I couldn’t fathom putting in 2 cups of sugar that seemed insane so I put in a 3/4 cup and they turned out delicious! also chopped up some chocolate and walnuts and sprinkled them on top before baking which was really good

Just made these brownies. My batter turned out more thick than yours did? I just slowly added more water while i mixed it until i got the right consistency. Hopefully they turn out great!! Loved the fact that i could lick the spoon tho bc vegan!!!!!!

Ingredients
1/2 cup (2oz/57g) almond flour
1/3 cup (1 1/3oz/37g) cocoa powder
1/2 teaspoon baking soda
2/3 cup (4oz/115g) sugar (coconut or brown)
1/2 teaspoon salt
1/2 cup (3oz/85g) chocolate, roughly chopped
1/4 cup (1oz/28g) coconut oil (or vegetable oil)
1/3 cup (2 1/2oz/71g) creamy unsalted almond butter
1/4 cup (1oz/28g) maple syrup
1 teaspoon vanilla extract
2 flax eggs: 2 tablespoons ground flax mixed with 5 tablespoons water, mixture needs to sit for 15 minutes
1/3 cup (2oz/57g) chocolate, roughly chopped
Instructions
First prepare the flax eggs by combining the ground flax with water. Allow to sit for 15 mins while preparing the rest of the batter.
Preheat your oven to 350oF (180oC) and line an 8×8 inch square pan with parchment paper.
In a large bowl combine the almond flour, sugar, cocoa powder, baking soda and salt, set aside.
In a medium microwave safe blow melt the chopped chocolate. Once melted add in the almond butter and stir to combine.
Allow to cool slightly then stir in the coconut oil, then the maple syrup, vanilla and flax eggs and whisk until evenly combined.
Whisk the dry mixture into the wet until just combined (be careful not to over mix). Then fold in the chopped chocolate.
Transfer the batter to the lined baking pan and bake for 20-25 minutes or until just set in the center.
Allow to cool completely to room temp before cutting into squares.
Store covered in the refrigerator for up to 4 days or freeze and thaw for another time.

* If you wish to make a paleo version with eggs, use 1 egg plus one egg-yolk at room temp and follow the same directions

These are so good on the first day and even better on the second day! I didnt have almond butter so i used peanut butter instead also you really dont have to use as much chocolate i used half of the amount they used and it was perfect! I think next time I’ll use different chocolate rather than the milk chocolate/peanut butter baking chips I had on hand. I’d also reduce the amount of coconut sugar. Gemma, what were the exact measurements for the flax egg? I followed the recipe and it was a bit too runny, 2 tbsp of flax and 5 tbsp. I ended up eye balling it until it was the texture in the video and they turned out great. I’d like to know maybe some different measurements that will work for me so I wouldn’t have to eyeball the measurements when I make them again. Btw, they turned out great anyway!

Although I do like this video, I was slightly upset at the ending statement how this is allergen free. It clearly wouldn’t be if someone would be allergic to tree nuts like almonds, which is what almond flour is made out of. I am wondering if substituting it with all-purpose flour would be fine or even mochiko flour (for those that are allergic to gluten) still fine with the same ratio from the recipe?

Tbh I feel defeated after making these. I’ve never failed a recipe. I’m sure they are good but for me the taste of flax seeds kills it. I think there might be a problem with my flax seed and the taste of it is so prominent and disgusting that someone who hates tomatoes might put flax seed above it now. No one has tasted except for me in my fam and let’s see what they think. I just feel sad About all the chocolate I wasted which could have be used in hot chocolate and to fulfill my chocolate craving .

I made these, they were really good, the have this really strong taste to butter (Which I like) I putted some almonds on top (which I think it needs something crunchy to contrast the softness of the brownie itself. I will say though that the chocolate once it’s cold down doesn’t drip like in the video

Regular chocolate chips are made with sugar and/or corn syrup, and other not healthy stuff. But there are sugar free ones. I buy a lot of stuff from vitacost.com, though hot weather isn’t a good time to buy it thru the mail. I also get unsweetened cocoa nibs for a little crunch. Just thought I’d share that. Can I leave the espresso out? I can’t stand coffee. I cook my fruit in a juice reduction, add a few drops stevia liquid if necessary, thicken with a little tapioca or cornstarch.

I used GF flour I had instead of tapioca flour and baking powder. I used little less than 1/2 c sugar. It was great. I need to thank you cuz in a health food grocery store I saw individually-wrapped choc flax brownies, small, $3.50! These taste much much better!!

Hello, I love your videos. You always use “cup” measure, (add 1 cup of this flower and 1/2 cup of those). How big is this cup? Sice I am from Europe and we do not have the same regular cups and also have a different measurement system.

