I’ve been watching Alton since I was maybe 10 on Good Eats, he is for sure the reason I love cooking. I love how he talks about the science of cooking and makes it even more fun than it already is

Sorry but I unsubbed from Food Network channel from all of my devices. I used to enjoy watching Food related topics. That has now changed and since I still control what I watch for entertainment your channel is not for me.
I agree with Alton Brown’s Iron Chef comment. Everyone I knew at culinary school in the 2000s wanted to become the next Julia Child or Gordon Ramsey or Paula Deen or even Alton Brown in the next 10 years. ♀️ I don’t think any of them are even cooking professionally anymore. Too bad really. Now enrollment is dropping at the culinary programs and there’s a growing shortage of culinary students and trained chefs. It’s going to be interesting to see how the industry changes especially after COVID.
I always love when the guest has something to say about the sauces good bad or otherwise. It lets me know what sauces I’d like or not and that helps me decide on if I should buy them or not and I’ve seen enough guests have good things to say about all your sauces.
I’m trying to figure out what Ratatouille is and the ONLY consistent thing I can find is. INGREDIENTS: Whatever is lying in the bottom of your fridge.

Ramsay puts on a performance to promote/embody his brand, while Alton just does the job. That’s why watching Alton’s shows doesn’t leave me feeling guilty.

This is one of those videos I go back and watch every few months. I didn’t like him before but this guy is a lot smarter and more tuned in than I thought. Been re-watching a lot of the old stuff he was in and it’s much better with this new found respect I have for him.
My memorable one was the stainless steel prep bowl used with tongs and foil as a popcorn popper. It’s ok. The bowl was destroyed by my hubby trying this fail but we ended up replacing our rib smoker drip bowl with the prep bowl.

Grew up watching him when he still had hair so cool to watch him rate your sauces and then sauce on all of them at the end! Didn’t see that coming….lmao….Get more chef’s on your show! Of course Alton was shooting back hot sauces like they were nothing. I expected him to not be affected much by them. However, this dude straight up just blew through them without being affected even once. His voice didn’t even change and he kept his freaking jacket on. Like dude, what is his mouth and gut made of? I’ve made the meatloaf, Mac and cheese, turkey, ribs, mashed potatoes, and French toast.
The meatloaf, turkey, and ribs are show stoppers. I’m now the turkey maker for all Thanksgiving get togethers. The turkey comes out incredibly moist and flavorful. The mash potatoes are great too, but I run the potatoes through a ricer. I use a different boiling method as I find his method cumbersome and prone to over hydrating the potatoes.
The one pot Mac and cheese is actually better than the baked. I think other recipes do the baked Mac and cheese better. The French toast is good, but I’ve had more flavorful custards. The fry and bake method though is gold for perfect French toast.
If anyone makes the turkey, the tin foil thing is no longer necessary because the recommended temp for dark meat is now below 180 degrees, so the white meat no longer needs the extra protection while the dark meat keeps cooking.

I utterly agree with him when it comes to presentation over substance when it comes to good. I’d rather eat a meal that looks bad but tastes amazing than a meal that looks perfect but tastes awful, I mean I’d love both but if I had to pick it would always be taste.

Hi Alton… I’m almost a year late to this video and have a bit of fun trivia for ya. When it comes to you cardboard box smoker you mentioned it keeps the heat around 180 and have never had one catch on fire… Whew long winded already but remember your literature. Specifically Ray Bradbury’s Fahrenheit 451 that happens to be the temp at which paper ignites. Blah Blah Blah too many words for such a minor point. Love ya buddy.

Alton: I smoked two full deer worth of jerky in the same box last post-hunting season! I turned the box on it’s side so i could fit 8 racks above the hotplate setup. Each 5lb batch took all day generally, after smoking I would take them into the oven to make sure they came to temp and finished drying. I did probably many batches.

Good Eats is so much more entertaining than other cooking shows, which are usually stand and stir format, which gets boring. Alton makes it fun, other food celebrities just stand there and cook and recite recipes to the camera. Anyone can do that.

I saw Anthony Bourdain speak in Atlanta once, and he had nothing but great things to say about Alton Brown. He said that he was under utilized for his talent. Also when Tony did layover in Atlanta, he had dinner with Alton and took him to the legendary clermont lounge. If that isn’t friendship, I don’t know what is.
He is just a class act all the way. I enjoy watching his shows.

