I tried the recipe last night with cashews that I blended. The muffins came out great. You are right, I did have to use much less almond milk (about 1/4 cup). I also only used 1 tablespoon of oil. And to be adventurous, I also added a teaspoon of chia, to thicken the batter.:)

I’m in Australia, and used whatever local brands I had, Almond flour from Costco, Pure Capilano honey, light olive oil, Kaara UHT coconut milk, frozen blueberries. Baked at 170 deg C for 20 mins and then 150 deg C for 10 mins. Came out great, not oily at all. Took your tip on not to overmix batter. Used a little extra almond flour, about 125g. Not too sweet and fantastic with a cup of tea. Thanks for a lovely recipe.

Can not thank you enough for this recipe. I have tried making so so many recipes and this one is by far the best. My 12 yr old son is sensitive to all grains and soy. Simple everyday recipes like this make life more normal for him. Thanks again! We cool them and freeze them and they are ready all week for him. They freeze perfectly.
