Why not add a little bit of Parisian cheese? (sarcasm) I actually liked that part. But why recommend washing salted anchovies or use oil packed anchovies and then add a bunch of salt? It makes no sense.

What’s up with all these salad dressing recipes with a shitload of dijon mustard?
Also the original recipe supposedly never contained anchovies because the person who supposedly created it didn’t like them in his dressings. His brother however did like them, and added into the dressing later from the original recipe that had boiled eggs into coddled eggs as well. This is the recipe that made the salad take off even more into popularity. Many years and chefs later we have this recipe.

-More control over quality -able to switch up ingredient to suit taste -fresh ingredients are going to taste way better than foods that have been packaged and sitting in a warehouse then the shelves at the store -once you understand how easy dressings are you can freestyle your own blend with ingredients you may have a hard time finishing otherwise There are some drawbacks to making stuff from scratch but mostly applies to single people and people who like everything in an instant and cantwait

Nice recipe, so glad you didn’t use vinegar, that’s so wrong! I’ve been making this in a NYC firehouse for 12 men for 35yrs, and there is no reason to not use a blender (I throw the cheese in as well). As for anchovies, if you don’t tell your guests they’re in there, they won’t know (Worcestershire has anchovies in it, I use both). Last thing, some time ago, I swapped the Dijon for Coleman’s mustard powder (to taste). A little kick, my guys like the difference.

The egg yoke is sterile. The egg shell may or may not be clean and this is where you could get sick even though it is incredibly rare. Boil the egg for a minute if you have concerns. Btw, hundreds of people die from dirty vegetables every year and virtually no one dies from eating raw eggs.

I made this tonight and it was amazing! I recommend making the day before or 3 hour before to left the flavors marinate together. Also, I used a hand whisk, but wish I used an electronic hand mixer.

Gordon you’re definitely a force to be reckoned with but I made 76 Caesar dressing the old-fashioned way egg yolks olive oil garlic, lemon juice it was fantastic and tasted so good every bottle dressing looks like yours sorry about that and it didn’t have anchovies in the stressing I just added anchovies at the end it was so delicious and so light and refreshing the way you’re making it you can find that on every shelf in the grocery store and I can’t stand it now because it’s loaded with sugar how that happened me and you are both scratching our heads!! Either way I like the way you treat the rest of the salad with the dressing needs to be left alone but everybody has their own taste! But when I need an ass-kicking recipe I will search for you
Also the recipe for peanut butter cookies was way too difficult I make them with three ingredients and they come out delicious and yes you can add the jam in the middle who wants to pull out the flour with a blender the butter and all that nut for genuine good peanut butter cookies

One question: if you mentioned it, I didn’t hear/see it (and I even went back and watched the video again, lol)… How long will this stay in the fridge? I’ve been cooking for ages and have been ordering Caesar Salad for ages but it took this video to inspire me to make fresh Caesar dressing. It is absolute “yum”. I’ve been losing weight during my two months on Keto and except for missing my favorite red wines, I am loving all the things I can eat. One thing I seem to not do as well on, however, is eating veggies in place of fruit I would otherwise be eating. This dressing has helped to counteract that since it has good fat macros and I have no excuse to eat lots of salads. Thanks!

The problem is in America a lot of idiots are used to bleach and food coloring to make the “food” look pretty. What they’re really eating is a lot of chemicals and toxins that are poisoning their bodies. Raw ingredients resulting in anything close to brown or green is seen as disgusting so the morons who have been bred to be stupid won’t eat or drink natural products. They’ll feed a boxed Poptart to their children but won’t take raw ingredients to make something healthy because it looks “wrong”.

You’re going to be best off with a little trial and error at first. I couldn’t tell you any sites that will lay it out in easy steps or anything like that. Maybe you could find some forums… Basically just need tons of practice. You learn as you go.

Hey dude anchovies were never used in the Caesar salad dressing. The original dressing did use worstershire sauce. The person who told me was Rosa Cardini Caesar’s daughter. You are making a French dressing. Also there was never a raw egg yolk there was a coddled egg. Please don’t tell lies.