You can add purée pumpkin or applesauce instead of eggs if you’re vegan or have a bad allergies to eggs also just in case!

These are the best vegan brownies I’ve ever tried, I used chocolate soy milk instead of water and they turned out perfect.
For eggs I would use bananas instead. For the taste and that extra moistness.

I used a mix of coconut oil and vegan butter because thats what i had on hand. I didnt use the full amount of fat the recipe called for and wow they were still really greasy! I imagine you could halve the amount of butter it calls for and you’d still have enough.
Also did not use the full amount of sugar the recipe calls for and it was sweet enough. You could also get by with about 1/2 3/4 amount of sugar they required.
Because i used a lot less oil, the batter was drier than how the video depicts it. So to substitute the rest i swapped in almond milk until it had the a wetter consistency. I used a little less than 1/4 cup of almond milk, but it’ll be dependent on the amount of fat you use.
I ended up baking mine for about 15-20 minutes longer than this recipe stated and they were still really fudgy/gooey. When I initially took them out at 30 mins they were wayyy too soft—even after cooling for some time.
Other random tidbit: you can taste the flax in some bites but it’s not a bad thingjust something to note and maybe let people know if you’re baking for others.
All in all a very solid recipe! Just reduce the fat and I think you’ll be fine!!:)

Most brownie/cake/muffin/cookie mix etc. is naturally vegan, they just expect you to add eggs and butter. To make it vegan you just replace the eggs with a flaxseed egg, a chia seed egg, applesauce, a banana etc. And then you just use margarine.

I just made this. Substitute the flour with gluten free flour, sugar and vanilla essence with malt syrup (adjust to taste), vegetable oil with coconut oil, salt with Himalayan salt (yup everything healthier). Turns out great!

At first I wasn’t sure if I wanted to make this because I don’t like my brownie to be too gooey and fudgy, but I already had all the ingredients. I even made my own almond flour and butter, so I just made it
I made the paleo version of this brownie which used 1egg+1egg yolk instead of flax eggs and also I used honey instead of maple syrup. The brownie turned out thicker than Gemma’s and not as gooey which I prefer. But it’s soooo good and very chocolate-y!! My mom loved it, though she said it was a little bitter for her liking (but still ate 2.5 portions in one sitting)
I used 50gr 54% dark chocolate and 37gr 70% dark chocolate for the melted chocolate. And used a mix of 50% dark chocolate and milk chocolate for topping.
It was the perfect sweetness from me though. Hope this help if you want to give this recipe a try!♡

I made them last week. I didn had enough cacao so I did half cacao half chocolate drops (yeah random, I know…), I also put about 2 tbsp coconut flakes in the dough.
Let them bake for 40min and it was ugh-maze-ing!

I tried these out and they turned out SO good but make sure you use UNSALTED almond butter because it makes the biggest difference lol the first the we used regular almond butter and the brownies turned out kinda salty which was sad bc the texture was so good but then we made it again with unsalted almond butter and they were the best brownies OMG
Is vegetable oil not considered vegan? I was wondering why that would be substituted. And why almond flour, and coconut sugar? Why not keep the regular ingredients and just substitute for the butter/milk/eggs?
Btw if you would like your brownies to be truly vegan you need Unbleached sugar/ flour because to bleach the sugar/flour companies use animal bones

I struggle to make toast without burning it but I made these (but used gluten free flour) and can confirm they turned out AMAZING. (Cooked em for a lil longer than the vid said though )

Looks very tasty and, ok, “healthier” ingredients and good if you have a dietary requirement or allergy, but this is a calorie bomb!!! Almond butter, almond flour, flax, coconut oil, maple syrup! “Good” fats there, but still fats so very calorific no not really guilt free! Your normal go to brownie is probably less caloric Gemma.

Guys! I was so skeptical about this recipe but it works!! The brownies are so rich and delicious I’m awestruck that it’s vegan. I loved it just as the recipe said, but if you’re not a fan of the bitter chocolate flavour, do add a little extra sugar is what I would say. Thanks Gemma, love you as always!

Gemma I love your recipes but for me sadly this was a no. I made them exactly per the recipe and they are very oily with the almond butter and coconut oil. I’m wondering if the coconut oil is even necessary with all of the other good ingredients. Many many vegans are looking for oil free or no oil recipes. Coconut oil is actually not healthy to eat and is not a ‘healthy fat. I would love to see you and Olivia come up with an oil free vegan brownie. Thanks for all that you do!!!
Is there an alternative to the tapioca flour? Cassava (tapioca) is a real irritant to my digestive system.
Add avocado instead of coconut oil. Way damn healthier and literally guilt free. Also add dates or date sugar instead of maple syrup or coconut sugar.
