Ingredients 1/2 cup cooked chickpeas 1/4 cup sweet yellow corn 1/4 cup butternut squash, cubed 1 tablespoon lime juice 1 teaspoon lime zest 1/2 tablespoon olive oil 1 tablespoon cilantro, finely chopped 1 teaspoon chili powder 1/4 teaspoon salt 1/4 teaspoon ground black pepper 2 tablespoons walnut.Instructions Prepare all the above ingredients. Assemble Buddha bowls by placing 1/4 of the quinoa into each bowl. Add the chili lime sweet potatoes, cooked edamame Top with avocado-lime dressing.
Add sea salt to taste. Enjoy immediately.*.For this particular bowl, I started with cumin brown rice for my base.
I mashed sweet potato with fresh lime juice and zest and roasted up some soy chili tofu. Then, I chopped up some purple cabbage, carrots, lettuce, cucumber and avocado, squeezed more lime juice over the top and boom!Chili lime chickpeas combined with wild rice, roasted sweet potato and steamed broccoli is a colourful, flavourful, utterly delicious bowl of goodness. So I’ve only recently discovered my love for Buddha bowls.Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir 2 cloves garlic and ginger until fragrant, about 1 minute.

Sads! Question for you. I’m a home veggie from the UK who still eats meat if I’m a guest at someone’s place or if a restaurant really has no creative V/VG options. As you know there’s a wave happening rn and interest in veganism is on the up, which in time could mean reduced prices for those interesting vegan options that are currently so expensive. My question is; is it enough to ride that wave and gradually allow myself to become more vegan as the country does so, or is that not enough and I should be proactive? (and then the proactivity may be limited: I don’t have the influence to get parliament to pass laws to incentivise purchase of vegan products and subsidies to help farmers diversify in the wake of that effect despite the fact that those things would do so much more than me boycotting non-vegan products alone). What are your thoughts on this?

You may have addressed this in other videos, but two issues that I have: 1) I cannot eat nuts/nut products due to allergies and 2) need to avoid soy products as well. Many of the salad bowls that I see, including those featured here, have soy products as a protein and source of Omega-3s and will rely on nuts or nut products as a garnish, dressing, or added protein/source of fats. (Tahini, I can have, and LOVE… so yay!) Do you have any videos that feature recipes without these ingredients? It would be tremendously helpful to have one or a few tutorials that address allergies and food sensitivities when one is trying to eat healthy and rely upon vegetarian and/or vegan foods.

Today I tried the Romesco sauce, herby quinoa with peas, miso cauliflower and the salad. Tish, i think maybe you should give each bowl a name. One of the best meals I have tasted. I went a bit strong on the garlic in the Romesco sauce and I replaced the honey with maple syrup for the miso marinade. It was the perfect meal with all the flavours packing a punch in their own right. Great textures too. My 7 year old loved the miso cauliflower, and husband was licking the plate at one point I made enough for 2 family meals but sadly we ate the whole lot in one go!!!!! A must try…….

Your video, editing, lighting, ambiance, diet, you, your voice, your smile oozes so much positivity, that whenever I feel down I look at any of your videos and I feel good instantly. You encourage me a lot towards a holistic style of living.
What a great temperament you offer to the video. Love the bowl recipe. I’m starting vegan 6 days. I’m type O blood type and have a notion I can use some meat. I’m hoping to reduce chlorestrol which is high. I line that you suggest low oils, but plant based nuts, avo etc. I do question the use of soy. I currently avoid wheat as I do not think it is grown in a healthy system. Thank you for all of your efforts recipes and website.

As a former Chef at Whole Foods. This was one of my favourite recipes to make. This is pretty close to what I remember. However, Whole Foods actually bakes the tofu to crisp it up after it’s covered with the chilli lime seasoning. This will also reduce the water content of the tomato paste at the same time.
Toss with fresh basil after removing from the oven.
All vegans eat this peanutbutter dressing, getting really boring!

Thanks for the dinner inspiration tonight. I didn’t have all the same ingredients, but it got me to look in my fridge and cupboard and see what I could create. I used spinach, quinoa, zucchini & squash, avo, melody tomatoes, mushrooms, green onions, your special dressing recipe. I put your ingredients on my list for my next shopping list and can’t wait to make this up for lunches next week.

Not sure if you have already or not, but can you please do a haul of what kind of dishes you have that you find that you use on a regular basis or that you think would be helpful starting out? I find that I over buy, under buy, or buy the wrong dishes and utensils I don’t necessarily need or use. I would just like to get some ideas of the things that you have including your appliances.

I like your ideas and will try them but without with rice instead of quinoa. Tbh I’m quite fed up with food tubers promoting quinoa so shamelessly since the West’s huge appetite for it causes famine in Bolivia. This is a form of cultural appropriation noone seems to talk about but which causes real actual harm.
