I followed this to the letter, 390F for thirty minutes, brush again, roast another 30 minutes. The potatoes were neither crispy nor cooked through. I gave them an extra 20 minutes and wound up microwaving to cook through. Might try again at 420F.

I know this Hasselback, (and it is a hassle to make as I see it), potato fixens calling for the skin to be left on.The finished job looks great. However, I don’t care how much effort you put into cleaning the skin there will always be some dirt left behind and that’s my problem. I know. I’ve even tried scrubbing the potato with a tooth brush under running warm water. Maybe the potato, Russet, is the wrong one I should be using, deep pits. Hard to clean out. I understand the baking kills off any bacteria. But it doesn’t eliminate the dirt. I don’t want my food’s taste influenced by the flavor of dirt that did not get cleaned out. I may try this style of baking a potato but with the skin removed and not tonight.

Place the potato between two wooden spoons when cutting to keep from cutting too far down. This makes cutting faster and easier. Then, to paint with the butter, place potato across one wooden spoon and it will flare open and the butter will more easily flow between the slices.

I always cheat for baked potatoes, and I’m darn proud of it! First, I pierce the skin of the tater and then microwave it. After that, I rub the skin in oil (I use avocado oil), salt it, and then put it in my toaster oven for a toast cycle. Skin gets crispy, flesh is tender, and it’s FAST. These look tasty!

I always cut a piece of the bottom of mine so they lie flat and still when I am cutting the grooves. You can still cook the small bits as skins.If you rest the potato between two wooden spoons you do not have to worry about cutting too far down as the knife stops at the spoons.

You are supposed to submerge the potatoes in the unsalted butter/salt/pepper mix for a few. 5. seconds. Taking 1-2 minutes brushing on the butter blend (per potato) is rookie. This person never worked as a chef.

It was good, but to tell you the truth, just peel the potatoes, slice them thin, fry them in a frying pan with peanut oil and butter and it’s a lot better. That’s American fried potatoes, so good, the food that I was raised on. Add a fried pork chop and include a side of apple sauce, the best!

Vegetarian version of “French onions”: don’t use soy sauce, it tastes too strong. Use flat dry champagne or sherry. Mushroom broth is better than vegetable stock but better still is to deglaze twice with water (rebrown the bottom of the pan between) then a final time with the alcohol. Alcohol dissolves different flavors than water and pulls beautiful rich notes from the onions so that you don’t need anything else.

Question: is it better to use waxy or mealy potatoes?
Most of these are fine, but the potato taco deep fried? Get outta here. There’s no WAY that the filling of mashed potatoes and sour cream wouldn’t just dissolve and ooze out. You’d have to add an egg and chill it and even then without sealing the burrito I can’t imagine making anything but a mess.

Ok so I figured out something else now.

A nacho version and a jalapeno popper version would be insane!! Nacho version with nacho cheese, some ground taco seasoned beef, shredded cheddar, topped with sour cream, guac, salsa, and crumbled corn chips!! Jalapeno popper version take some whipped cream cheese and season it with some salt, pepper, and garlic powder…. mix some shredded sharp cheddar in it….. put a healthy amount of it in the potato then add bacon crumbles, and BOTH pickled jalapenos and roasted jalapenos…….. sprinkle the top with more sharp cheddar and panko bread crumbs….. bake will golden brown!! YUUUUMMMMMMM
Sara!! I bought your book for my mom for mothers day and she’s loved literally every recipe so far. We just made the one-pot fetuccine alfredo and were floored by how good it was (especially for how little calories!) We’re trying to eat healthier this summer and your cookbook has become our recipe bible. I’ve been subscribed for years and sometimes use your recipes when I have people over but to have a whole book of them was just an awesome investment. We both love it and I recommend it to literally anyone that’s on the fence about buying it.