Interesting. I like Alton Brown. I love Good Eats. Learned a lot about food & technique. I often look it up, just for nostalgia reasons. If I need a good idea for something I’m having trouble with, Alton has probably cooked it. I make his peanut brittle all the time.

I love AB and rely on many of his recipes. Here’s what I don’t love his obsessive insistence on weight instead of measuring, and now, insistence on metric. measurement. What, am I supposed to go OUT and buy a scale? Not gonna do it. And give up on the metric. If some countries use it, fine they’re used to it. The U.S. pushed teaching that decades ago, epic fail. People aren’t gonna do that, either. Makes his recipes frustratingly useless
One of my favorite people to watch on the tube. I have watched every Good Eats episode multiple times and watch everything he does on Youtube and Food Network. Except for Worst Chefs which he seems to hate. Might be a ploy, I don’t know. But I do watch the recipes he makes at the ends of the episodes. On Youtube.

As a fat guy who lost even more weight than Alton and put it all back on, I don’t mind his comments even if I disagree about obesity. It’s not about the food you eat, he thinks that because selection is how he lost his weight. In truth it’s about mindset and patterns of behavior. But I don’t mind his comments because I lived with those kinds of comments my whole life and they don’t sting, they’re just what skinny or formerly fat people do to cognitively remind themselves to stay fit.
I just love Alton. He’s funny, smart, talented, and just a bit sexy (I’m almost his age people, don’t lose your shit.).
Sometimes he comes across as a bit pretentious, but he really does seem to be a great guy, and his show is still one of the best ‘cooking’ shows of all times.

I used a Turkey Derrick the first time I fried a turkey. My ladder still has one of the pulleys bolted to it. The rest of the pieces got removed so I don’t trip on them when using the ladder for it’s original purpose.

My cardboard smoker did catch fire:( I think it actually retained enough heat that it melted the cord for the hot plate which shorted and burned the whole contraption, and the outlet it was plugged into, moral of the story, stay close by and keep an eye on it
Think about it, Alton not only teaches us how to cook, why to use the methods to cook, but has shown us how to innovate in the kitchen both showing us how to use DIY projects to make amazing foods but how to make safety devices to keep us alive. No other chef has done as much.

Please use a real hand guard or just throw away the last portion of the onion. A Mandolin will FUCK your hand up! Sometimes permanently. Don’t try to slice down to where he does, it takes a lot of practice. Plus your hands will smell like onions for days if you don’t and don’t know how to clean onion smell off.
All of my ladders have pulleys on them because of that episode. I do it differently. I mount the pulley because i would lose it otherwise.
I haven’t watched Alton since Good Eats as a kid. I never knew how endlessly smart and creative he is.

Throws the whole bag of chips in the dip… Did not see that coming.:)
Best sour cream and onion dip
4 large yellow onions
1 teaspoon + pinch baking soda
1 tbls kosher salt
1 tbls dark brown sugar
1/4 cup olive oil
1 1/2 cup high fat sour cream
3/4 cup mayo
1/4 tsp garlic powder
1/4 tsp white pepper
Cut onions thin in mandolin
Place in large pot with baking soda, kosher salt and brown sugar. Stir thoroughly and Let sit 10 mins
Add olive oil and turn heat to high
Stir often til reduced 75% light golden
Reduce to medium heat
Stir 15 mins
Deglaze with sherry vinegar and water
Stir then deglaze again after reduced to pint in volume
Dont want to burn them
Dark golden brown
Gives you a cup and a half of onions
Use 1/2 cup for dip save the rest
Mix onions, sour cream, mayo, garlic powder and white pepper.
Combine and store. Always better next day

I can’t stand the way he mispronounces “the”. I’m sure he’s a great guy and he’s clearly intelligent. I even enjoyed his show years ago.
But I could never get over how he used the incorrect pronunciation of “the” in a clear effort to sound more intelligent and/or more educated. I was not impressed by it.

Shaking my head. If you want REALLY moist meatloaf,soak those croutons or bread in a little bit of milk till they get soft and then squeeze the milk And then follow the rest of them recipe. It’s an old Italian grandmothers secret.

