Directions In a large pot over medium heat, combine rice, coconut milk, water, sugar, and salt. Bring to a boil, then reduce heat, Remove from heat and let sit 10 minutes, then fluff with a fork. Serve topped with sesame seeds, if desired.
Ingredients 1 (14 ounce) can coconut milk 1 ¼ cups water 1 teaspoon sugar 1 pinch salt 1 ½ cups uncooked jasmine rice.Ingredients. 4 cups rice – washed and completely drained. 1 400ml cup coconut milk. 2.5 cups water.
2 tablespoons crayfish powder. ½ onion – chopped. 1-2 cup smoked meat or fish. 2 tomatoes – chopped. 1-2 hot peppers – chopped.
Bring the ingredients to a boil. Combine the coconut milk, water and rice in a large saucepan. Cover and bring to a boil over hight heat. Reduce heat and simmer.
Place in a saucepan with water, coconut milk, and salt. Place the pot over high heat and, bring the liquid to a boil. Stir and reduce the heat to the lowest.Mix the rice with the coconut milk, milk, lime rind and sugar.
Pour the rice mixture into a lightly-greased 1.4 litre shollow ovenproff dish and dot the surface with a little butter. Bake in 300 degree oven for about 30 minutes. Remove and discard the strip of lime.In a large saucepan over high heat, combine rice, coconut milk and salt; bring to a boil.
Reduce heat, cover and simmer for 20 to 25 minutes, or until liquid.Coconut rice makes a terrific accompaniment to many Thai and Indian dishes, but it’s equally wonderful with nearly any Western-style entrée. Quick and easy to make, this vegan coconut rice recipe will come in handy for those times when you want to make dinner extra special without a lot of extra work.Directions Preheat oven to 350°.
In the bottom of a 3-quart baking dish, combine rice, onion, coconut milk, broth, and 2 Season chicken thighs with ½ teaspoon salt and a large pinch of pepper. Nestle chicken skin side up into rice mixture. Cover dish with foil and bake for 1 hour.Combine rice, coconut cream, sugar, salt, and 2 cups water in a medium saucepan. Transfer the rice mixture into the prepared baking dish, smoothing the top. Bake for 30 minutes, or until the pudding is thick. Remove from the oven and carefully stir in the almond milk, adding more.In a large saucepan, combine the rice, water, brown sugar, butter, cinnamon, salt and lemon zest.
Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until rice is tender and water is absorbed. Stir in the milk, condensed milk, coconut milk, raisins and vanilla.In a medium saucepan, combine all other ingredients including rice, coconut milk, water, sugar, and salt.
Bring to a boil over high heat, stirring.

Looks so appetizing! When you added coconut milk to the vegetables, I felt like using that as sauce.
Please how long did it took to bake? Was it longer as when cooked?
This one’s a bit disappointing. First of all, there’s so many different kinds of rice you end up with very different results. Electric stoves also have different ideas of “low”. 18 minutes is longer than rice is usually cooked.
On one occasion I ended up with a coal-black charred bottom in my pot with the stove at barely above 1. The next batch was done on “min”, then it came out raw.
Also, the flavor was very very mild, if not just plain bland.
Those are very little amounts of spices for so much rice, no?
Next time I’m putting in chicken stock instead of water, and more spices.

I made this last night and it was great!
But…
I used the Italian style red pepper. There may not be a different in terms of taste, but the rice was actually pretty spicy. I would definitely use a lot less of the crushed red pepper, or maybe even leave it out all together. If I only had a little bit of rice in my dish, that’d be fine, but I put a thin layer under my serving of meat, which actually got uncomfortable by the end.
I made this tonight, but i used canned coconut milk and i also used coconut flakes and man! It was sooo good will be making often! # facts!

My coconut rice never tasted quite right or had the right consistency until I tried your method of cooking uncovered for 10 to 12 minutes. I had just always cooked it covered for the entirety of the cooking process. I also never added the little bit of sugar before I tried your recipie. Those things are critical to getting the texture and taste down. I had my rice with butternut squash curry, so delicious.

I’ve had coconuts rice before. I put coconut shavings in it and a bit of brown sugar I think. Adding some cilantro and lime on top once cooked makes the taste even more amazing

So I’m Trinidadian and I have an affinity for curries and all things Eastern. We tend to cook a lot with coconut rice. How I do mine is like an equal amount of coconut milk and water, olive oil, sea salt, and minced garlic. If I want to liven the rice up, I do green onion or put a little bit of raisins in there for pops of sweetness.

OMG!!!! I go to a restaurant in Montclair NJ called Cuban Pete’s simply because I’m obsessed with their coconut rice!!! Tried to make it a couple times and it was a total mess!!!. Tried your recipe and it was a home run!!! Knocked it str888888 out the park. When I fluffed my rice I added chopped cilantro and garnished with scallions too…Yummo. Derek Young… I think the secret is to use real unprocessed coconut milk( see her video how to make it). That canned stuff might be too heavy .
the best way is to blend the fresh coconut in a blender wth a cup of water then sieve the particle then use that cream to the rice and it’s more tasteful than particles by Chef njuguna kenya for more details cl0725489211

Here in Malaysia we call it nasi lemak, which can be translated directly as oily rice. We usually eat them along with sambal (a type of chilli paste) squid or chicken. It’s so common here that even me, a Chinese, eat them weekly.
Why 18 minutes on low and not a round figure like…..say 20 minutes?
Try adding slices of ginger, few cloves, a lemongrass pr pandan leaf if u can find it there…for added fragrance to the rice…. And yes, sambal and fried anchovies goes very well with the rice…

I was watching tv and saw them eating this, I remember eating this as a kid in panama. I never knew how it was made. I can only say I can’t stomach it anymore.

Thank you for this recipe, Chef John. It has quickly become a family favorite, my 22 month old daughter quite literally shoves it in her mouth by the handful, and my wife has told me she would eat this rice nearly every night.
I used Alton Brown’s recipe for grilled skirt steak and put it over this coconut rice and it was probably the best thing I’ve ever eaten.
I made this and the rice came out crunchy. Are you supposed to take it off the hot burner after 18 minutes? I feel the ratio of water to rice is too low.
I made this tonight with some grilled chicken. It was okay, the family liked it. I think personally I’d prefer it without the ginger.
I added all the whole Indian spices I had to the turmeric and chili flakes. Star anise, green cardamom, brown cardamom, cinnamon stick, cloves and extra bay leaves. Some fried onions too. Oh ho yeah.
Okay. So we make our own coconut milk here, fresh from the shell (thickly grated into water). Do you think the measurements for this rice is the same? Aim for a can or reduce to a cup? What on do you think?

i used to work at an asian supermarket (im not asian owo;;) and one very common dish the costumers would buy ingredients for is this coconut rice but with sweet (sticky) rice and yellow mango that they steam and put together. i think it’s a thai dish

Cooked this last night using the recipe with the use of chicken stock instead of plain water. It was tough obeying the rules for stirring…but I submitted! Perfect time to toast the coconut flakes. This was the best savory rice recipe I have ever tasted! Served this with my own yellow Madras Curried chicken!

I love making baked nian gao and thank you for this great recipe! I don’t have an Asian grocery store anywhere around me so I get some when I travel a few hours away to a big city. However, is there something else you could recommend to replace red bean paste? As I speak, I am trying a batch of nian gao using nutella and wish I had found this recipe first, as I had all the ingredients, booooo!!! (I’ll have to let you know how it turns out since red bean paste is hard to come by for many people but Nutella can be found easily). I hope it’s not a disaster, lol. =)