Because you don’t get the additives needed to stabilize the products so it would last longer in your fridge. Certain are questionable and scientists believe they might be increase your chance to get cancers etc.

Anchovies were never used in the Original Caesar Salad. I had the salad made for me by Rosa Cardini. Worcestershire sauce was used however.

It’s not the egg yolk that can give you salmonella it’s the egg white. Just like when you order an over easy or medium egg, the yolk is still runny. It’s very delicious, actually. Just be sure to wash your hands when handling a raw egg. Even tho it really depends on ones immune system to get salmonella from an egg.

However, Caesar’s daughter stated in an interview here on You Tube that her father never used anchovies in the original dressing that he made in his restaurant. She also said that he never allowed anchovies in the restaurant. To me the dressing just would not be the same if the anchovies were omitted.

Sir, you did a great job of explaining multiple facets of this recipe. There was so much stuff out there that included and did not include certain things without explaining why they were added. Wiki mentioned the original recipe didn’t include anchovies as Cesar was opposed to the idea, instead he preferred worcestershire sauce. Am I missing something here?

If you actually want to eat salad more often, do this in a food processor or blender.
If you want real Caesar salad go to Tijuana Mexico, Caesar’s hotel restaurant, which is where the dressing was invented

I use (‘Amore’) anchovy paste and adapt (Instead of using their garlic paste, I use fresh garlic.) the recipe on the package where the Worcestershire sauce is part of the recipe.
Base of the dressing, meaning the part of it you can make ahead of time for 4 servings.
1/3rd cup of Extra Virgin olive oil
3 cloves fresh garlic, crushed in garlic press (can be adjusted for more of less depending on taste)
2 Tablespoons Anchovy Paste
2 Tablespoons Mayonnaise
2 Tablespoons Lemon Juice
1 Tablespoon Worcestershire sauce
freshly ground pepper
Other things needed for the salad.
1/2 cup Parmesan cheese (grated)
1 Large head romaine lettuce, torn into small pieces. (Tearing them prevents the water holding veins of the lettuce from seeping out liquid.)
CROUTONS
1 1/4 cups Italian bread (or French or Sour dough or what ever you have), cut into 3/4 inch cubes
crushed garlic
2 Tablespoons olive oil
Toss all together, spread on baking sheet. Bake 5-10 min until golden.
NOTE: A lot of people don’t like biting into anchovies or even small pieces of them. Myself included. But since they do give the dressing it’s flavor where the flavor is NOT redolent of anchovies, that’s why I use the paste instead of the whole anchovies. It turns the anchovies into a ‘secret’ ingredient.

Worcester shire sauce contains anchovies. It’s the secret ingredient until you read the ingredients list on the label
So basically just take regular mayo and smash som anchovy and garlic with a dash whorchester sauce and some Parmesan an your done.

Lovely lady, lovely recipe. But “three quarters of a tea spoon of mustard”? Seriously? Who is ever going to measure that? And what huge difference would the additional quarter tea spoon (less than 1/4 ounce) make?

Amazing! The only sub I made was that I used half of the lemon juice and added two Tbsp of a good red wine vinegar. I just love the quality of that mixture for my “acid” base.

Put on gloves if you use your hands. I don’t want to eat something someone has had their hands in. Anyway, why make this homemade mayo when it is made so beautifully for you. Use anchovies, mayo and a touch of lemon and garlic with parmesan and croutons…I’d make the mayo in a pinch only…

Takes time as do most other skills. You’re not going to know how to prepare and cook food if you don’t take risks and try things out for yourself. Or you may get lucky and your girlfriends mom could be an Italian trained cook who gives your tips and tricks. Just start reading recipes and find something you want to try and then go try it.
I make this without the mustard and worcester sauce. The sauce is hard to come by here. I also leave out the additional salt. I find the cheese is salty enough to season the dressing.
A good Caesar also loves Worcestershire and balsamic. Also should be a coddled egg yolk.