Alton Brown is so meticulous. He did cooking like Scientist. And so mechanical and engineering almost every move. Superb Doctor of cooking. Fantastic.Hard to compete with him. Food has to be so unique.Besides he got too many expensive equipments that we sometimes could not afford to cook these special food. We were behind him in a sandwich shop near Atlanta Georgia once and witnessed him berate and belittle the poor girl behind the counter at a small sandwich shop when she asked him a question about the sandwich she was making for him. We lost total respect for him that day. Celebrity assholes are the worst and he’s a class A asshole and questionably a celebrity.
Watch everything Alton Brown. I followed several recipes of his in the past, and they usually come out great. This was not one of those times. I use smokey paprika in lots of stuff, but the pairing with olives and lemon gave it a weird taste. The Good Eats Turkey recipe is the best Ive ever made and tasted.
It’s amazing to me the things that have become commonplace only after Good Eats aired an episode where it was featured. It’s hard to believe now, but you used to not be able to find Panko bread crumbs in every grocery store in the US, and a lot fewer people brined their turkeys. Now, a grocery store without Panko bread crumbs is almost impossible to find and brining is the go-to method for people to cook their turkeys. He was and is the Julia Child of our generation.

Alton was great on “good eats”. When he went to “iron chef”, he became a so called know it all. His attitude and behavior changed for the worse, and not to mention the stupid ridiculous hair styles he had (probably food networks ideas). If I never see Alton again, I won’t have missed out on anything.

Well he taught, not only to drop a worm on a bobber but how to fly fish, handline, etc. you get the idea.

The “turkey triangle” breastplate, shown at 14:41 contaminates the foil by contact with raw poultry that you plan to put on cooked poultry. Really? I know that you know better.
Love ya Alton, but no way a chicken thigh takes longer than a drumstick. Never in any application, ever.
For the French Toast, try 2” thick slices of sour dough bread. Soak the slices for 8-10 minutes.
Fry as Alton describes, but leave in 350F oven for 10 minutes to cook the custard in the center completely.
Butter and REAL maple syrup make it a perfect breakfast!

I would argue the best turkey recipe AB did is the deep fried turkey.
Food Network seems to be mostly Guy Fieri and competitions the last several years.. I miss Good Eats, Forty Dollars A Day, and Emeril Live. Those were the days.
I remember when Alton Brown started out. Started watching his cooking show because I loved that he inserted facts into the episodes. I love information and enjoyed watching his show.
His are the only recipes and how to’s that makes any dang sense to me. I rely like Mr Browns programs.

I made this, to be honest I did not like it. Just my opinion, the paprika was too much, potatoes ended up oily (Olive oil coating chicken and chicken fat dripping), and the tapenade was the worst. Just my opinion

I used to make this regularly and it is excellent. Also, it’s hard to screw up and is easy to scale up or down for a crowd or a pair. I’d highly recommend it for anyone curious.

I learned more about the “inside track” of what actually goes on during the cooking process and all of the other related aspects of the kitchen experience from Alton Brown than anyone else combined, TV or otherwise. The only other “chef” that came close was the late great Julia Child. And he was the only “actor” on that stupid Americanized version of Iron Chef that made it interesting. Sorry but the real Iron Chefs were guys like Chen Kenichi, Morimoto and Sakai. ‘Allez cuisine!’

I watched this on Wednesday and cooked it for my 90 year old grandparents on Thursday. They’ve been buying the same margarine for 40 years.. spaghetti and meatballs is new and different this meal made them feel alive again.

I just made this dish. I followed it exactly as is, except I just left the bone in. To much work for me personally, to bother removing. The chicken came out perfectly. It was good! But, I didn’t like the olives in it. Maybe because I was never into olives. But, I’m sure other people will love it. Next time I’m not using olives.
If you like a sauce, try chicken paprikash a Hungarian dish with similar flavours and the best thing I ever made.

Disgusting!! This is not traditional eastern European chicken paprika or paprikash. My great grandmother from Slovakia made it the correct way. Never used smoked paprika or onions or potatoes or olives or lemon or garlic!!! She’d be turning over in her grave seeing this. This is just his version of some chicken dish he’s added paprika to. Thumbs down!!

i’ve done this in a cake pan with sweet potatoes as my bed, no olives though; pretty cool Alton’s excited about some lazy good chicken that I already do. Mom did apples and sweet potatoes or just apples to elevate the chicken then use in a sweet side sauce like cranberry. Sometimes you just need to perfect the potatoes separately, per preference
