Easy Vegan Collard Wraps

Spread 1/4 cup refried black beans all over one side of the tortilla. Place 1/4 cup arugula or spinach leaves over the beans. Starting from one end, roll the tortilla up tightly. Set aside. Repeat with remaining tortillas, beans and greens until everything is used up.
Place beans in food processor or blender container; cover. Process until smooth. Spread evenly onto tortillas; top evenly with cheese mixture. Roll tortillas up tightly. Wrap individually in plastic wrap.

Tried the pasta dough twice, and it sucked. Turned out to be dried up play-doh both times. That is seriously not working! Gonna make a snowball doughball and throw it your way. Something is omitted, or you’re just faking it here…. Don’t get me wrong; the Ba’corn is awesome every time….. But this one is uhm……. you left something out… You are the Betty White of “not quite” on this one. So, we’re gonna try some pre-made pie crust because dinner is sooooooooooon!

Made this for super tonight. Subbed Italian sausage for the salmon and Cheeze-It crumbs I ran through the food processor for the bread crumbs (waste not want not). It was the first time I’ve ever made pasta. Turned out great, I will be making this again, for sure. Thanks Chef John.
You can also use a length of floss to slice the rolled up dough if you’re worried about using your good knife on metal surfaces. Do a loop around the dough and tighten it works pretty well.

I made the healthy wraps by adding cooked spinach pulp in the flour.
Very great mostly raw dish.:) I’m sure the collard leaf also helps cut down on some of the calories.

If you need more than one egg but less than 2 you can beat 1 egg in a bowl and just pour half off it.

Chef John, I’m glad you didn’t throw on a mask and go out and buy some fresh ingredients, and instead used canned and frozen, because sometimes during the week, that’s what we have on hand to work with, too, and now we know we can make this (or something like it LOL) and it will taste great!

This actually look delicious I’m from the south and honey we chop those collards up and put them in a pot with some ham hocks or turkey legs with water sugar and hot peppers but I’m trying to live longer and eat healthier so I will give this recipe a try.

We do something similar in India with a samosa filling but we cut the wheels really thin and fry them and serve them with cilantro/parsley chutney

All my veggies are Raw if you use beans you do have to cook them but no seasoning all you taste are the veggie aseom.
There’s nothing raw about this dish. Can goods are cooked and do was the wrap. It looks tasty, but not raw. Let’s call it cold.

First of all, I love the combination of spices you have used in this recipe. Second of all, that pita bread look so soft! I’ll definitely have to give the bread a try with some curry!
For the lazy or in a hurry, lasagna noodles works well too, just put the filling on the semi cooked noodle, roll it up. Put in the dish, sauce it and bake. Top with more cheese the last 15 minutes. Lasagna roll ups is what I call them. Fast, easy, individual portions. I have made them for years.

I wrote up all the notes on this recipe, but then realized I don’t have a deep fryer for the last step. But I already typed this all up so I hope someone can avail it!! For BASANT, I hope you are not annoyed by me posting full recipe. If you are, you can delete this:)
VEGAN BLACK BEAN MADURO WRAP RECIPE
1 cup of corn
1 cup of black beans
1/2 red onion chopped
1/2 bunch cilantro chopped
1 tsp black pepper
1 tsp salt
few pinches red chili flakes
1 tbsp olive oil
1/2 lemon squeezed
MIX ALL OF THIS.
LET IT SIT IN REFRIGERATOR.
MEANWHILE
Chop ends off of 2 plantains.
Peel.
Chop lengthwise in half, then cut each half lengthwise again and half (so basically each plantain is in long 8ths)
Deep fry in FRESH oil.
Remove.
Lightly season them when hot with salt and black pepper.
Lay down black bean tortilla wraps.
Add veggie mix in middle.
Add 4 pieces of plantain in each wrap.
Add 4 slices avocado.
Sprinkle a bit of hot sauce over.
Fold it (sides in, then bring the bottom all the way to the top, and pull as tight as possible.).
Put it on pan to grill lightly, and it will help it stay tighter.
I bet those would taste good with ricotta and ground beef with mozzarella cheese. Yum
