the air. You can leave it uncovered for long as long as it’s in the chiller with lemon juice it won’t brown.

It’d probably also help to vacuum seal it with oxygen absorber but adding water to it seems more simple.

I just discovered your channel, and you now have over 1 million subscribers. And I can see why! I was hooked after I watched your video on how to make different levels of hardboiled eggs. I love how detailed you are in your research and testing, but you don’t bore the viewer with a long drawn out background about it either. You have such great tips, and you know the science behind the foods you are using. I think the world was craving a food channel host like you!
Although you touched on it, I think it should be talked about more. You said no Florida avos, which may be true but I am not familiar with them. Then you said use “Hass” which is a good idea if they are ripened properly. What I will add is there are many more varieties that are perfect for this dish and many that are not. What you want to avoid is watery or stringy avos. The best ones are the smooth and creamy, almost chalky ones such as Sharwill, Linda, Yamagata and Kahalu (and Hass). Also, simple is best, don’t use too many weird ingredients. I have heard of people using Worcestershire, ketchup and below, cream cheese. This will ruin your guac. Use ripe, quality variety avos, a little bit of lime juice, sweet white onion, green onion, cilantro, tomato flesh (not the seeds or pulp), one finely diced raw garlic clove, salt and pepper. Done!

Lime juice & keep a pit in it. Then put plastic wrap over the top. Press out as much air as possible. Works every time! Watch out though, I forgot to take one out, it was hiding, before I served it, & I had a ditzy friend of mine at a party & she was complimenting me on what delicious guac I make & what a great idea it was to put potatoes in my guac & she had it on her plate ready to eat it! I asked her if she noticed how there was only one potato in there & how hard it is? Lol! We still laugh about it over 15 years later!

I like to cook my onions a bit, used pickled jalapeños, red, yellow, or orange bell pepper, sometimes I’ll boil a tomato and soak it in ice water to release the skin, take out their seeds and wash them, I use a mix of cilantro and coriander (cilantro seeds), half a juiced lemon, some cumin, salt, and pepper. Finally I do the avocados last so they don’t oxygize as quickly, and done.

I cringe when I see people using avocados with green skin. Just find one with black skin and decently soft and you’re good. And I think you guys are over thinking this
To make this even better, mash everything but the avocado and tomato in a bowl with a fork. This helps release juices and it makes the flavor so much better. It will also let you keep the lime out. Guacamole should never have lime in it. Add the avocado and mash, then fold in tomato. If you use the lime because you want to reduce browning, just put in the pit. Guac should be eaten quickly, so if you can’t eat all of this within a few hours, just make less.
I just use avocados, salt (though I don’t use a lot because I usually add black olives, not in the guacamole itself) and some black pepper. Although I like it with onions, I’m not a huge fan of the tomatoes some people add. I think I’m gonna leave ‘my’ guacamole recipe as is, I like it best this way.

You guys ever thing of anyone else besides yourself, Mashed? Yall may love chunky guac but what about those who love silky smooth guac. Would a food processor not then be the idea tool and NOT the back of a fork? It’d be much cooler if these videos played out like recipes instead of the video playing out patronizing and it being the right way of doing it.

I make guacamole almost every week because my kids love carne asada. But I use red onions,cilantro, tomato,Serrano chili. And I squeeze a half a lemon but no garlic I never heard of that ingredient before I will try it next time
Too much salt is even worse than not enough. You can always add some salt or hot sauce when eating. People like different amounts, so it’s better to let the end-user decide.
Of course you need some salt, but I would under-salt.
The commercial stuff is usually so oversalted it’s inedible for that reason alone.
(Of course, there is nothing like the fresh stuff.)
I found that restaurants the make it tableside always oversalt. And if you using chips, they have their own salt.
As far as prices go, they vary a lot based on weather, etc. Sometimes they are so cheap they make potatoes look expensive.
As a mexican i approve everything but the lack of spice, jalapeño or chile serrano will do.
To make a good guac, you always should all garlic powder, and instead of tomatoes, a freshly made salsa is a better supplement! Touches like these make guac perfect

No you have put a couple of pits in the guac it won’t turn brown a least for a while diced onions tomatoes a little garlic cilantro lime juice salt and haas avocados pronounced hoss 85 percent of these avocados come from San Diego ca and are the best on the planet I won’t touch any other the ones from Florida and Peru are to green over sized and flavorless Also if you like heat jalapeños or Serrano peppers best guac recipe

Shred some fresh cilantro and toss it in. Dice some white onion and put it in.
